Crazy Sista Cooking with Lucy Buffett Homeport Crab Melt I developed this recipe when I worked 2 cups shredded Swiss cheese as a catering chef aboard the motor yacht ½ cup finely chopped green onions Mariner III in New York. I originally used ½ teaspoon sea salt the rich, addictive cheesy crab filling in puff ½ teaspoon freshly ground black pepper pastry hors d’oeuvres. It is such a versatile 1 ½ cups mayonnaise recipe that can be used as filling, spread or 4 (8-inch) loaves New Orleans-style French bread a dip – I love it golden, hot, and bubbling in Buffett a small baking dish, served with crackers. Directions: Here it works beautifully on an open-faced sandwich. My 1. Preheat the oven to 350 degrees. mother loved this sandwich; I put it on the original LuLu’s 2. In a medium bowl, combine the crabmeat, cheese, menu for her, and I’m glad I did because it is now one of the green onion, salt and pepper. best-selling sandwiches at my restaurants. 3. Add the mayonnaise and mix well. 4. Cut each French loaf in half horizontally. Homeport Crab Melt 5. Spread the crabmeat mixture generously over each piece of bread. Makes four sandwiches 6. Place all eight pieces on a baking sheet and bake for 15 minutes, or until the crabmeat mixture is hot and the Ingredients cheese starts to bubble. 1 pound cooked fresh blue crab claw meat, picked 7. Turn the oven to broil and broil for a few minutes, until through for shells, handled carefully to keep the meat in the cheese is golden brown. big chunks LuLu Note I serve this “open-faced” on the French bread, but I have also made it as an hors d’oeuvre for parties on toast points or as an individual appetizer wrapped in phyllo dough.
