GLOSSARY OF TERMS
Burnishing: A sanding process where pads are used on high-speed floor machines to polish and remove
scratches on a finished floor.
Delimer: An acid-based cleaner used mostly inside dish machines to remove mineral buildups.
Disinfectant: An agent that frees an inanimate body (generally hard, nonporous surfaces) from infection by
killing 100% of listed micro-organisms in a specified amount of time—but they are not used
on people, only inanimate surfaces.
Dissolving: The reaction of an acidic detergent with an alkaline soil.
Enzyme: A protein that speeds up a chemical reaction.
Fabric Softener: A conditioner that helps prevent static cling, and makes fabric softer.
Floor Finish (or wax): A chemical product whose purpose is to provide protection, gloss or shine, and make
surfaces easier to clean. It can be applied using a mop or microfiber floor system.
Germicidal Bleach: Kills a broad range of mircro-organisms and germs.
Hexene: A type of resin that utilizes a special compounding process to produce thinner, stronger plastic films.
Iodophor: Releases free iodine in solution, and is used as an antiseptic and cold-water sanitizer.
Laundry Break: A concentrated laundry builder that prepares fabric for washing by raising the pH of the wash
water in order to accelerate the washing process. It opens individual fibers of fabric and
allows the fibers to release entrapped soil particles.
Laundry Detergent: A surfactant-based product that emulsifies (suspends) the soils present in fabric, helping to
prevent the soils from becoming deposited back into the fabric.
Laundry Sour: Used in the final rinse stage of a wash. It neutralizes alkalinity in fabrics, and restores
the pH level so the fabrics are ready for finishing, drying, and/or ironing.
Microfiber: Made of fine synthetic fibers, microfiber is excellent for moisture-wicking.
Micron: A unit of thickness equal to one millionth of a meter. Typically used for high-density can liners.
Mil: A unit of thickness equal to one thousandth of an inch. Typically used for low-density can liners.
Odor Counteractant: Elminates or controls bad or offensive odors in a building or room.
Oxidation: A reaction that removes color or pigment of an organic stain. Chlorine or oxygen
bleaches are used to do this.
pH: A measure of the relative acidity or alkalinity of a substance. A pH of 7 is neutral. If it
goes higher than 7, it becomes alkaline. The lower the pH, the more acidic it becomes. Foods
that are acidic will react with alkalinity, and foods that are alkaline-based will react with acidity.
QuarryGrip: An acidic floor cleaner that can be either poured directly onto quarry tile floors to perform a
traction treatment, which increases the slip-resistance of the floor, or diluted and used as a
daily cleaner.
Quaternary: A one-step disinfectant cleaner and deodorizer.
Sanitizer: An agent that reduces the number of disease-causing (pathogenic) bacteria on an inanimate
food contact surface to safe levels as judged by public health requirements. A sanitizer generally
is a chemical that kills 99.999% of specific test micro-organisms in a specified amount of time.
Stripper: A chemical product used to remove old floor finish. It can be applied using a mop or floor machine.
Tannin: A plant-based substance that gives a dark color to products, such as coffee, wine, and tea.

This easy-to-use system reduces waste and overuse,

employees. Each Array product is color- and letter-coded
to communicate specific usage and help with employee
training. The packaging is clear, with easy-to-read names
and instructions.
Supporting wall charts, dispenser labels, and spray bottle
labels are available in English and Spanish.

HOW TO CHOOSE A WET MOP
Construction
Cut-end
ADVANTAGES – Low initial cost.
DISADVANTAGES – Will leave gaps in coverage on floor; cut-end will "de-ply" which will
cause excessive linting and tangling; cut-end mops cannot be laundered so after one use
they will never be completely cleaned.
Looped-end
ADVANTAGES – Longer life due to continuous loops that eliminate unraveling and greatly
reduce linting. Tailbands will hold yarn in place, which will allow user to increase
mopping efficiency by 50 percent. Tailband prevents yarns from tangling when mop
is laundered, so mop will last eight to ten times longer than a cut-end mop.
DISADVANTAGES – Higher initial cost.
Other Considerations
Sizing Headbands

MICROFIBER
Microfibers are synthetic fibers that are 1/100th the diameter of a human hair and 1/20th the diameter of a strand of silk.
The shape, size, and combinations of synthetic fibers are selected for softness, toughness, and absorption.
There are two primary types of microfiber: unsplit monofilament and split blended.
• Unsplit monofilament microfiber is made of polyester and provides a better cleaning efficacy and performance than cotton.
• Split blended microfiber is made of polyester (for cleaning performance) and nylon (for absorbency). Each filament is
split into 16 microfibers to provide the best cleaning efficacy, performance, and absorbency. The splitting process leaves
the fiber with star-shaped grooves that trap and retain dust, bacteria, and mold spores.
All of the microfiber products we carry are split blended. When used with water, these products have been proven to
remove 99.9% of microbes, which become food for live pathogens and allow them to multiply if they are not removed.
All Hygen products are bleach-safe in hot or cold water and are durable up to 500 launderings (up to 200 with bleach).
For dust-mopping, microfiber is an excellent choice because it attracts small particles of dust due to an electric field
created by the polyester and nylon.

Dishmachine Standard Lease Program
Option One: Revolving Lease
Dishmachine will remain the property of Gordon Food Service for the entire contract term. There is no charge for parts or labor.
Option Two: Purchase Lease
Fifty percent of your monthly payment is applied to the purchase price of the dishmachine. The unit is purchased at the end
of the contract. There is no charge for parts or labor during lease period. Once machine is purchased, parts will be charged.
Parts & Service Assurance
No matter which option you choose, there will be a parts and labor program for you, as long as you use
Gordon Food Service chemicals.
