BITS & BITES AUT APPOINTS DR WARREN GOODSIR HEAD OF HOSPITALITY SCHOOL The new Head of AUT’s School of Hospitality and Tourism says that although times are tough right now, there is good reason for optimism in the hospitality and tourism industry. Dr Warren Goodsir stepped into the role in October and says he has been asked by some why he would take it on in these uncertain times. “The COVID-19 crisis has provided the largest shock on record to the tourism and hospitality industry and continues to take its toll on the well-being of our students, the community and economy. “Yet there are many reasons for optimism,” he says. “The tourism and hospitality sectors are resilient, people have INDUSTRY WELCOMES travelled and provided hospitality for thousands of years STUART NASH MP TO and will continue to do so into the future.” TOURISM PORTFOLIO Dr Goodsir says it is an honour to be trusted with Tourism Industry Aotearoa and Hospitality New Zealand have leading the School of Hospitality and Tourism at both expressed support for the incoming Minister of Tourism, this time. FOODIES TOOLBOX Simple garnish to finish TWISTED LEMON Cut the lemon into thin round slices. Cut a straight line from the middle of the lemon all the way to the edge. Take the two free sides of the lemon with your pointer fingers and thumbs. Twist one side of the lemon back and the other side of the lemon forward. Plate the finished product. FREEZE DRIED FRUIT Add colour and zing to a dish or drink with freeze dried fruit. Skip the salt and sugar rimmed glasses, use freeze dried raspberry powder for a colourful and tasty addition. STRAWBERRY STARS Lay the strawberry on its side Insert a sharp knife at an angle. The knife should go deep enough to reach the centre of the strawberry. CENTRE FEATURE Pomegranate glazed salmon TORCHED CITRUS FENNEL SLAW, MISO KUMARA MASH POMEGRANATE GLAZED SALMON TORCHED CITRUS FENNEL SLAW 4x 150g salmon fillets, skin on, bone out 1x fennel bulb 50g pomegranate molasses ¼ cucumber 1x zest of orange 2 oranges ½ orange – juiced APPLE CIDER DRESSING Preheat oven to 200°C grill. 2 tbsp apple cider vinegar In a hot pan, sear salmon skin side down until skin is crispy 4 tbsp olive oil then place on a baking tray skin side down. 1 tbsp maple syrup Mix together all remaining ingredients in a bowl then baste 1 tsp Dijon mustard salmon using a pastry brush just enough to coat. Using a mandolin, thinly slice fennel and place in a bowl with Grill in the oven for 3 minutes, making sure to baste salmon ice water.
