Green Tea Green Tea – Any variety of Camellia sinensis that undergoes a process of firing or steaming immediately after plucking, which stops any enzyme action or oxidation of the leaves. Breakfast Blend Teas A Breakfast Tea is loosely defined as a single origin black tea or blend that is full-bodied, rich, complex, and blended to go well with milk and sugar, in a style traditionally associated with a hearty full English breakfast. The black teas included in the blend vary, with Assam, Ceylon and Kenyan teas predominating, and Keemun sometimes included in more creative proprietary blends. Iced Tea: Brewing, Storage & Serving Iced Tea Brewing - When using a standard coffee maker to make tea: Use 1 oz. of tea to 64 oz of water Run one cycle through leaves Pour hot infused tea into 64 oz of cold tap water Place blended tea into dispenser Another option is to run two brewing cycles through the same leaves. Let cool before placing in dispenser. Storage and Serving Tips Add ice when serving Do not store overnight. Brew a fresh batch every day. If making traditional ice tea (without a brewing machine), do not bring water to a full boil. If clouding occurs immediately following brewing, lower brewing temperature of water. Tea Grades Whole Leaf TGFOP: Tippy Golden Flowery Orange Pekoe – This grade represents some of the most precious tea in the world. After brewing, it is not uncommon to see whole leaves in their original state. GFOP: Golden Flowery Orange Pekoe – An open OP leaf with a golden brown tip. FOP: Flowery Orange Pekoe – A leaf which is as long as or longer than an OP but is not as tightly rolled. The cup tends to be lighter than broken grades. OP: Orange Pekoe (Peck-Oh) – Long, thin, wiry leaves which sometimes contain yellow tip or leaf buds. Pekoe: The leaves of this grade are shorter than and not as wiry as an orange pekoe. Souchong: A bold, flat leaf, often light in liquor. Formosa and China are the most common producers of this grade. Broken Leaf GFBOP: Golden Flowery Broken Orange Pekoe – A BOP with more tip than the FBOP. Tips do not necessarily add to the quality of the cup. However, most top grades do have tip. FBOP: Flowery Broken Orange Pekoe – Is usually larger than the standard BOP and often contains brown and silver tips. The tips are not pieces of flower, but merely tender new leaf buds. BOP: Broken Orange Pekoe – The smallest of leaf grades. The liquor usually has a good color with strength in the cup and is very useful in many blends. BP: Broken Pekoe – A very short, even, curly leaf. It develops a dark, heavy cup. Tea Bag Fanning: Much smaller than BOP. Its main characteristics are quick brewing with good color in the cup. For use in tea bags or ready-to-drink (RTD) brewing. Dust: Is the smallest grade produced. Very useful for brewing a quick cup of tea. Various leaf sizes, or grades, are created during the rolling and shaping steps in tea processing.
