Improving Protein Ingredients More Details on Whey Evaluation in Life Cycle Assessment Paper (2) This information not discussed in the March 24, 2021 webinar. The paper (2) in the previous slide referred to the Global Warming Potential of “Whey.” In further correspondence with Andrew Berardy, one of the paper’s authors, the values of the whey protein used in calculations was derived as follows. “We took the value for "whey" from "Life Cycle Impact Assessment and Allocation Methods Development for Cheese and Whey Processing," available here: https://www.researchgate.net/publication/269848154_Life_Cycle_Impact_Assessment_and_Allocation_Methods_Development_for_Che ese_and_Whey_Processing Specifically, we used the 0.72 kg CO2-eq per kg value for "Dry Whey" (subdivision) from Table 6. Please refer to their paper for full details regarding calculations and assumptions for the value assigned to dry whey. I believe that the paper treats dry whey as whey powder, so I think this constitutes whey protein powder…We used a protein content of about 12% and a DIAAS score of 160 for whey in calculations for our final "GWPRO" score in the paper for "whey". How Much Protein in Concentrates & Isolates? Is there an industry standard for the amount of protein expected in a protein concentrate and protein isolate? ANSWER: It depends on the source of protein. 8
