It's Grilling Season By Deirdre Doyle Who’s planning to bbq this summer? Yes, I think that’s pretty much everyone! As restrictions slowly lift and we are allowed small numbers of people into our gardens this summer, the bbq is sure to be the centre of attention. For most people, the whole concept of a bbq centres on the meat - burgers and sausages, chicken and ribs. There may be a token salad and some coleslaw but really it’s all about the meat… As a non-meat eater, this leaves me with the token salad and coleslaw. Now in fairness to me, I make a mean coleslaw (a blender is an essential ingredient in making coleslaw in my opinion!) but over the years I have experimented with different veggies on the grill with varying levels of Veggie packed burgers: success - incinerated pepper anyone?! Now, I tend to stick to a couple of 3 slices wholemeal bread lovely salads, some baby roasted spuds and occasionally, throw some fresh 1 carrot sweetcorn on the grill. 1 stick celery 1 small onion But what about the kids? I come out in a sweat if I think the kids are not 1 cup spinach going to get some veggies into them at dinner time (not really but I do like to 1/2 tbsp dried oregano try my best!). Here’s some simple strategies you can try to up the veggies for 1/2 tbsp dried rosemary your kids (and yourself!) in your bbq’s this summer 1 tbsp tomato puree 400g minced beef 1.Serve the veggies first - have a platter of raw veggies like carrot, cucumber 1 egg and peppers with some dips on the table as you’re preparing and cooking burger buns, cheese, tomato slices, lettuce the bbq. Peel carrot, chop in half This works a treat for my kids who prefer raw to cooked veggies most days Peel onion and chop in half anyway! Chop celery in quarters Blitz carrot, onion and celery 2.Deconstruct your salad - instead of putting everything into one big bowl Throw into the large bowl wth the breadcrumbs. when making your salad, try putting all the elements into small bowls on Add spices, tomato puree and meat the table and encouraging them to make their own salad with the things Mix with hands (a good job for the kids!) they like. A big bowl of salad, where they may not like everything, can be Make a well and crack egg into mixture, mix overwhelming for kids and they may end up not eating any of it. Instead, pop well! some tomatoes, cucumber, lettuce, grated carrot, avocado, spring onion etc. Form burger patties and place on tray into bowls on the table and let them create their own! And try the simplest Refrigerate for 10/15 mins or longer dressing ever here, packed with fruit! Remove from fridge and grill for 10 - 15 mins approx. If they start falling apart, finish them off in the oven! 3.Make veggie-packed burgers. Check out the recipe here for burgers that Simple raspberry vinaigrette already have the veggies in them. The taste and texture is a bit different to 1 cup raspberries (fresh or frozen) regular burgers but my kids still gobble these up! 3/4 cup olive oil 1/4 cup balsamic vinegar 4.Serve the kids burgers with tomato, onion and lettuce as normal. They may tsp honey, salt and pepper take them off but if you don’t give it to them in the first place, then they can never try it! We need to continually expose our children to the foods we want Method Blend everything in your blender. Taste and adjust them to eat at every opportunity.
