Recipes from the kitchens of Ohio Maple Producers and friends Ohio Maple Makes Them Better! Maple syrup isn’t just for breakfast anymore as you can Maple BBQ Sauce see from this selection of recipes shared by Ohio Maple 2 Tbsp. butter Producers. Maple syrup has many nutritional benefits ¼ C. Elm Run Farms 100% Pure Maple Syrup and can add a unique taste to make a simple food spe- 2 Tbsp. minced onion cial for your family. 2 tsp. lemon juice 1 ½ C. ketchup Maple-Garlic Chipotle Wings 1 tsp. mustard 3 Chipotle Chiles 1 Tbsp. Worcestershire sauce ½ Cup Canola Oil Melt butter; add the onion and sauté until soft. 3 Cloves Garlic Add remaining ingredients and simmer for a few minu- ¼ Cup Pure Maple Syrup tes. 1 tsp Black Pepper 2 ½ lbs Chicken Wings Maple Marinated Steak Preheat oven to 425 degrees F. Line a baking sheet 3-4 lbs. Chuck beef, 1” thick with parchment paper. To make sauce, puree the chipot- ¾ C maple syrup les in a blender. Add remaining items, except wings, and ½ C soy sauce blend until smooth. Arrange the wings on the prepared ½ cup cider vinegar pan and sprinkle with pepper on both sides. Bake for 2 tsp. dry mustard 15 minutes. Remove from the oven and turn the wings ½ tsp. black pepper over. Preheat the broiler. Brush the wings with the sauce ½ tsp. garlic powder and broil for 3 minutes. Remove and turn, baste with the Trim off fat. Marinate for 4 hours. Barbecued Green Beans Candied Maple Bacon 4 Slices bacon, diced So easy to make, this candied bacon is maple-y, ¼ C. MF17P001VA masseyferguson.us Breadcrumbs Maple Syrup Doughnuts 1/2 Cup Maple Syrup 1/2 cup maple syrup 1/4 Cup Brown Sugar 1/2 cup sugar 1 tsp. Salt 2 eggs, beaten 11/2 Cups Chili Sauce 1/4 cup buttermilk Combine beef, onion, eggs and salt in bowl. Mix 4 Tbs. butter, melted well. Add enough breadcrumbs to bind mixture. Shape 3 cups flour into small balls. Brown in skillet. Pour rest of ingredients 2 tsp. baking powder over meat and simmer. Serve with wooden picks. 1 tsp. salt Maple Baked Lamb Chops 1/2 tsp. soda 1/4 tsp. cinnamon 4 lbs. Lamb Flank or 6 Chops 1/8 tsp. nutmeg 1/4 Cup French Dressing 1 tsp. Dry Mustard In a mixing bowl combine dry ingredients. Set asi- 1/2 tsp. Rosemary de. In a separate larger bowl combine and beat together 1/2 tsp. Sage maple syrup, sugar, eggs and buttermilk. Stir in melted 2 tsp. Worcestershire Sauce butter till well blended. 1/2 tsp. Mint Flakes Stir dry ingredients into liquid mixture until blended. 1/2 tsp. Salt (Do not overmix.) Place dough on floured bread board and Juice of 1/2 Lemon roll out to 1/4 inch thickness. Flour Maple BBQ Beans 1 Cup Dark Amber Maple Syrup 1 can Pork & Beans 2/3 Cup Sugar 1 can Light Kidney Beans, rinsed, drained 1 ½ tsp. Vanilla 1 can Dark Kidney Beans, rinsed, drained 1 Unbaked Pie Shell 1 can Black Beans, rinsed, drained Beat all of the above ingredients well with a mixer. 1/2# cooked, chopped bacon or ham Add 1 1/4 cups pecan halves. Bake at 3500 F. for 1 large chopped green bell pepper about 1 hour. 1 large chopped onion 1/2 C Pure Ohio Maple Syrup Hemingway's Hot Butter Maple Rum 1 C BBQ Sauce 1/2 Cup Apple Cider 2 to 3 cloves garlic, chopped 1/2 Cup Hot Water for a little heat, add some chopped jalapenos 2 TBSP. Dark Maple Syrup Combine all of the above ingredients in large crock- 2 TBSP. Butter pot. Cook on low for 8 hours. 11/2 oz. Dark Rum (if you use dark rum, you can use This is a great recipe! Elm Run Farms 100% Pure Maple Syrup the maple syrup. At serving time, add the ginger ale and Milk to ½ full ice cubes. Mix well and serve immediately. Serves six. Combine ingredients and churn according to the Maple Sweet Pickles ice cream maker manufacturer instructions. 7 lbs. Fruit (Plums, Pears, Peaches or Cucumbers) Maple Gingerbread I Pint Cider Vinegar 1/2 Cup pure Ohio maple syrup 1 tsp. Cinnamon 2 Cup flour 3 lbs. Maple Sugar 1/2 t salt 1 tsp. Maple Chipotle BBQ Pulled Pork 1/4 Cup apple cider vinegar In small saucepan, cook slowly over med-low heat 1 1/2 Cups chicken stock or water until well softened and beginning to caramelize: 1/4 Cup Maple syrup 3 TBSP. olive oil 1/2 to 1 tsp. ground chipotle powder, according to taste 3 cloves chopped garlic 4 medium firm apples, peeled and chunked 1 medium red onion, chopped 2 TBSP chopped fresh thyme (or 1 tsp dry thyme) 1 tsp. salt Add: 1 tsp. ground pepper 2 Cups plain tomato sauce 1/2 cup maple syrup Pour all over the roast and cover with foil then the 1/4 Cup apple cider vinegar 1 teaspoon salt pan lid. Ham Loaf chops. Cover and bake 45 minutes at 400 F, basting oc- casionally. Uncover and bake 15 minutes more. Place 1 lb. Ground Fresh Pork chops on platter and thicken sauce with flour. Pour over 2 lbs. Ground Ham the meat. 1 Cup Bread Crumbs 1 Cup Milk Salad Dressing 2 Eggs Beaten 3/4 Cup Oil Mix the above ingredients together. 1/4 tsp Paprika 3/4 Cup Maple Syrup 1/4 Cup Cider Vinegar 1/4 Cup Brown Sugar 1/4 tsp. Pepper 1/2 Cup Water Dash of Garlic Salt 1 tsp. Cloves 1/2 Cup Maple Syrup 1/2 Cup Vinegar Dash of Salt 1 tsp. Dry Mustard Mix the remaining ingredients together for a glaze. 1 TBSP. Maple Spice Cake Maple Blueberry Buckle 1/4 Cup butter 1/3 Cup Maple Syrup 1 Cup Maple syrup 1/2 tsp. Allspice 1 Cup apple sauce Grated of 1 Lemon 2 eggs, beaten 2 Cups Blueberries 1/3 Cup milk 1/2 tsp. Cinnamon 1 1/2 Cups sifted flour Combine above ingredients in saucepan. Heat 2 tsp. baking powder gently. Pour into buttered 8” x 8” square pan. 1/2 tsp. salt For the Topping: 1/2 tsp. cinnamon 1/8 tsp. ground ginger 1 Cup Flour 1/4 tsp. nutmeg 1/4 tsp. Salt 2 TBSP.
