Friday, March 20, 2020 Friday Daytime Excursions City Sightseeing New Orleans with Hop-On Hop-Off Tour and Lunch The Hop-On Hop-Off bus will pick up at the Astor Crowne Plaza just three blocks from the Royal Sonesta for a two-hour city tour aboard a fun double-decker bus with a stop in the historic Garden District for a guided walking tour. Guests will then be taken to the Basin Street Station for a three-course lunch, including wine, prepared by Chef Leon West. The day will end with a guided walking tour of the French Quarter ending at the Royal Sonesta Hotel. Time: 8:45a - 2:30p Cost: $140 per person Based on 28 people French Quarter Walking Tour with New Orleans Cocktails Group is met by a guide in the lobby of the Royal Sonesta. First stop: Napoleon House for lunch plus making and tasting of the Pimm’s Cup cocktail. A tour and history of the Napoleon House will also be provided. Second stop: Pat O’Brien’s for the making and tasting of the Hurricane; Last stop: Hermes Bar for the making and tasting of the French 75. Group is led by a licensed tour guide. Sazerac House and Lunch Guided walk from the Royal Sonesta to the Sazerac House for a guided tour of the Sazerac House including private tasting and the making of New Orleans’ official cocktail including Sazerac Rye, Peychauds Bitters and Herbsaint liqueur. Following the Sazarac House, guests will walk just across the street to the world-famous Palace Café for three course lunch with wine. Guests are encouraged to explore the French Quarter on their own after lunch. Saturday, March 21, 2020 Daytime Activities Annual Provincial Meeting While primarily designed for local and Provincial officers, all members are welcome to attend our annual Provincial meeting. The meeting is intended to be an interactive exchange of ideas with a goal of fostering the camaraderie of La Chaîne. Continental breakfast with the meeting. Time 8:30 AM – 11:00 AM Acadia Suite Royal Sonesta Business Casual with Decoration World War II Museum and Lunch This remarkable must-see attraction illuminates the American experience during the World War II era. Guaranteed to move and educate, the Museum features moving personal stories, powerful interactive exhibits, a 4-D cinematic experience and iconic WWII artifacts. From the Normandy invasion to the sands of the Pacific Islands and the Home Front, you will come to know the courage, teamwork and sacrifice of the men and women who won the war that changed the world. Our chartered bus will depart the Royal Sonesta Hotel at 11:00am for a short ride to the Museum. We will begin with lunch in the Museum’s American Sector Restaurant. Your admission ticket covers all exhibit areas of the Museum. Also included is a viewing of the very unique and powerful 4D cinematic experience, Beyond All Boundaries, which is narrated and produced by Tom Hanks exclusively for the Museum. Crescent City Cooks Tour guide will meet the group at the Royal Sonesta for a stroll through the French Quarter to Chartres Street for a cooking demonstration. After class, the guide will continue the French Quarter tour to Jackson Square. From there, guests are encouraged to explore the French Quarter on their own. Menu: Chicken Fricassée Chicken pan fried then slow cooked in a cast iron pot simmered in a dark roux; Shrimp Creole A stew-like dish made of shrimp in a spicy tomato sauce, served over rice; Bread Pudding A dessert made with cubed bread in a delicious mixture of cream, eggs, sugar, butter, vanilla and spices. Then baked to perfection! Includes: Two entrees served for lunch One dessert Drinks: water, tea, Coffee All recipes A famous Queen Aileen Praline Time: 10:00am-1:30pm Cost: $75.00 per person Based on 20 people New Orleans Culinary and Hospitality Institute (NOCHI) Visit and tour of New Orleans Culinary and Hospitality Institute (NOCHI), a place where culinary and hospitality careers are developed and defined, where business minds are shaped and nourished, and where innovation inspires ingenuity. “To share food is to share culture and community, and in New Orleans, hospitality is our raison d’être.” In addition to the tour, guests will enjoy a two-hour demonstration-style class in the NOCHI Dining Lab, which is set up like a restaurant with an open kitchen. A famous New Orleans chef-instructor will give an interactive, intimate cooking lesson with everyone seated around the chef’s counter. The lesson is followed by a seated lunch and wine. Cooking with Cindy Pagragan Maître Rôtisseur Cindy Pagragan and her husband Brian are long time members of the Chaîne des Rotisseurs New Orleans Bailliage. Cindy is a local baker most known for her spectacular custom cakes. Join Cindy at the Royal Sonesta for a cooking demonstration including New Orleans original “Faux King Cake” and the Muffuletta, a popular sandwich originating among Italian immigrants in New Orleans. During the demo guests will taste the King Cake and the Muffuletta. Guests will take home some of Cindy’s personal recipes. And for some lagniappe, Cindy will also be mixing up famous New Orleans cocktail for guests to enjoy. Time: 11:00 – 2:00 Cost: $55 per person Based on 25 people
Saturday Evening Event The Best of Galatoire’s and Presentation of the Jeunes Commis Founded in 1905 by Jean Galatoire, this infamous address distinguished itself on Bourbon St. from its humble beginning. From the small village of Pardies, France, Jean Galatoire brought recipes and traditions inspired by the familial dining style of his homeland to create the menu and ambiance of the internationally renowned restaurant. In its fifth generation, it is the Galatoire family and descendants who have carried the tradition of New Orleans’ fine dining restaurants and influenced its evolution. David Gooch, the manager of Galatoire’s, is Vice Chargé de Missions of the New Orleans Bailliage. The contestants in the Young Chef’s competition will be guests of the Southwest Province this evening. Preceding the dinner, we will have Champagne as we gather, along with hand passed hors d’oeuvres. Culinaire Provincial Leslie Bartosh will announce the results of our annual Jeune Commis (Young Chefs) competition. When seated in the Balcony Room, we will be treated to a dinner starting with Galatoire Grand Goute and followed by a sautéed gulf fish with crabmeat Meuniere. No authentic New Orleans meal would be complete without a soup and we will have a duck and andouille gumbo. The main course is a Filet Bearnaise. Of course, each course will be accompanied by relevant side dishes and wines expertly paired to complement the course.
