About PEARSONS OUR HERITAGE Pearsons Florist is synonymous with flowers, design and beauty. What started as a small family business is now one of Australia’s most respected and largest florists. For over 45 years, the Pollak family have been delighting customers with stunning flowers. Fred and Clare Pollak purchased Pearsons Florist in 1969. Over 4 decades later Pearsons have five stores across Sydney as well a successful online business and an award-winning School of Floristry. Whilst there have been many changes over the years, the family aspect of Pearsons remains strong. Siblings, Bernard and Barbara Pollak (Fred and Clare’s son and daughter) now run the business, and Bernard’s children Avi and Ellen have joined the team. PEARSONS SCHOOL OF FLORISTRY The establishment of the Pearsons School of Floristry was a natural step for the Pollak family. As Pearsons reputation grew, so did the number of people asking to learn about floristry. Since 1997, Pearsons School of Floristry has been nurturing the careers of thousands of Florists. COURSE DURATION Here at Pearsons we understand that life is busy. We offer flexible study options to suit your schedule. Most students choose to study the course over 9 months, studying one day per week. You may also chose to fast track your study and finish the course in as little as 3 months. Each enrolment is valid for two years, giving you the flexibility to defer at any point and resume your studies within this timeframe. CLUSTER 1 Flower Care 1 DAY We discuss your role as a florist, the importance of Workplace Health and safety in floristry, and the chain of life from grower to client. • Identify flowers and plants • Understand the key care and handling techniques • Learn how to receive and store floristry stock CLUSTER 2 2 DAYS Design (CONSECUTIVE) Understanding the elements and principles of design, communicating your ideas through drawing, and taking digital images to post on social media, will help you harness and promote your creativity. They will become your tools and language throughout your flower journey. CLUSTER 3 8 WEEKS Hand Tied (1 DAY PER WEEK) Commonly known as natural stemmed bouquets or bunches. Used in all fields of floristry including wedding, funeral and corporate work. • Construction techniques including spiralling stems, straight stems, finishing and binding. • Learn how to make hand tied designs such as gift bouquets, corporate vase displays, and funeral sheafs as well as elegant wedding posies. CLUSTER 4 2 DAYS The Flower Shop (CONSECUTIVE) Develop your commercial floristry skills by understanding the day to day operations of a flower shop, merchandising and working with customers. 9
CLUSTER 5 9 WEEKS Base Medium (1 DAY PER WEEK) Florists use a base medium to construct a range of contemporary floral designs. A florist will choose to use a base medium if they need, more control of the placement of flowers, more stability for display and transportation, make sure flowers hold their shape and that flowers are always in water. • Construction techniques using a base medium such as floral foam. • Learn how to make base medium designs such as a posy bowl, funeral wreath, casket spray and vertical parallel designs. CLUSTER 6 10 WEEKS Wiring (1 DAY PER WEEK) Very different to the other techniques, wiring is seen as a way to push the boundaries of floral design. Wired designs are created for weddings and formal events. • Construction techniques such as taping, support wiring, mount wiring and gluing • Learn how to make a Buttonhole, Hair Circlet, a Formal an Informal Posy, Cake Decorations, and Corsage. CLUSTER 7 2 DAYS Wrap It Up (CONSECUTIVE) Bringing together all you have learned during your course to give you the confidence to continue to go out in the industry. This two day workshop focuses on wedding consultation and events.
