Become a Craft Baker with Skills4Bakers brand new and exciting NZ Certificate in Trade Baking (Craft), Level 4 Programme Who Are We? Skills4Work is a niche training provider offering this new programme-Skills4Bakers. We are a partner in the Maori Pasifika Trade Training (MPTT) Consortium. We are also an NZQA registered and accredited Category 1 training provider, who currently trains over 190+ bakery apprentices throughout NZ. Our newest Trade Baker Programme is the first of its kind in New Zealand. This programme was created to address the current skill shortage in the craft baking industry and the high demand for well trained, skilled and qualified employees. Bakery apprentices become qualified in 36+ months and don’t have as many opportunities for the formal training and development of skills. PLUS the courses in this programme mean it takes you 50% less time to become a qualified trade baker. We specialise in providing students, not only with the skills and knowledge, but also the hands-on practical work experience in the actual workplace alongside their formal training at our Christchurch Training Centre. Our Mission To empower and support our local, up & coming, younger generation with the knowledge, expertise, and experience to really make an impact in the community. Our Programme The Trade Baker Programme consists of six courses. Each course is 11-12 weeks long and 5 out of 6 of them are a blend of learning in the workplace and on-site learning at our training centre based in Christchurch. Trainee bakers will learn: • How to follow recipes and change ingredients when needed • Creating from scratch and pre-mix • Measure and mix ingredients • Knead, roll and shape dough/pastry for baking, either manually or using industrial-grade machinery • How to bake bread, cake, and biscuits • How to prepare items for sale, including icing items or decorating cakes • How to prepare customer orders and serve customers. Course Overview In each course, bakery students will experience and learn about the world of baking. Bakers are creative and passionate about their trade. Course 1. Introduction to the world of baking (12 weeks with Skills4Work) You will learn: • The baking industry, we will show you where your career can take you as a qualified baker (visits to different baking businesses) • How to measure and calculate ingredients to make and bake muffins, basic bread products, basic piping and more • Health and safety, food safety • Essential skills that employers need, such as problem-solving, creativity, growth mindset, financial literacy, entrepreneurship Course 2. Baking essentials and the workplace (11 weeks in the workplace, two evening classes with Skills4Work) You will learn: • In a workplace environment (supported by your navigator) • With us, about quality, more bread products and basic fillings, icings, toppings and glazes, and how to apply these to bakery products • The baking process and chemical reactions of ingredients and all the di°erent bakery equipment Course 3. Bakery products, fillings and toppings (11 weeks in the workplace, two evening classes with Skills4Work) You will learn: • In a workplace environment (supported by your navigator) • With us, about waste reduction and sustainability • Producing more bakery products/fillings, icings, topping and glazes, using chocolate, spices, butter cream, savoury and savoury fillings • Making meringue, ganache and using fondant and royal icing to name a few Course 4. The art of baking (11 weeks in the workplace, two evening classes with Skills4Work) You will learn: • In a workplace environment (supported by your navigator) PG 4
• With us, about baking white, grain, wholemeal and grain bread products • Production planning in a bakery • Baking nutrition Course 5. Specialty bread products (11 weeks in the workplace, two evening classes with Skills4Work) You will learn: • In a workplace environment (supported by your navigator) • With us, about baking speciality artisan bread products, such as pita focaccia, French, Turkish, German and Swiss • Further production planning in a bakery Course 6. Craft baking (11 weeks in the workplace, two evening classes with Skills4Work) You will learn: • In a workplace environment (supported by your navigator) • With us, about baking speciality cakes, such as gateaux, cheesecake and other delicatessen goods Throughout the courses you will develop further cake decorating skills, as well as more complex bakery products. There will be opportunities to bake, cook and share with your whanau and friends to demonstrate your craft and show thanks for their support. Bakery Tools & Navigators As part of the programme you will receive a uniform, and a tool kit with decorating and piping equipment. Our trainers will also be your Navigator throughout your programme. Navigators coach and support you every step of the way, preparing you for work and helping you to excel in your chosen trade. With knowledge of Maori and Pasifika cultures, our Navigators are well placed to understand cultural backgrounds and connect personally with you. Navigators not only support you, they also support the employer to ensure that you are successful in becoming a qualified baker. PG 5
Workplace Experience Work placements start in Course 2. At this point you will attend two evening classes per week. With work placements, we will do our best to find somewhere as close to where you live, as possible. We have great connections with employers throughout New Zealand. Skills learnt, not only give you the opportunity to gain full-time employment but provide you with skills to support your family and the community. Career pathways: Becoming a trade baker opens up career pathways such as: • Specialised bakery stores • Supervisor, 2IC or manager • Caterers • Self-employed – own your own business • Supermarkets • Become a bakery ingredients/equipment sales rep • Cafes and restaurants • Travel overseas and use your skills/talents PG 3
Course Costs Study Fees free This course is “Fees Free” if you’re an NZ student. If you’re a New Zealander or a resident. Domestic Students: $Fee's Free When qualified you will have achieved the New Zealand Certificate in Trade Baking (Craft) Level 4 Bread strand with additional skills and knowledge in cake and biscuit. Our Entry Criteria Entry Requirements • Domestic Student • New Zealand Citizen or Resident • Be at least 16 years old • Have NCEA Level 2 or equivalent knowledge OR current industry experience Additional Information: • NZ Citizen/Residents may be eligible for the Fees Free Scheme, Targeted Training and Apprenticeship Fund (TTAF) or, via the MPTT Consortium (Maori Pasifika Trades Training) • Student Loan and allowance options are available via Study Link • Must able to physically lift around 20 to 25kgs • Must be able to travel to our training centre in Christchurch Course Starts Starts: Monday, February 28th, 2022 Costs: $Fee's Free Enrolments Now Open!
