CORONADO CAYS YACHT CLUB www.ccyc.org ISSUE 12 DECEMBER NAVIGATOR MAGAZINE 2021 From the Pilothouse Commodore Jerry Rosenbusch T he holiday season has arrived and the C-Gulls have done another amazing job decorating the club for the holidays! Hopefully this year we’ll all get a chance to gather with our friends and family that we haven’t been able to see for a couple of years due to the pandemic. It's also the time of year that many of us reflect on what we are thankful for. I personally am thankful for my family and friends, our health and our wonderful community here at CCYC. As we move into 2022, I know we all look forward to the continuing efforts to curb the pandemic and for everyone to stay healthy. As a yacht club, we look forward to several new initiatives; In the months ahead you’ll see our servers with handheld devices taking your food and drink orders when you dine at the club. We’ve been working on new ways for our members to follow the sail fleet during races and we’ll be launching new virtual coverage of each boat in the race so you’ll be able to follow more than just the start and the finish from the club. Our Fleet, Power, Sail, and Cruise Captains are all working on plans for this year and its sure to be an exciting one! I have a couple of updates on important business topics that were decided at our November board of directors meeting. Monthly minimum for 2021 - We’ve carefully reviewed monthly minimum (the use-it-or-lose-it) for last year and since the club was closed for 3-months we felt it fair to reduce the amount by the same percentage. Adjustments have been made to your account so if you didn’t spend the required amount this 25% reduction should help. Next, Credit Card processing fees; If a member, reciprocal or guest uses a credit card at the club for food or drinks in the past we’ve absorbed those fees. Last year those fees cost the club approximately $6,000. Coming soon, similarly to how we pass along a convenience fee if you choose to use your credit card for you monthly charges we will be passing along the credit card fee to the card holder. There will be a notice on the guest check and our staff will be notifying diners of this change when they present the check. Finally, thank you to those that contributed to the Employee Holiday Fund. It helped many of our staff supplement the lost income from reduced hours this year. I wish you and your families health and happiness this holiday season.

THE NAVIGATOR 5 R OLLING DOWN THE RIVER! Craig and I just finished cruising the entire Tennessee River in both directions! Along the way we picked up one more burgee. This time it was at the Commonwealth Yacht Club located at the Green Turtle resort on Lake Barkley in Kentucky, which by the way is NOT land locked. It is part of the Great Loop and there are both sail boats and power boats here. Shown in the photo is their Commodore Susan, and our Cays neighbor Sherry Riddell, in front of our boat NEST. Sherry and her husband Orin are often crew members on Steve Bowman’s boat during the beer can races. Sherry and Orin are cruising with us on their own boat, GREEN EYES as they start their second loop. We also met up with CCYC members Staff Commodore Dave and Carmel Fleck who attended the Great Loop rendezvous with us at Joe Wheeler State Park in Alabama. Our cruising is done for the year and our boat is snug on its trailer for the winter, but Dave and Carmel plan to start their Loop in the spring. The best part of being a member of a yacht club is being part of a community. That is also one of the highlights of being a boater. Towards the end of our Tennessee trip our boat lost its propeller while approaching a lock. I had just flown out of town for a weekend trip to see my granddaughter Claire at college. Craig, while alone on the boat, was not alone. Our Cays neighbors on GREEN EYES, got permission from the lock master to tow our boat NEST into the lock. I had seen a boat like ours a few days before and suggested Craig call the marina and find the owner. The owner of POGO drove 30 miles to loan us his spare propeller and the next day staff Commodore Dave Fleck helped Craig install it. The rest of our trip was saved! Let’s welcome new equity members these past two months: Ken Wilikinon & Kari Sowa; Garrett & Amanda Pagon; Ty & Sarah Crowder; John and Layla Masters; Mary & Geoffrey Collins; new social members: Doug Barker & Nancy Ratcliffe and new military members: Michael & Katherine Brock. As I transition to Vice Commodore this year, I would very much like to welcome all our members to come back in person. I believe there are safe ways to accommodate everyone. COVID may be with us in some way for many years, so although I am vaccinated, you will often see me wearing a mask. Why? Because perhaps I recently traveled to an area that was higher risk and I don’t want to bring it back to you. Or perhaps I have my own medical procedure scheduled that I don’t want to get derailed. Or maybe I just don’t want to get the flu or a cold this year. My life has never been boring! MIKE JONES Trish, my veterinarian spouse and I live on a 60’ Bluewater called Simpatico II, SECRETARY play on a 24’ Whaler called Paws and Play and are on the eternal waiting list for MELINDA GORMAN a slip at CCYC. THE NAVIGATOR 7 Hello Mates! P ower Up!! Thank you, Jerry, the nominating committee and most importantly the members of our club for allowing me to be your Power Captain. And thank you, Becki for all the support that you’re about to provide over the next 12 months! A quick introduction for those who do not know me. My wife Becki and I have been members of CCYC for over ten years. We were married at CCYC back in 2004 after moving to the Cays in 2003. We have been partners in an electric boat since 2012 and have participated in many electric boat events over the years including Make-A-Wish, Wild Coast Baja Bash, as well as all the CCYC planned scavenger hunts and poker runs. We recently became the new owners of a well loved and cared for Tiara 3600 Open, which we’ve been enjoying with our friends and new rescue puppy Lily. We are also partners in a Harbor 20 sail boat, but apparently “sail power” is under a different CCYC position so I won’t get into all the great times we’ve had with that boat. I see more fun things happening for the club in 2022. Although I’m not clear how the duties of the “Appointed Officials” came to pass (check out Section 4.14 of the By-Laws of the CCYC for a thrilling read) or where our divisions of responsibilities lie, I am thinking we’ll have several electric boat and dinghy events, mid-week kayak and SUP paddle journeys. A fishing tournament…maybe. A golf Tournament…hopefully, but everyone must ride in an electric golf cart in order for it to qualify as an official “Power Captain” event. What I do know is that we will have the first annual “Plates and Pairings at the Moorings” next summer. I write first annual because last August’s inaugural event kicked off by my predecessor, Rome Ventura, was such a resounding success that we simply must make it happen again! In the coming weeks I will put together a calendar of events that I hope a good number of members will engage in because that’s why we’re all here. Lastly, I am completely available to hear from you about interesting experiences we can enjoy on and off the water together this year. Make a suggestion and get involved. Power On! CCYC 8 THE NAVIGATOR On &Around the Water G reetings Coronado Cays Yacht Club Members, I am extremely honored and excited to be nominated as the CCYC Cruise Captain for 2022. I realize that I have very big boat shoes to fill as Glenn Cross leaves the seat, he is well respected and has done a phenomenal job this last year organizing the many memorable raft ups for CCYC, I hope to continue with what he has so proudly accomplished. I would like to mention a little about me, my background, and my family. I am currently serving in the military; I have been a Navy SEAL for almost 28 years and have deployed to many fun and not so fun areas around the world. My boating background began in 1999 when I bought a 32’ Fuji Ketch, “Harmony”, to live aboard here in Coronado. I shortly thereafter met my wife Jennifer and we enjoyed sailing her around San Diego Bay, the Channel Islands and then shipping her to the East Coast and transiting the Intercoastal Waterway from Norfolk, Virginia to Panama City, Florida. In 2003 we sold “Harmony”, moved back to San Diego, CA and became land lubbers until 2013 when we bought and moved aboard “Patriot”, a 50’ 1979 Marine Trader Motor Yacht. We have raised two kids on her, Liam, 12 and Chloe 18, and have had many memorable days motoring and anchoring around San Diego Bay. My desire to become more involved here at CCYC, passion for meeting new people and love for being on the water in a boat has led me to pursuing the nomination for Cruise Captain. I have attended raft ups on my boat Patriot many times over the years and it is one of my favorite things to do on the water. There are many positive aspects to attending a raft up, it builds comradery within our yacht club, it’s an excuse to start the boat and shake the barnacles off, it builds experience with operating your vessel and lastly it is just plain fun! In closing I would like to thank you all for allowing me this opportunity and I look forward to seeing you on the water this next year! NAVIGATOR 99 THENAVIGATOR THE M y wife of 51 years, Diana, and I are both native San Diegans. We have been members of this Club about 1 ½ years. Our membership was delayed by COVID. Diana is an active member of the C-Gulls and is the incoming Co-Cruise Director. We have two adult, married daughters and 5 grandchildren. In our time as members, because we have attended most of the events, we have met many of the members. We have lived in the Cays almost 2 years. We enjoy all kinds of boating, but are the proud owners of a Duffy boat (Jan Goldsmith’s previous boat) which has provided us many hours of pleasure, as well as most of our friends and family. I’m sure you’ve seen us (Aquaholics) on the waterways if you live in the Cays. I am still employed full time as a Workers’ Compensation attorney. I work alternate days in the office and remotely at home. Of course, my hours are flexible and I believe I will have more than enough time to devote to this job and the Club which I love. I am a past long term President of the Executive Board of Directors for Christian Community Theater. From our first experience with this Club and its members, we were warmly welcomed, consistently paid attention to and made to feel like we mattered. This has become a part of my vision for my current post as Communications Director. We have come to understand that our fellow Club members are family. Some are closer than others, but all need and deserve to feel like they matter, are important and are heard. There is much sharing to be done, both speaking and listening. That’s why this job is important to me. Speak to me… Please feel free to submit any pictures taken at any Club function either to me or to Victoria for review and possible inclusion in the Navigator. 10 THE NAVIGATOR I am eager to start my second year as your elected CCYC Treasurer for 2022. With a year of learning and support from the board and community, I feel ready to tackle the ongoing financial stability of CCYC! This is a great community and I look forward to continuing to contributing to the success of our club with Jerry Rosenbusch and our newly elected board. My wife, Jill McCormack, and I have been members of CCYC since 2019 and thoroughly enjoy the wonderful lifestyle the Yacht Club, the members and all the Cays has to offer. I am the managing partner of Metzger, Klawon & Fox, a CPA Firm in Tucson AZ. You can often find Jill and I enjoying our 25’ Chaparral while watching the sunset when we aren’t in our desert port of Tucson, Arizona. Treasurer Mark Metzger W hat a Year! I want to start by thanking all members that voted me in for my 4th year as CCYC's Port Captain. Imagine my surprise when I learned that I had been voted into this volunteer position while I was out of town three and a half years ago! Don't blink around here- you never know what can happen while you're not looking. When I'm asked why I took the "job" for another year, I can only respond by admitting that I'm a sucker and a glutton for punishment. Really, though, I have worked to bring the entire Marina and its surrounding amenities up to a higher standard and want to complete plans to turn the CCYC Marina into a first class, 21st Century facility for our members. For a recap of the improvements that have been accomplished through 2021, please refer to CCYC's Annual Report article entitled "Port Report." I'm looking forward to 2022 with the same drive and enthusiasm I have brought to my position since taking it on mid-year 2018. THE NAVIGATOR 11 A s the year winds down, I will be switching hats on the board. I am moving from Fleet Captain to Sail Captain. I have mighty big shoes to fill with RG Head vacating this position. Thankfully, RG has agreed to help mentor me and many volunteers will be helping me. After being a CCYC member for many years and a Cays resident, the main reason I wanted this position was to start a kids sailing program. My children are ages 14, 12 and 10 and I didn’t want them to have to learn at CYC. Additionally, following RG’s lead this year, I want to expand on the adult sailing program that RG started and have adult sailing classes and classes for deck hands that want to get involved in racing. My wife was a student and loved every minute. I look forward to another year of racing and welcome any help or comments to get the classes going! See you at the club. Main Sail Trim Sail Captain Lance Rodgers Dear CCYC Members, As a result of a bylaw change voted on at this recent Annual Meeting, if you have lost a spouse or significant other and are now a single CCYC Member, you may designate an adult child, 26 or older, as your Second Member, even if they do not reside with you. The intent of this bylaw change is to enable you as the primary member to utilize the club as much as possible without the normal guest restriction of an adult child limited to 12 visits a year. If you wish to so designate, please provide the following information to the CCYC office via email to info@ccyc.org: 1. Your designated child’s Name, address, phone and email. Only one child is permitted. 2. Your acknowledgment that they are now permitted to charge to your CCYC account number at anytime. Once this information is received by CCYC, we will email our standard application form to your designated child for them to complete for our records. CCYC will not be responsible for splitting the charges or bill between you and your child. As the primary member you will be ByLaw Update Reminder!
12 THE NAVIGATOR G reetings from your 2022 C-Gulls Captain. For those who I have not had the pleasure of meeting, my husband, Bob and I moved to the Cays in 2015 from Rancho Cucamonga. We’ve been members of CCYC since 2018. Moving to the Cays, we realized owning a Duffy was ideal for mellow cruises through the Cays. And, we have recently transitioned from owning a 36’ Beneteau to now enjoying a 37’ SeaRay. I’ve been an active C-Gulls member since 2019. It has been my pleasure serving as the 2021 C-Gulls Captain and with support and encouragement from the membership, I have accepted to serve as the 2022 Captain. THE THENAVIGATOR NAVIGATOR 13 T his year has been a challenging one for Regalia and for CCYC. For us, the pandemic fractured our supply chain of merchandise and reduced our inventory. Attrition of some long-time members of our volunteer sales team has also added strain to our retail business. With these challenges, coupled with the retirement of our beloved leader, Sandy Shugert, in September, the Regalia Team has had to regroup and reassess our entire operation. Although change of any kind can be unsettling for any organization, the transition has provided some unexpected opportunities. Thanks to support from the Bridge, Regalia sales people no longer have to weave through the bar patrons to process credit card transactions. We now have a credit card terminal in the Bosun’s Locker. Thanks to funds provided by the C-Gulls board, our rather dingy changing closet has been completely transformed with new paint, flooring, shelving and mirrors. Our maintenance supervisor, Pedro, did an amazing job! With the urging of the Bridge and CCYC accounting staff, Regalia is transitioning to a Point of Sale system. This is a much needed update that will improve inventory management, simplify and standardize sales transactions across our volunteer sales team, and contribute to a better customer experience. It will take some time and effort to get the POS system in place and to train sales staff to use it, but we believe it will be a worthwhile endeavor. As we mentioned at the Annual Meeting, Regalia depends on members who volunteer their time and their talents to make Regalia a successful enterprise. We know that there are many women in our club with backgrounds and experiences in business, accounting, retail sales, computing, photography—skills applicable to Regalia’s mission. Whether you are a full or a part-time resident, Regalia could use your help. Our next volunteer sales team meeting will be on December 8th at 4:00 pm in the Burgee Bar, and we encourage your participation. As we head into the holiday season, Regalia is here to meet your needs. We have many Christmas and seasonal gift items, from Santa plates and serving dishes to decorative Christmas reindeer. To keep you warm, think blue—our new women’s navy blue vests with golden zippers. These would look great with one of our many logos. And blue is one of the many colors in our warm winter fringed throws for your boat, patio, or sofa. 16 THE 16 THE NAVIGATOR NAVIGATOR “Notable Members” Web Page Salutes Our 1st Woman Commodore! It’s hard to imagine it today, but it took nearly 30 years for CCYC to have its first woman as Commodore. After all, long before 2002 when Merikay McQuoid ushered us into the modern age, in 1977, Janet Guthrie drove in the Indy 500, Sandra Day O’Connor was seated on the Supreme Court in ’81, and Madeleine Albright became the first female Secretary of State in 1997. So why did Staff Commodore Merikay McQuoid our it take so long to add not just a woman to the bridge, but the surrounded by the many male entire Board of Directors (not counting many C-Gulls Captains)? Commodores who’d preceded her. In this month’s “Notable Members” web page, we sit down with Merikay to find out what it was like to make that little bit of history and her thoughts on CCYC nearly 20 years on. 20 THE NAVIGATOR SEPTEMBER 2021 SPAGHETTI BOWL THRASHING ENDS 2021 SEASON By Frank Youngman, Second Assistant Deputy Commissioner, CCYC Bocce Operations As the Balls of Destiny Tour unfolded this year, players developed skills and competitive attitudes that heightened the entertainment value of the sport, rivaling the popularity of professional corn hole. With the intensity not quite rising to the gladiator level, it has been suggested that there may be a requirement that future contests require the use of helmets. This event marks the 10 year anniversary of the construction of your CCYC Sports Park, and veteran stars were out to mark the occasion, including Gene Rowell and Bob Tyner, Becki Lock and Angela Langham, Van Peterson and Leslie Hastings, Mike and Dianna Durgin, Mary Ann Carrigg and Ray Rankin (RAYMAC), Carol Warren and Kathi Kirigin, David and Zak Stone, Steve Lock and Jason Langham, Keith Lauer and Mike Jones, Beyonce and Jay-Z, Ken Mischel and Carolyn Carswell, Mel Blair and Regan Lauer, Gregg and Lauri Markovich, Rick Sipes and Anita Fargo, Frank and Mary Youngman, Dave and Kat Knapp, and Ramon Navarro and Tim Ragus. Fortunately the premier matchup of Ken and Carolyn vs. Van and Leslie offered the promise of the competitive play expected in the championship round. However this was not the case, as despite some early scoring, Van and Leslie after a valiant effort were left at the short end of an 11 to 4 final score. If Tiger Woods were twins he would be Ken and Carolyn, as they have a series of multiple wins, including the career grand slam, carding victories in the four majors—the Don Brown, The Battle for the Paddle, The Melvie, and the Spaghetti Bowl (twice!). With next year’s Balls of Destiny theme “Great Balls of Fire!” it is hoped that our expanded field of players will up their game and join Ken and Carolyn in the win column, as similar to the America’s Cup, there is no second place in bocce. At the season’s close the CCYC bocce operations staff and management would like to thank the legions of consultants, attorneys, parole officers, relaxed rules enforcement by referees, attentive club staff as well as the tens of thousands of fans (paid and unpaid) for their support in making the 10th year the best ever.

22 THE NAVIGATOR Boat Appetit With Floating Chef Carole Jensen December’s Cookie Monster If you did not already know this about me… I have a terrible sweet tooth. I need my fix of chocolate every night before I go to sleep. I have collected over the years a few very, very, very good chocolate cookie recipes and I alway share if asked- so I dare say you will not find a better chocolate chip cookie recipe and the chewy flourless chocolate cookies may require a bit of finesse but they are decadent and a great holiday treat. Did you know that approximately every American consumes about 35,000 cookies in their lifetime- I’m sure I consume double that! I still make bags of chocolate chip cookie dough batter to bring to my son’s home and we are guilty of eating it raw! That and liking the bowl (Eric’s favorite) are habits not worth giving up! Chocolate chip cookies were invented in the 1930s by Ruth Wakefield, who ran the Toll House Inn. I hope you enjoy these recipes- they are treasures and fun to pass down to your own children. Chewy Flourless Chocolate Cookies Preheat oven to 300 Ingredients 1 3/4 cups powdered sugar (In Canada it’s just called icing sugar) 1/2 cup dutch process cocoa (see note- it’s critical) ***** 1 tsp cornstarch 1/4 tsp regular salta 2 egg whites (large eggs) 1 cup coarsely chopped toasted pecans or walnuts *****Ghiradelli, Guittard and Droste makes a 100% unsweetened Dutch- buy on https://www.amazon.com/Droste-Cocoa-Powder-Baking-Desserts/dp/B00032IFCU/ref=sr_1_6? keywords=Dutch%2BCocoa%2BPowder%2Bfor%2BBaking&qid=1637020081&sr=8-6&th=1 Directions for about 15 balls 1. Mix together sugar, cocoa and cornstarch and sift in a wire sieve. 2. Add egg whites, stirring with a spoon until a mixture forms a dough. The mixture should be thick enough to form into balls; if not add more powdered and cocoa. 3. Add toasted, chopped nuts and mix well. 4. Form dough into 15 balls. It is very sticky and a little difficult to work with. Place on a parchment- lined baking sheet. Bake for 16-19 minutes until glossy and cracked. Cool completely.
THE NAVIGATOR 23 What is Dutch process cocoa: There are two types of unsweetened cocoa powder: Dutch-processed and natural. They have very different chemical properties and react very differently when baking and tasting. You see, Cocoa powder comes from cocoa bean. The beans are then fermented, dried, roasted and cracked into little nibs. They are then pressed to remove 75% of their cocoa butter and this leaves us with a chocolate liquor. The pasty liquor is then fried and then ground into unsweetened cocoa powder. BUT, Dutch- process cocoa powder starts with cocoa beans that have been washed in an alkaline solution of potassium carbonate which neutralizes their acidity. Best of ll, it is darker in color, mellow in flavor and dissolves easily into liquids- that is how Oreo cookies get that decadent color… And you think I was just another pretty face!! The Ultimate Chocolate Chip Cookie Cream the ingredients together 1 cup butter 1 cup white sugar 1 cup brown sugar Add two large beaten eggs and 1 tbsp of good quality vanilla extract In a large bowl, sift together: 3 1/4 - 3 1/2 cups flour, be exact! 1 tsp baking soda 1 tsp baking powder 1 tsp regular salt Add 1 cup of very good chocolate chips (like milk chocolate or semi sweet Guittard) and bake at 350 for 12 minutes on parchment paper.

NAVIGATOR - VETERANS DINNER 27 A dinner in honor of CCYC veterans was held on Nov. 10th. An Italian buffet was served and live piano music was provided by new member Carmen Loheed, herself a veteran. Dan Cornwell surprised all the veterans with a free drink in honor of his dad. Eighteen of the veterans provided photos of themselves, and here are some of the ones in attendance.
