WHEN LIFE GIVES YOU LEMONS Nothing cheers up food the way lemons do! Home-made lemon curd Ingredients: • 100g butter, cut into cubes • 210ml castor sugar • 3 eggs plus 1 egg yolk • 4 lemons, zested and juiced Method: 1. Put the lemon zest and juice, sugar and butter into a heatproof bowl and set over a pan of simmering water, making sure that the bottom of the bowl does not touch the water. 2. Stir with a whisk from time to time until the butter has melted. 3. Mix eggs lightly with a fork, then stir into the lemon mixture. 4. Let the curd cook for about 10 minutes until it is thick and custard-like, stirring regularly. It should feel heavy on the whisk. 5. Remove from the heat and keep stirring as it cools. 6. To store, pour into spotlessly clean jars and seal. It will keep for a couple of weeks in the fridge. ‘L emons are as indispensable to everyday cooking as onions and garlic – and even more versatile.
