THE ART OF CHOCOLATE Take a closer look at Easter’s essential ingredient
B efore opening the first Bettys Café Tea Room in
Harrogate in 1919, our founder Frederick Belmont
studied chocolate making in his native Switzerland
and in France. More than a century on, our craft chocolatiers
honour his artistry by combining traditional skills, imagination
and exceptional ingredients.
Our chocolate starts as rare Criollo cocoa beans, sustainably
farmed in Venezuela and fairly traded. Swiss chocolate experts
Felchlin roast the beans and make them into couverture, which
is tempered in our Craft Bakery’s dedicated Chocolate Room to
produce fine, glossy chocolate.
Next our chocolatiers put their craft skills to work, hand-filling
moulds, brushing on gold and bronze shimmer and piping
elegant decoration onto eggs with the steadiest of hands – each
delight a masterpiece of the chocolatier’s art.
