Grinders had to be sourced, and the research led us to the African agents for a quality grinder. CrushGrind® is a hitech ceramic grinding mechanism patented in Denmark in 1991. Fitting the grinder was another challenge as wood of different qualities and lengths were used. Nuts and screws for seating the tops were turned by hand, and special cutting tools were made for this purpose. We decided in 2013 to find a piece of Wild Olive and make a pepper mill for Marise Potgieter, who was the architect in the property commerce team at that time. It was a wedding present. Numerous pieces of Wild Olive became available at Wild Olive Estate but when turned on the lathe, many of them were found to have rotted inside the log. Smaller pepper mills had to be turned, holes filled and pieces glued together to make larger units. It became clear that Wild Olive was a dense and very hard wood, and that the steel lathes were perfect for turning and shaping Wild Olive. The Wild Olive tree is hardy, drought resistant and able to withstand severe frost. However, grown in natural surroundings with no regular watering or care, the wood is gnarled, the branches often too thin to use. No trees were removed in order to get larger, usable pieces of wood. Available wood was donated from areas where trees had died or had previously been removed and were now dry and left to rot, including Wild Olive Estate Once worked and polished, Wild Olive is a beautiful wood. Technically, the word grain refers to the orientation of wood-cell fibres, and some pieces we have worked with have more grainy characteristics than others, which adds to their attraction. Unfortunately, the workshop has closed and the lathes are no longer available for use. FOOD FOOD We celebrate World Chocolate Day on 7 July each year, and we are absolutely LOVING this fancy take on a good ol’ chocolate chip cookie! Chef Jenny Ward from CHEFS shares her recipe with us. The choc chip cookie ...and some more chocolate! (Can we ever get enough?) Reinvented Try Chef Suné Niemand from Upper Crust’s WARM CHOC CHIP COOKIE WITH PEANUT BUTTER ICE CREAM DELISH chocolate fondant recipe. You’ll need: 150 g salted butter 1 cup brown sugar ½ cup white granulated sugar 3 eggs 2 tsp baking powder 2 cup flour 1 tsp cinnamon ½ cup almond flour The most decadent 1 cup dark chocolate (chopped) ½ cup white chocolate (chopped) 1 cup pecan nuts (chopped) Soften the butter slightly and add the sugars to it. Mix in the chocolate fondant eggs one at a time. Add the flour, almond flour and cinnamon to the mixture and mix well. Mix the chopped chocolate and nuts into the mixture. Sift over the flour and fold in, Heat the milk and cream together slowly. Mix the egg yolks and using a large metal spoon. Next, fold in the chocolate sugar in a bowl. Pour the warm milk mixture over the eggs. Cook mixture. Spoon into the prepared ramekins. Put the the mixture on a very low heat to form a thin custard. Add the peanut ramekins on a baking sheet and bake for 8 minutes until butter while the mixture is still warm. Blend the mixture in an ice slightly risen and just firm to the touch.
