The West Waterford Festival of Food is delighted to welcome you to the 13th Annual Festival of Food, we hope you have the date of our festival in your diary. We are back! After a two-year break, I’m delighted to welcome you to the 13th annual West Waterford Festival of Food weekend. This year our programme is packed as always and brings you lots of exciting events. The weekend markets will bring a wide range of food to sample and buy direct from the producers, and give our visitors the chance to discover what is so tasty about this unique part of Ireland: WELCOME - FÁILTE nestled between the mountains and the sea, on some of the finest and most beautiful agricultural land in Ireland. We believe West Waterford has been a tourism secret for too long and we want to reach as many people as possible, both locally and beyond and to truly put West Waterford at the centre of the Irish foodie map. As conversations around sustainability, the environment and how we protect and love the landscape we call home become ever more urgent we are exploring what it means to be sustainably Irish and sustainably local in this year’s Festival. We want to shine a spotlight on our naturally produced, healthy and wholesome food to show how delicious such food can be. After the last two years of us all becoming better home cooks there is a deeper understanding of the importance of our food, where it’s from, how it’s prepared and ultimately how it can bring us together and help us through the toughest times. We hope you will find this year’s festival programme enticing and fun, whatever your age and tastes are. With discovery events for children, foraging walks, deliciously decadent feasts and some new and quirky ways to get you talking over food, we know there’s something for everyone to enjoy. None of this would be possible without the generous support of Waterford City and County Council or the producers, chefs, makers, supporters, funders, sponsors, venue hosts, friends and volunteers, and all those who have stayed with us - or more recently joined us on our journey. Like a Festival, the production and creation of food is a team effort and so we are hugely proud of all who came together to help make Waterford the current winners of Ireland’s Number One Foodie Destination award. On the afternoon of Friday 10th June, Comeragh Pods have a special collaboration BBQ between a number of local businesses to offer you something special to kick off the festival. Enjoy with amazing Comeragh Lamb dishes with various delicious sides, cooked on site by the renowned Tom Walsh of Copper Buoy. You’ll relax among the new development Comeragh Pods and enjoy wonderful views and a sneak peak of this new Glamping Site, ahead of official launch in mid-June. Supper Theatre Catch of the Day, Dungarvan Mart 7pm / €40 One fish can make a very big splash. What follows is a ridiculous series of events, involving Eamon De Valera, Queen Elizabeth and whole lot of nuns. Inspired by a true story, Catch of The Day by Red Fox Theatre is a raucous and little-bit-political play with a lot of heart, a lot of laughs and live trad- inspired music, all set in a West of Ireland pub. A seafood supper prepared by Iasc and will be served after the performance and Dún Bakery will supply a delicious pudding for afters. Dress warmly for the event, and please note that there are steep steps at the mart. Tapas Temptation at Legacy Cider Legacy Cider 7.30pm / €50 Good things come in threes, and that’s why Liam from Legacy Cider has teamed up with Carol and Annemarie of The 2 Sisters’ Restaurant for an unforgettable night in the very place Legacy Cider is made! Annemarie and Carol have come up with seven mouth tingling tapas, each carefully thought out, quirky and packed full of flavours. Blackwater Distillery Cocktail Masterclass The Old Bank Presented by The Old Bank and Blackwater Distillery. 4pm / €30 The Old Bank’s head mixologist, Mike Pickford, learned his craft under the tutelage of the award-winning mixologist Marcus Heale. Mike is quickly earning a name for himself in the industry, owing to his imaginative take on cocktail design and an individual stamp that comes from the many years he spent working as a chef. Mike will be joined by mixologist John Coleman who won Best Cocktail in Ireland for his Blackwater Gin inspired ‘Bee Right With You’, using Irish and local ingredients to create a classic cocktail with a modern twist. Mike champions local products and distilleries such as Blackwater and he is a big believer in the quality of their products and delighted to be able to partner with John for this incredible masterclass. This hands on masterclass includes your very own mixologist kit of cocktail shaker, jigger (measure) and strainer to take home with you. 15

Crude Food Trail Glenshelane Wood Meet at Glenshelane Woods Car Park. 2pm – 4pm / €15 The Glenshelane Woods, Gleann Siothlain means ‘glen of the fairies’, is the venue for this year’s woodland foraging walk with one of Ireland’s leading foragers, Andrew Malcolm.
