Holiday My DE C O R AT I NG My holiday decorating is on the 100-foot-diet. The mandate is to go green or go home. That means an all botanical theme for the festive season. S o, it’s time to start planning focal points in the house for seasonal décor. For me the priority spots are the mantles over the fireplaces. This compact, linear space is perfect to use my collection of tropical and succulent plants that have to come indoors for the winter. They become the fillers between other odds and ends col- lected outdoors and other seasonal flowering plants pur- chased at garden centres. A jade plant, fatsia and mini banana plant were already lounging on the mantle, so I raided the garden for more product. I collected the dried seed heads of daylilies, Japanese anemones, and Joe Pye weed. In their natural state they look good in an understated way, but if you want more spar- kle it’s an option to spray paint them white Kathy or silver. Renwald Being able to collect dried flowers, and seed heads is another good reason not to chop all your perennials down in the fall, they have another life waiting as indoor decor. With the accents collected from the garden and a hand- some collection of indoor plants arranged in terra cotta pots, you need only to fill in with treasures discovered in garden centres and even supermarkets. Magnolia leaves are a pretty and practical addition to the mantle. I look for the smallest ones I can find and nestle them in with the tropicals. Amaryllis are beautiful, and come in many interesting colour combinations, but they might be too big for a mantle arrangement unless dwarf ones can be found. Paper whites are a good choice, they could anchor each end of the mantle. My theme is often built around green foliage and white flowers. That sends me shopping for white cyclamen, white violets or even miniature orchids. These potted flowers bloom for a long time and will move to other locations in the house when the holiday display is retired for the season. At night it’s pretty to have lighting on the mantle. Now that we have so many choices in battery operated LED lights, its simple to find a string that will weave through the plants and add life to the arrangement after sundown. The collection is appealing because it won’t need a lot of care. The potted plants are watered maybe once a week and the dried stuff can be ignored. It’s impressive what can be found in the garden for holi- day decorating. Don’t forget branches with interesting form, the berries from bittersweet vine, ornamental grasses and evergreens for their cones or in the case of junipers for their blue berries. The mantle makes me happy, it’s like a mini-garden, and the botanical holiday theme also looks a bit tropical-it cheers up a grey day. The idea of using potted plants also gives me the chance to use more of the small pots I’ve collected over the years. They are really too small to have plants in for long because they dry out too quickly, but as a temporary landing spot for bittersweet and magnolia leaves and paperwhites, they’re perfect. It took about two hours to put the theme together and no plants were harmed in the process. Mantle management made simple. Combining small tropical plants moved indoors for the winter, seedheads collected from the garden and seasonal flowers makes a holiday mantle with impact and staying power. Niagara festival in December. Here are a few of their special recipes. Cucumber Basil Smash 1 Cocktail (2) n 2 oz. Tito’s Vodka n 4 oz. Fever-Tree Mediterranean Tonic n 2 Slices of cucumber n 1 Lime wedge n 2 Basil leaves n Garnish with a basil leaf Directions: In a shaker half full of ice combine Tito’s, cucumber, lime and basil together. Shake until well smashed and chilled. Pour contents into a rocks glass and top with Fever-Tree Mediterranean Tonic. Stir twice before serving. If you take the basil leaf and slap it between your hands it will release the essential oils and provide for sensational 2 aromatics. Grilled Pineapple Paloma Cocktail (3) n 2 oz. José Cuervo Tradicional Tequila Reposado n 5 oz. Fever-Tree Sparkling Red Grapefruit n 1 slice of Cara Cara Orange n Garnish with a grilled pineapple slice Directions: In a shaker half full of ice add 1 slice of Cara Cara Orange and tequila. Shake until well pulverized and chilled. Strain over fresh ice into a cocktail glass and garnish with a grilled pineapple slice. Optional: using a cold smoker, smoke your cocktail for some added flavour and to enhance the Gorgonzola, Pancetta and Grape Pizza (1) earthy tones of the Tequila Reposado This delicious and savoury pizza is so versatile, it works with almost anything! The Dolce Gorgonzola provides a creamy Asian Sensation Caesar Cocktail (4) flavour that compliments the salty pancetta and sweet n 2 oz. Gray Jay Whisky n 5 oz. Walter Classic Caesar Mix caramelized red grapes! n 1 tsp Alchemy Kimchi Brine Bon appetite! n 1 tsp Tabasco Sweet and Spicy Sauce n 1 sheet of store-bought refrigerated puff pastry n 6 dashes of Worcestershire Sauce n 10 oz. red seedless grapes n 1 dash of Montreal Steak Spice n 8 oz. Dolce Gorgonzola cheese n Garnish with whatever suits your palate! n 5 oz. baby arugula n 2 oz. basil leaves Directions: In a shaker half full of ice combine all ingredients n 10 thin slices pancetta and shake well to combine and pour into a Collins glass. n ¼ cup pistachios n Drizzle Basil and garlic infused olive oil. 3 n Spritz reduced balsamic Directions: Thaw puff pastry until cool but still firm. Layer 3 sheets of aluminum foil on a baking sheet and brush the top layer with olive oil. Place pastry dough onto foil and stretch gently. Brush with basil and garlic olive oil. Arrange grapes, cheese, Pancetta and pistachios. In a Misto (an oil spritzer), add reduced balsamic and pump to create the pressure to spritz. Place pan onto a high-heat grill and cook pizza for about 12 minutes. When pizza is almost done, add leaves and heavily spritz the entire pizza. The spritz will begin to caramelize on the toppings. Remove pizza from grill and spritz again. Allow to sit for 7 minutes before cutting and serving. Tip: Balancing your baking sheet on top of three empty cans on the grill removes it from direct heat, making for thinner, puffier pizza.
