SETTIMANA DELLA CUCINA ITALIANA NEL MONDO 19-25 NOVEMBER 2018 ITALIAN AMBASSADOR’S WELCOME ADDRESS INTERNATIONAL WEEK OF ITALIAN CUISINE The extraordinary Italian Taste 19-25 November 2018 The third edition of the International Week of Italian Cuisine will celebrate, once again, the excellence of Italian culinary and wine traditions with many events and promotions all over Singapore. Institutions, restaurants, sponsors and Italian organisations will showcase the Italian food and wine biodiversity, sustainability, culture and territories as well as the traditions and history they represent. Italian cuisine is generally characterized by its simplicity, with many dishes having only two to four main ingredients as it relies mainly on the quality of the ingredients rather than on elaborate preparation. Ingredients and dishes vary from one region to another as Italy did not unite as a Country until the 19th century. This is one of the reasons why Italy is the European country with the highest number of geographically protected traditional products. The Week is coordinated by the Working Group established under the Memorandum of Understanding for the Promotion of High-Quality Italian Cuisine Abroad, chaired by the Ministry of Agricultural, Food and Forestry Policies (MIPAAF). The points of reference for the over 1000 activities scheduled is the network of 296 Italian Embassies, Consulates and Italian Cultural Institutes in cooperation with Italian Trade Promotion Agencies, Italian Chambers of Commerce and local Chapters of the Accademia della Cucina Italiana (Academy of Italian Cuisine). WELCOME ADDRESS OF THE AMBASSADOR OF ITALY IN SINGAPORE It is my pleasure to welcome you to this new edition of the International Week of Italian Cuisine featuring special menus from various Italian restaurants, “Borsa Vini Italiani” a trade exhibition presenting different wine companies organised by the Italian Trade Agency, a dinner organised by the Academy of Italian Cuisine, the traditional Gala Dinner by the Italian Chamber of Commerce in Singapore as well as other initiatives like seminars on Mediterranean diet and Sardinian extraordinary longevity. I hope these events create the opportunity for Italian food and wine to delight the senses, discover new tastes, connect people, and capture the mind and hearts of the Italian food lovers in Singapore. I take this opportunity to warmly thanks all the Institutions, restaurant, sponsors, Italian organizations and participants for their precious contribution to the organization of all the events. 3

19-25 NOVEMBER 2018 SEMINAR Veronica Cavallini Veronica is an Italian registered Dietitian, member of the Singapore Nutrition and Dietetic Association and Accredited Dietitian of Singapore. She has 9 years of experience in clinical nutrition with a special interest in the treatment of gastrointestinal conditions such as inflammatory bowel disease (IBD), inflammatory bowel syndrome (IBS), celiac disease, food allergies, sugar malabsorbtion, eosinophillic esophagitis, tropical sprue, malnutrition and post surgical resections”. Andrea Tranchero After completing his studies in the Culinary School in Turin, Andrea Tranchero works for Barilla as Executive Chef in charge of Asia, Africa and Australia. Previously he worked in Sydney, Perth, Beijing, Tokyo, Paris, Los Angeles and obviously in Italy. The Chef, who is also fluent in 5 languages, has received many awards in Italy as well as internationally in appreciation for his culinary skille and creativity. 9

The theme of the evening is: “Gusto Mediterraneo” , i.e. the flavours and aromas of the Mediterrean coasts. The Italian Academy of Cuisine was founded in Milan in 1953 by Orio Vergani together with other leading figures in the fields of culture, industry and journalism. Designated as a Cultural Institution of the Italian Republic in 2003, the Academy’s mission is to safeguard traditional Italian cuisine and improve and promote it in Italy and abroad. The Academy studies all aspect of gastronomy and Italian cuisine; it generates proposals, provides information in response to requests from public officials, agencies, associations and public and private institutions and promotes initiatives aimed at fostering a better understanding of traditional Italian culinary values. They marked each settlement onto a map, eventually creating a cluster of blue marks. They labeled the region a blue zone, a term now used to refer to any area with centenarians (100 years or older). Five have been identified, including Nicoya, Costa Rica, and Ikaria, Greece. The lessons and the secrets from the Sardinians centenaries, together with their most common recipes and products, are of great value added to the Italian tradition and diet, and very useful for the well-being-Italian-style, which is recognised in the world. A delegation of around 30 guests will be coming from Sardinia, Italy, to support the Conference. Besides the Eat Wise, Live Well conference, there will be a Mamoiada Folk Group presentation, which is a remote and ancestral Italian Village, a wellness gourmet lunch, masterclasses for industry chefs and a Sardinian gala dinner. Content: Open to everybody, the workshop will deal with the ingredients used for making fresh pasta, explanation of the historical tradition and property of the ingredients by Chef Fabrizio, display of books and different shapes of pasta, preparation of fresh pasta on the spot by the students of SUTD and by the personnel of My NoNNa’s, shaping, cooking, and serving with original Bolognese Style ragout cooked by the staff on the spot.
