The Need • Growing parental concern about child’s nutrition • Parents are looking for the next “best” baby food products • The global baby food market is expected to grow from $53.31 Billion in 2015 to $76.48 Billion by 2021, according to Global News Wire Reports • Growth of 6.2% globally
Concept • Baby food inspired by Ayurvedic food principles • Ayurveda is an ancient Indian health science • Combination of foods and herbs/spices to aid digestion • Babies’/children’s diet should be grain-rich • Legumes, lentils, vegetables, and fruit may be added to diet • Must be fully cooked and easily digestible • Appropriate food for stage of life • Babies and children are growing, so food must support optimal growth
Examples of Product • Garden Peas with Turmeric • White Rice Puree with Cumin • Carrots with Caraway Seed • White Rice and Split Pea Puree
Sample Product • Garden Peas with Turmeric • 100g fresh green peas • 1g freshly ground turmeric • 10ml filtered water • Processing • Green peas are steamed for 10 min • Steamed peas, fresh turmeric, and water are blended in a food processor until smooth consistency obtained
Packaging • Squeeze pouches • Clear in the back so parents can see the product • Clean design on the front that invokes fresh food and blissful babies
Chemical Parameters- Water Activity • Aw=0.72 • At this level, we are concerned about mold growth • Since different recipes will be used, the Aw of each will need to be taken into consideration • However, since most recipes are 0.72 based on starches, we may have a high amount of bound water
Chemical 8.06 Parameters-pH • pH=8.06 • Most molds grow between pH of 3-7 • In this case, we may not need to be too concerned with mold growth and overall microbial growth • Product should be tested to confirm
