On a slightly floured surface, roll out one sheet of pastry to about a 12-inch square. Using an inverted 11-inch dinner plate as a guide, cut out a circle. Set aside. Repeat with the second sheet of pastry, so you have two circles of pastry. Place one circle of pastry on the baking sheet and place the brie in the center. Spread the jam over the top of the brie, and then cover that totally with the apple slices.
