How long is food safe to eat in my fridge? The answer depends on the type of food and how cold you maintain your fridge. As we age, our sense of smell tends to decline. We can’t always trust our nose to let us know when food is no longer safe. If the food is moldy, we all know we shouldn’t eat it. “Four days, throw it away” is a good general guide for many perishable foods such as casseroles and meat dishes. Some foods such as con- diments (ketchup, mustard) will be safe for several months. Keep your refrigerator at 40 F. Be sure to put a date on your leftovers, including your to-go boxes from restaurants. Use a piece of tape or a sticky note or another method to label it when you put the food in the refriger- ator. Losing track of food in a crowded refrigerator can happen fairly easily. Sometimes food dates can be confusing. Most dates on packages are “quality dates.” In other words, if you consume the food by the date, it will be at its best texture and flavor. Eggs, when stored in a 40 F refrigerator, usually are safe for three to five weeks after the date listed on the carton. That date is a “sell by” date meant for use by the store. Even milk and other dairy products may be safe for about a week after the date. Most foods can be frozen for long-term storage. Stores use "Sell By" dates to determine when to sell an item by. This is not a safety deadline but may indicate products that have been sitting on the shelf longer. Even if a "Best By" date has passed on a food you have at home, it should be safe to consume if stored and handled properly. This is the recommended date for best flavor or quality. When a product reaches its "Use By" date, it means it’s no longer at peak quality according to the manufacturer. If you aren't sure how old something is or if it is safe to eat: When in doubt, throw it out. Check out a healthy recipe on page 9! 6 October 2021
Chicken Salad with Blueberries · 1 1/4 c. (10 ounces) low-fat lemon flavored yo- · 1/2 c. green onions (about 6), thickly sliced gurt · 1/2 c. red bell pepper, diced (about 1/2 medi- · 2 Tbsp. reduced-fat mayonnaise um) · 2 c. fresh or frozen blueberries (or other berry) · Salt & pepper to taste · 2 c. cubed baked or grilled chicken breasts · 4 c. mixed salad greens · 3/4 c. sliced celery (about 3 stalks) · Lemon slices, optional In a medium bowl, combine yogurt and mayonnaise. Toss together blueberries, chicken, celery, green onions and bell pepper. Add dressing and toss gently. Cover and refrigerate to let flavors blend for at least 30 minutes. Serve over salad greens with reserved blueberries and lemon slices, if desired. Alternative: Set up a salad buffet with the ingredients and let people assemble their own salads. Makes four servings. Each service has 247 calories, 6 grams (g) fat, 22 g carbohydrate, 3 g fiber, 26 g protein, 188 milligrams (mg) sodium and 150 mg calcium. Volunteer Spotlight This month we are featuring Chris, who has been delivering Meals on Wheels for the past two years. Here’s what he has to say about volunteering: Tell us a little bit about yourself: We have a busy family of five kids and two dogs. For the last 16 years, I have been a stay-at-home dad, working as a taxi driver, coach, tutor and full-time chef for them. Along with Meals on Wheels, I also volunteer at Great Plains Food Bank and Feed My Starving Children. What got you interested in volunteering? I felt as a stay-at-home dad, it is important for my children to learn how to give back to their community. Meals on Wheels was a perfect chance for my children and I to learn the value of volunteering. We have developed meaningful relationships on our route. What is your favorite part about volunteering? We love our weekly interactions with the people on our route. It has been so fun to get to know them. Every- one is so appreciative of the service that Meals on Wheels provides. Don’t Ignore Medicare Part D 2022 Open Enrollment Even if you’re happy with your Medicare Part D prescription drug plan, DO NOT ignore the open enroll- ment period October 15 to December 7. It can be tempting — and easier — for Medicare beneficiaries to simply stick with their current coverage. But that could be a mistake that will cost you money. Medicare health and drug plans can make changes each year – things like premiums, deductibles, the prescription drugs they cover, and even the pharmacies in your network. A medication you take may be covered in your prescription drug plan this year, but it might not be next year because drug plans change from year-to-year. Medicare beneficiaries should read their annual Notice of Change and review their health and prescrip- tion drug plan options during the open enrollment period. Insurers must notify enrollees of any plan changes for the coming year before the end of September. People should read their Notice of Change carefully, compare their current plan with other available plans, and change to a different plan during open enrollment if it better meets their current needs. If you need help evaluating your options, the North Dakota Insurance Department State Health Insur- ance Counseling (SHIC) program can provide assistance. Individuals who would like to schedule a telephone appointment with a counselor should vis- it insurance.nd.gov/medicare-part-d-open-enrollment-counseling, or call 701-328-2440, Option # 1 or toll-free 888-575-6611. You can also complete a plan comparison on the Medicare website at Medicare.gov. 2022 Medicare Part D Open Enrollment Valley Senior Services Resource Specialists will conduct Part D comparison sessions via telephone and in person for 2022 Medicare Part D Prescription drug plans during the open enrollment period based on staff availability. We cannot recommend a prescription drug plan or other Medicare Health Plan but will assist in enrolling you in a plan that you have selected. Plan comparison information provided by the Medicare Plan Finder website is an estimate of costs. We recommend you review the comparisons provided to you to ensure accuracy of your medications. You should also check with your pharmacy to ensure they accept the plan you select. What is LIHEAP? LIHEAP, better known as Low Income Home Energy Assistance Program offered through the North Dakota Department of Human Services and County Social Services (Human Ser- vice Zone) to those families who have limited income. (LIHEAP is also commonly referred to as “Fuel Assistance.”) Income determination is based on family size with optional deduc- tions for various family expenses available. Who should apply? Any household who buys the fuel or utilities from a fuel dealer or utility provider or any household whose rent includes heat but does not receive a rent subsidy. Households whose heating costs are too high as a result of a non-repairable furnace and fuel costs and households who are having difficulty paying for their heat due to ever increasing high cost of fuel and electricity and are at risk of losing their heat source. Eligibility is based on a household’s income. A household’s income must be at or below 60 percent of North Dakota’s median income and within these limits: 1 person household: $31,433 or $2,620 monthly 2 person household: $41,118 or $3,426 monthly How do I apply? The application process for the heating assistance runs from October 2021 thru May 2022. You may get your application through the local county Human Service Zone Office. Com- munity Options, a Statewide organization, is once again happy to announce that they will be assisting individuals and families with their applications for LIHEAP!
