Get creative in the kitchen and try adding your favourite ingredients to Odlums Preparation Quick mixes. These Wholesome Banana & Honey Scones make a tasty breakfast or lunchbox filler. Time Approx 5 minutes wholesome banana & honey scones Ingredients: Method: 1 packet of Odlums White Quick 1. Preheat oven to 200°C/400°F/Gas 6. Lightly dust a Scones baking tray with flour. 1 large Banana (mashed) 2. Pour Odlums White Quick Scones mix into a large 2 tablespoons Honey mixing bowl. In a separate bowl, beat the mashed banana & honey. 250ml Milk 3. Add the mashed banana, honey and milk to the Milk for glazing Quick Scone mix. 4. Mix to a soft dough. Turn onto a floured surface and gently knead. Press dough out to about 2.5cm /1” in height and cut out scones with a scone cutter or beaker. 5. While cutting the scones, put the prepared tray into the oven to heat it. Place scones on the preheated tin and brush a little milk on each scone, if liked. 6. Bake for 15-20 minutes until golden brown. Cool on a wire tray. 2

Prepare Odlums 9 Grain Wholemeal Quick Bread as Wholemeal Quick Bread per pack instructions. 350ml/12 fl.oz cold water 2. Make up salad with the lettuce, cherry tomatoes, feta Garlic Cloves cheese and avocado, if used. Toss in a little dressing. Extra Virgin Olive Oil 3. Meanwhile, heat the grill and slice the bread. Rub the bread with the clove of garlic, brush with the oil and Sundried Tomatoes in Oil place under the grill until lightly toasted. Turn over and (finely chopped) repeat. Slices may also be toasted in a pre-heated oven Mixed Lettuce Leaves 200°C/400°F/Gas 6 for about 10 minutes or until crispy. Pre-heat oven to 200°C/400°F/Gas 6. Grease a Brown Quick Bread 900g/2lb loaf tin. 50g/2oz Dried Apricots 2. Empty Odlums Farmhouse Brown Quick Bread into a (chopped) mixing bowl. Add the apricots, sunflower seed, pumpkin 25g/1oz/1 tablespoon Sunflower seeds, sesame seeds, poppy seeds and walnuts. Seeds 3. Mix ingredients together. Next, add the water and 25g/1oz/1 tablespoon Pumpkin treacle (if used). Seeds 4. Stir well until a soft dough is formed. 25g/1oz/2 tablespoons Sesame 5. Transfer to the greased loaf tin. Spread evenly, Seeds smooth surface and dust with Odlums Oatflakes. 25g/1oz/3 tablespoons Poppy 6. Make a cut 3⁄4” deep lengthwise along the centre. Seeds 7. Bake for about 40-45 minutes or until crust is golden 25g/1oz/2 tablespoons Chopped brown. Walnuts 8. Time Approx 10 minutes fresh homemade pizza Ingredients: Method: Base 1. Preheat oven to 200°C/400°F/Gas 6. Lightly grease Half a packet of Odlums Tomato a large flat baking tin and Herbs Quick Bread 2. Pour half a packet of Odlums Tomato and Herbs 175ml/6 fl. oz water Quick Bread mix into a bowl and add the water. Mix to a smooth dough and lightly roll on a floured surface. Filling 3. Transfer to the prepared tin. 1 tin Chopped Tomatoes mixed with 1 dessertspoon Tomato Puree 4. Spread out thinly using fingers dipped in flour. Prick & 1 level teaspoon of Mixed Herbs well with a fork to get a flat surface when baked! Topping 5. Bake for 10 minutes until “set”. Remove from oven. Finely chopped Onion 6. Spread the tomato filling on base and then top with favourite toppings. Chopped Peppers 7. Return to oven and bake until Chopped Ham/Crispy Bacon cheese has nicely melted, about Sweet Corn (drained) 10 further minutes! 4 Tomatoes (quartered) 8. Serve hot with a salad. Allow to go cold. 350ml / 12 fl. oz cold Water 2. Cut 8 slices from the loaf, spread on the cream cheese and place on serving plate. Arrange rocket leaves on each slice, then Topping smoked salmon and top with crispy bacon. Light Cream Cheese 3. Mix thoroughly with a spoon until Vegetable Oil lump free and resembling a smooth batter. 200ml/7 fl. oz cold Water 3. Spoon the cake batter equally into the 12 bun cases. 4. Bake on the middle shelf of the oven for 15-20 minutes. 5. Turn onto a wire tray and cool before serving. icing Ingredients: Method: 225g/8oz Icing Sugar 1. Make icing by mixing all ingredients 4-6 teaspoons of Water together to form a thick paste Few drops of Almond Essence 2. Spread a bit of the mixture (optional) on each bun Few drops of Blue Food 3. Time Approx 10 minutes cinnamon and raisin bread and butter pudding Ingredients: Method: 1 packet of Odlums Cinnamon & 1. Make Odlums Cinnamon and Raisin Quick Bread as Raisin Quick Bread per instructions on packet. When cold, cut into 8 – 10 350ml /12 fl. oz cold Water slices (remove crusts - optional). Butter for spreading (approx 2. Butter each slice of bread and cut into fingers or 50g/2oz) triangles. 50g/2oz Raisins 3. Grease or butter a shallow ovenproof dish. Arrange a layer of the bread, buttered side down, on the base of 2 Eggs the dish. 450ml/3⁄4 pint Milk (or a mixture 4. Prepare Odlums Original Cake Mix as per instructions on packet, then stir in the carrots, 225g/8oz Grated Carrots pineapple, mixed spice, vanilla essence and orange Small tin Crushed Pineapple - rind. Mix well. drained 3. Transfer to the prepared tin and bake for about 1 teaspoon Mixed Spice 40 minutes until golden brown and firm to the touch. When baked turn onto a wire tray and 1 teaspoon Vanilla Essence remove the lining paper. Allow to cool completely. Grated Rind Orange 4. Meanwhile make topping by beating together the cream cheese, icing sugar and Topping: vanilla essence. Spread evenly over the cake and cut into slices. 225g/8oz Cream Cheese 5. If you like decorate the top with 125g/4oz Icing Sugar orange rind shavings 1 teaspoon Vanilla Essence Grated Rind Orange (optional) 16

Time Approx 5 minutes quick pancakes Ingredients: Method: 1 bottle of Odlums Quick 1. Simply add 375ml of milk to Odlums Quick Pancakes Pancakes bottle. 375ml Milk 2. Replace cap and shake until mix is fully dissolved. Topping 3. Add oil to frying pan. Pour enough batter to form 14cm/6"pancakes. Vanilla Ice-cream 4. When batter is puffed and bubbling on Fresh Fruit in season top, turn and cook on other side until golden Raspberry Coulis brown in colour. Icing Sugar 5. To finish, place warm panckes on a plate and top with a scoop of vanilla ice-cream and fruit in season. Drizzle over raspberry coulis and dust with icing sugar. 18

Prepare cakes as per pack instructions and bake for 75ml/3 fl. oz cold Water about 25 minutes. 2 large eggs 3. Cool cakes in tins for about 10 minutes, then transfer to a wire tray to cool completely. 4. Meanwhile, place chocolate and cream in a bowl Topping over a pan of simmering water and allow chocolate to 170ml carton of Cream melt, stirring occasionally. When melted remove from the heat and stir well. Allow to cool 2 x 100g bars of good quality and begin to “set”. Plain Chocolate 5. Sandwich the cakes with about a third of the topping and pour Decoration remainder over the assembled cake. Chocolate (curls or grated) 6.
