Compass Point Cabernet Sauvignon Chile – On Trade Key Information Vintage 2016. Region Valle Central, Chile. Grape Variety 85% Cabernet Sauvignon 15% Syrah. Winemaking From one of Chile’s larger wineries where they have an extensive range of vineyards to select their grapes from. Matías Lecaros is the respected winemaker, having previously worked in senior winemaking roles at the likes of Santa Rita and Viña Carmen. He belongs to a traditional Chilean family that has been involved in agriculture since the 17th century. The grapes for this wine are selected from vineyard blocks throughout the Maipo and Maule Valley, as well as Sagrada Familiain Curicó allowing flexibility to produce interesting and distinctive wines which showcase the varietal style and type. Fermentation occurred using traditional methods and thermo flash vinification with 20% of the final blend aged in French oak for 6 months to enhance the character and flavour of the wine. Winemaking Encapsulating the very essence of what gives Australian family-owned wineries a great reputation today, the wine is made by a thriving family owned winery in South Australia who have built an enviable reputation for consistently making quality wines that are generous in flavour and superbly drinkable. Grapes were selected from vineyards across the region with the natural variation that occurs between the vineyard sites and soil types producing parcels of fruit that are distinct in their aroma, taste and texture. They were machine harvested at night when they were at their optimum maturity. The harvested grapes were carefully vinified and given a short time in oak to produce a wine that is fresh and lively with good fruit characteristics. Winemaking This wine is made using traditional methods, only the best quality grapes are selected. Hand-picked grapes are de-stemmed and then macerated for 8 hours before pressing. The grape must is fermented in stainless steel at 17°C and kept on their lees for 2 months before bottling to add subtle flavours to the wine. The wine is unoaked. Compass Point Shiraz Australia – On Trade Key Information Vintage 2016/17. Region South Eastern Australia. Grape Variety 100% Shiraz. ABV 13.5% (10.1 units per 75cl bottle & 1.7 units per 125ml glass). Allergens Contains sulphites. Formats 75cl, 18.7cl. About Compass Point is an exciting range of wines that takes you on a journey through some of the best grape growing regions around the world, each one carefully selected to showcase the essence of its varietal style and origin. Winemaking The desert-like conditions in Mendoza allied to an extremely effective irrigation system have helped take Mendoza to the very top with their Malbec wines. Hailing from a winery founded in 1915, the grapes were hand-picked during the first week of April, before being fermented in temperature controlled tanks to bring the perfect balance to this excellent wine.
