Chablis Domaine Pinson Freres This estate has long been known for classic 1er Cru and Grand Cru Chablis of concentration and complexity, traditional in style. Now under the direction of brothers Laurent and Christophe Pinson, a purer, more refined style is emerging...but without sacrificing any of the inherent richness that has always characterised Pinson wines. The main work is of course conducted in the vineyard, where old vines and controlled yields give grapes of superior quality. The expanded cellars allow careful vinification and ageing, with extended ageing on the lees and limited use of oak barrels for maturation. New oak however is not sought as a flavouring - none whatsoever for the1er Crus - and even the Grand Cru only sees 10% new wood. Laurent's daughter Charlene has recently joined the Domaine having studied oenology at wine school in Beaune. Beaujolais & Maconnais Jules Desjourneys Domaine Jules Desjourneys is relatively new to the wine scene, having started producing reds in only 2007. Fabien Duperray has a long association with top Burgundian Domaines, distributing the wines of DRC, Coche Dury and Arnaud Ente, amongst others. This has allowed Fabien to begin his own estate producing wines organically and biodynamically. From hand ploughing the vineyards to foot-treading the grapes, every aspect is practiced as naturally as possible. He uses the finest corks and bottles and hand dips each bottle in protective wax in a bid to make the most stable and well-preserved wine. The red wines are made with 100% whole bunch, receive no oak treatment and undergo 7 days maceration to avoid too much tannins. The white wines are all vinified in steel and glass tanks with the exception of two, Pouilly-Fuisse and Pouilly-Fuisse Vignes Blanches. These two whites are produced in a similar method to the wines of Domaine Coche-Dury. Fabien has made a name for himself as one to watch in Beaujolais, many consider him the biggest threat to the regions ‘Famous Five’ and that he is well on his way to achieving ‘Iconic & Cult’ Status. Les Heritiers du Comte Lafon Prior to 2000 Dominique saw the potential in the underrated vineyards of the Maconnais. He identified ideal terroir for growing Chardonnay and in 1999 created a new winery, Les Heritiers du Comte Lafon. Each wine reflects a different expression of its soil, ranging from the easy-going Macon Villages via Macon Milly- Lamartine, Macon-Chardonnay Clos de la Crochette, Macon Uchizy en Maranches to the steely, mineral Macon Bussieres. From 2009 they have contracted to farm the vineyards of the Château de Vire with the appellation Vire-Clesse. The vineyards are farmed biodynamically with low yields and hand harvesting. Today these wines enjoy huge success around the world for great Burgundy at fair prices. Cote de Beaune Domaine Boris Champy The former technical director of Louis Latour and former manager of the Clos des Lambrays estate in Morey St Denis takes over a pioneering project in biodynamics. A 12 hectare estate mainly located in the Hautes-Côtes de Beaune. “After I left Lambrays, I walked along the Camino route to Compostela. When I thought about it, I realized that the best for me would be to work for myself, confides Boris Champy. A wish fulfilled today. Last year a friend from Nantoux, Hautes-Côtes de Beaune, put him in touch with Didier Montchovet. This pioneer of biodynamic viticulture (certified since 1984), without a successor in the family, was looking to find an successor to take on the estate. There was an immediate rapport between the two of them. A smooth transition then began informally during the 2019 harvest. Today, the transition is now complete and Boris Champy has settled in the village as close as possible to the 12 hectares of vines. “I believe in the future of Hautes-Côtes. Together with the neighbouring winemakers, we must continue to raise the reputation of the wines. My goal will be to highlight the individual parcels (lieux-dits), enhance the cool microclimates and the other fascinating subtleties of the area. In these hills and valleys, we will introduce some of the viticultural practices employed in the more prestigious vineyards further north. Our plots are islands of biodiversity: with the many "clos" diverse trees, hedges, walls and fruit trees ... we will have a holistic approach. Our goal will be to seek freshness, personality in our wines in a refined and natural style of winemaking. Explains the winemaker. The Montchovet estate also owns vines in Beaune Premier Crus and Pommard appellations. Originally from Champagne the oenologist (graduated in 1996), Boris Champy worked for 10 years in Napa Valley in California (Dominus, Famille Moueix) before becoming technical director of the Louis Latour house (Beaune). At 45, he is rooted in Burgundy for what he calls his "ultimate project". Domaine Marc Morey The Moreys are one of the major winemaking families in Chassagne-Montrachet, and French inheritance laws have led to a proliferation of different Morey domaines in the village. Domaine Marc Morey is now run by Bernard Mollard and his wife Marie-Jo, daughter of the eponymous Marc. This estate is perhaps less well-known than those of cousins Jean-Marc and Bernard, but it is quietly establishing a reputation as a fine source of elegant, expertly-made Chassagne. Vineyard holdings are impressively located in top 1er Cru vineyards, and the Marc Morey portfolio includes a racy, Puligny-styled 'En Virondot' (this is very nearly a monopole for Domaine Marc Morey) as well as a richer, fatter 'Chenevottes'. Some new oak is used for ageing, adding to the complexity. While maintaining the true characteristics of Chassagne Montrachet, these wines, with their fat silky texture, show spicy rich flavours and great length. Domaine Jean Marc Pillot Jean-Marc started his career as a winemaker in 1985, and his first vintage was made in the new premises in the industrial zone close to Chagny in 1991. The Domaine holdings, 90% of which are in the commune of Chassagne-Montrachet was increased since then from 5 hectares to 11 hectares today, half of which whites and half reds. The vineyards are naturally managed. The whites are hand harvested, gently crushed but not destemmed then pressed. A light setting happens at cold temperature before the wines are moved into barrel for a slow, long fermentation at 15 degrees centigrade. The barrels are used for three years, with one third new oak. The wines stay on their lees in the barrels for 12 months and then racked into tanks, where they stay for additional 6 months before bottling. Domaine Paul Pillot Paul Pillot who took over the domaine located in Chassagne-Montrachet in 1968 is the 3rd generation of this family who started this fine domaine in the beginning of the 20th century. Over the years he expanded the domaine to the 13 hectares it owns today. His son, Thierry started working in the domaine in 1999, but got full control only in the 2004 vintage. His philosophy is common among other young growers in Burgundy these days, mainly understanding that the wines are actually being made mainly in the vineyards, thus investing hard work in the vineyards. The wine making approach is natural and straight forward, with minimal use of new wood – resulting in precise, terroir driven wines. Maison Henri Boillot Henri Boillot has inherited the prestigious Domaine Jean Boillot from his father, giving him 14 hectares of prime vineyard sites in Volnay and Puligny-Montrachet. But his desire to explore the potential of a wider range of terroirs has led him to create the Maison Henri Boillot. This is another example of the new phenomenon of 'super-négociants' - top winemakers who source small parcels of the best grapes, and use their expertise to create a range of truly special wines. The Puligny "Clos de la Mouchère" is their flagship vineyard. The Domaine is the sole owner of this superb 4 hectares vineyard. All the wines are made with inordinate care and attention to detail. For the whites, hand-picked grapes are sorted, and then pressed pneumatically without prior destemming. There follows 24 hours of cold temperature settling, before fermentation in barrel (10 to 50% new, depending on the status of the vineyard). All wines undergo full malolactic conversion, before 12 to 18 months barrel-ageing on the fine lees, with regular batonnage. The wines are bottled after fining and the lightest of filtrations. Boillot's sources remain a secret, but his close friendship with many of the Côte de Beaune's top growers give him access to grapes many winemakers can only dream of. These are vinified in the Domaine Jean Boillot cellars at Volnay, using state-of-the-art equipment and just the right amount of new oak. The result is beautifully-made wines, each one the definitive expression of that vineyard's unique personality. Allen Meadows of Burghound consistently rates Henri Boillot’s whites amongst the highest in Burgundy. Domaine Benoit Ente Benoit has steadily evolved to the point where today, he is making wines of incredible purity and balance. Benoit’s wines are precise and focused with a tension to them that is not unlike a coiled spring waiting to unfurl. On the palate, his wines do just that and the tightly knit structure detected on the nose is revealed in layers of complexity. Benoit uses less than 30% new oak and is trying to interfere as little as possible in the winery. He is known to pick earlier rather than later in order to preserve the acidity that is vital to the longevity of his wines. This does not negatively impact the terroir driven, expressive wines that he makes. He has moved to a longer élevage of 18 months. Benoit boasts an impressive line-up of vineyard holdings. In Chassagne-Montrachet he has a tiny parcel in Houillères, a well-situated villages vineyard on the border with Puligny-Montrachet, while in Puligny- Montrachet, he has an impressive array of vines from villages to the 1er Crus of Truffières, and Folatières. Domaine des Comtes Lafon Comte Jules Lafon purchased all of their best plots back in the 19th century, including the piece of Le Montrachet in 1919 and built the cellar at the Clos de la Barre vineyard. Dominique took over the estate from his father, Rene in 1984 and since then he's never looked back. Today the domain consists of nearly 14 hectares of prime Burgundy vineyards, covering 5 villages and 13 appellations. Since 1998 all the vineyards are managed under bio-dynamic cultivation. Considered to be the amongst the best whites in Burgundy, their wines range from the tense, edgy and hugely attractive Montrachet to his Meursault wines which demonstrate huge depth and complexity. No new oak is used for any of the village wines. Varying degrees of oak are used for the 1er crus and 100 % is used for Le Montrachet. The reds are infinitely stylish and energetic. Domaine Antoine Jobard Jobard’s wines are aged in barrel and spend a lengthy period of time sur lie in their cellars in Meursault. They are amongst the last to release their white Burgundies on the market every year due to their unhurried approach to vinification and typically slow malolactic fermentations. In their youth, these wines are often tightly wound with an intense mineral structure that only begins to soften with extended bottle aging. Though François and Antoine work side by side, Antoine has brought his own signature to the Domaine: a more sensuous approachability to the wines, most recently evident in the 2006 and 2007 vintages, which are delicious and ready to drink immediately. That said, the Jobard legacy lives on, and the wines will still explode with intense aromas of honeycomb and stone later in life. If you just can’t wait, there’s no reason not to uncork. Vines are trained in Guyot and Royat (50-50). Hand-harvested. Grapes are pressed gently by pneumatic press, with little to no débourbage (settling of the must). Both primary and malolactic fermentations are in oak barrels, only 20% of which are new. No stirring of the lees. Aged from 20-23 months in barrel (4-5 years old). Finished wines are bottled unfined and unfiltered. Benjamin Leroux Benjamin Leroux is considered by many to be amongst the finest Micro Négociants currently in Burgundy. Having already created a reputation for himself as the winemaker in Domaine du Comtes Armand, Benjamin has exceeded all expectations since establishing his own label in 2007. Although he did not come from a wine making background, his determination was proven when he began studying in Lycée Viticole de Beaune at the age of 13. He completed his Viticulture Diploma in Dijon, interning at Domaine du Comte Armand between 1990-1992 while completing his studies. After brief stints in Oregon and New Zealand Benjamin landed his first serious job in Bordeaux’s Cos d’Estournel. Initially returning to work for Dominique Lafon he was offered the role of winemaker in Domaine du Comte Armand in 1998 in time for the 1999 vintage. His production is very limited, about 60,000 bottles between all of his wines, well over 50 in number. Benjamin only works with growers who reach a certain standard, only buying fruit, rather than juice, from a series of growers that he has a long-term relationship with. This gives him greater control in dictating lower yields, harvest dates, ripeness etc. Some of these growers he actually rents the land off instead of buying the fruit, allowing him to adopt his biodynamic and organic philosophy. Benjamin is a fan of “over planting” with some of his plots hosting up to 30,000 vines, where 10,000 would be normal. This comes from the old style of Burgundian winemaking. Youthful and expressive when young, his wines show superb structure, are very precise and polished. With some bottle ageing they gain a bit of complexity yet remain elegant throughout. Cote de Nuits Domaine Robert Chevillon Robert Chevillon undoubtedly makes better wine than virtually any other grower in Nuits-Saint-Georges - all the critics agree on this. The question is why, and the answer disarmingly straightforward: he doesn't do anything wrong ! Vines are allowed to grow old, replaced one by one as they die; debudding and green pruning further limit the crop of these naturally low-yielding vines, ensuring concentration and character. Each parcel is picked at its own moment of optimum ripeness, even if this means that some vineyards come in long before others. There are no clever cold-soakings or low temperature fermentations, just a good, long cuvaison. Both vinification and ageing are directed with an attentive but patient, 'hands-off' approach. Terroir is not hidden behind a mask of new oak and winemaker-imposed style, so that each vineyard cuvée has its own unique personality. The Chaignots and Bousselots show the softer, Vosne-like style found to the north of Nuits; the other 1er crus are classic Nuits-Saint-Georges - sturdy, masculine, with chewy tannins and hints of rusticity. Particularly impressive are the Cailles, Vaucrains and Saint-Georges itself, where very old vines have amplified the concentration and character of these great vineyards. The village cuvée includes all the young vines from the 1ers Crus, giving it extra complexity. There have been Chevillons in the district for many generations, but when Robert started working, the domaine covered only 3 hectares, selling entirely in bulk. He is too modest to admit it, but the fame and reputation of this estate is virtually all due to Robert's own hard work. He is now joined by his two sons, Denis and Bertrand, who are hopefully learning just how clever it is to keep things simple. Chevillon believes in a long, slow vinification, with extraction of colour and tannins during and after fermentation rather than before. Cuvaisons last 3 to 4 weeks, sometimes longer. Temperatures are allowed to rise to 35°C before cooling coils are inserted into the vats. Malolactic conversions progress at their own pace, and the young wines are left on their fine lees for most of the first year. Use of new oak is limited - 25-30% for the 1ers Crus, virtually none for the lesser cuvées. The wines are bottled after 16-18 months, following a fining and very light filtration. Domaine Jean-Marc Millot. Domaine Jean-Marc Millot has been owned by the family for generations although they have only been estate bottling since 1992. Jean-Marc himself entered the trade in the 1980’s and together with his wife they secured their esteemed Premier and Grand Cru parcels. The arrival of his daughter, Alix, as winemaker in 2014 has helped push the Domaine on an upwards trajectory. Alix studied business for 5 years in Lyon, followed by viticulture for 2 years in Beaune and Oenology for 1 year in Dijon. She believes in keeping the terroir and fruit in their wines. There are 8 hectares in total between all their vineyards. They do not use any filtration or fining in their winemaking, nor do they use racking to reduce sulphates. In her pursuit to make a purer and more expressive wine Alix experimented with two barrels using 100% whole bunch and zero sulphites. It appears that this Domaine is heading towards greatness as Alan Meadows of Burghound has labelled their wines “The Epitome of Elegance” and Clive Coates has stated that Millot is a “Future Star” This is a Domaine to watch. The basic idea behind his approach is to do everything as simply as possible, which is to say harvest ripe fruit that is not destemmed and vinify it with no sulphur using only natural yeasts. Domaine Arnoux Lachaux Charles Lachaux is one of the most exciting young winemakers Burgundy has to offer. From the 2013 vintage, Charles has completely changed the culture at Domaine Arnoux Lachaux. As a result of this cultural change he is now producing some of Burgundies purest and most forward-thinking wines. Under the tutelage of the famed Madame Lalou Bize Leroy, Charles has begun arching the vines therefore not hedging, which in turn increases the photosynthesis and provides the grapes with more energy. As a result of these practices there is a much smaller yield. Everything is made using 100% whole bunch, zero sulphur and a very low intervention approach. From all of these vineyard changes, a clear shift in style has been evident from the 2017 vintage onwards. It has been noted that Charles’ style is almost reminiscent of his Grandfathers approach to winemaking in the 1970’s. These are without a doubt the most thought-provoking wines in Burgundy at the moment. Domaine Anne Gros Domaine Anne Gros is intimately tied with the elegant and poised character of wines from Vosne-Romanée producing wines that are harmonious, supple While each cru faithfully reflects its terroir, it is terroir as translated through Gros’ expert touch, offering richer aromatics, rounder curves, silkier tannins. The combination is irresistible, so much so that Gros’ very limited production is snapped up by global collectors faster and faster each vintage. Anne Gros simply is one of the top winemakers in Burgundy today, which explains why her wines have inspired such a cult-like following. Importantly for us, Gros personifies the sort of winemaker with whom we have always sought to work: an artisan with a clear vision of her terroir and talents, and the grace to be humble despite the weight of Burgundian tradition and family history. Anne Gros took over her father’s winery (Domaine François Gros) in the late 1980s. Domaine Robert Groffier The Groffier family are among the best wine makers in the Côte de Nuits. Originally founded by Robert Groffier’s father, Jules in the 1950s, the Domaine is now run by Robert’s grandson, Nicolas. The Domaine consists of almost 8 ha of fine vineyards, including 1 ha of Bonnes Mares, almost 0.5 ha of Chambertin Clos de Bèze and a full 1 ha of Chambolle-Musigny Les Amoureuses (the biggest single owner of this vineyard). The wine making technique is flexible and the proportion of stems to be retained is decided annually. nowadays, up to 20% of stems are retained, compared to 50% 20 years ago. The destemmed grapes are transferred to stainless steel vats without crushing and cooled to 10-12 degrees so the natural yeast fermentation starts 4-5 days later – to allow further extraction of colour from the skins. Frequent short pigeages are done, and the temperature is allowed to rise up to 35 degrees – which retains even more colour to the liquid. After 17-20 days maceration, the temperature descends to 20-22 degrees and after pressing age in oak, the percentage of new one varies per cuvée and vintage – from none to the Bourgogne to up to 100% for the grand crus. The wines are only racked once, usually only a year after the vintage. The wines return to vat as the new vintage is put into barrel, so only one vintage is in barrel at any time. The wines are bottled without fining or filtration. Domaine Hubert Lignier Domaine Hubert Lignier is a wonderful traditional property in the village of Morey St Denis, surrounded by the “Tres Girard” vineyard. Laurent produces a vast range with a focus on balance and purity of fruit whilst retaining the character from each individual terroir. Hubert Lignier is the reluctant star of Morey-Saint-Denis. He is a quiet, conscientious vigneron who until recently continued to sell half his crop to the négociants, despite the clamour at his door following Robert Parker's description of him as "a brilliant winemaker". Even now, he allocates 20% of his valuable stock to local négoces, because he believes in the traditional trading customs that bond and sustain an agricultural community. He is also a traditionalist when it comes to vinification methods. Only indigenous yeasts are used, with musts warmed if fermentations are not beginning naturally; vats are cement rather than stainless steel for a gentler heat exchange, and pigeage is the old-fashioned way - 5 men in a vat! Lignier practices 100% destemming, followed by vinification in traditional lined cement vats, using only indigenous yeasts. Temperatures are allowed to climb to 33 or 34°C during fermentation, and pigeage is by foot to ensure good extraction of colour and tannin. After 2 weeks on the skins, the young wines are drawn off and some press wine blended back for structure. Malolactic conversion takes place either in cask or sealed vat. The wines are aged for 18 to 24 months in barrel - 50% new oak for the best 1ers and Grands Crus, 25-33% for the village wines. Lignier neither fines nor filters his wines before bottling. New oak is used where appropriate, but is never allowed to dominate the palate profile. Bottling is without either fining or filtration. The resultant wines are rich and age worthy, and even in 'poor' vintages they never fail to impress. This is a consistent source of some of the finest red Burgundy, not only in Morey- Saint-Denis, but in the entire Côte de Nuits. Domaine Cecile Tremblay Cecile’s first vintage was 2003, having received plots from the two branches of her family (Jayer & Mugnier). The Domaine now stretches from Gevrey Chambertin to Nuits St Georges and covers 11 different appellations from Bourgogne Cote d’Or to Grand Cru. Stylistically her wines are aromatic, elegant and very concentrated with a beautiful richness that is true to each terroir. Cecile Tremblay is working biodynamic since 2016 and has since received organic certification. Depending on the vintage, Cecile uses high percentages of whole bunch in the fermentation and is minimalist in her interference. She does not perform much pigeage or remontage and leaves the wines on the lees during the elevage. The wines are not fined or filtered. The demand for these wines worldwide far outweighs the supply. Domaine Dugat-Py Domaine Dugat-Py in the village of Gevrey-Chambertin produces some of the most interesting wines in Burgundy, Dugat-Pys’ wines have long been lauded by Allen Meadows of Burghound. The Dugat family have been winegrowers in the Gevrey-Chambertin appellation since the beginning of the 17th century. Bernard Dugat and his son, Loic are the 12th and 13th generation to exploit the unique knowledge of wine-making and working in the vines, which has been acquired over four centuries. The family prides themselves on the high proportion of old vines across all their range, 15 hectares with 20 wines. The foundation of the family’s approach to winemaking are simple. Producing wines as natural as possible the very old vines are farmed organically and biodynamically since 2003. Yields are correspondingly low; and in the cellar these raw materials are vinified simply, with no pre-fermentation maceration and generally only partial destemming, 50% whole bunch for village and up to 90% for Grand Cru, depending on the vintage and climate. Elevage is in all new barrels for the Premier and Grand Crus, 50% new oak for village wines. The tiny cuvée of Chambertin matures in a small custom-made barrel each year, which varies in size according to the vintage’s production. Domaine Bruno Clair Bruno Clair founded the domaine which bears his name in 1979. The domaine at that time included plots in Marsannay and Fixin, the Dominode vineyard in Savigny-les-Beaune, and a large plot lying fallow in Morey-St.-Denis - "En la Rue de Vergy. He is the son of Bernard Clair (1920-2005) and the grandson of Joseph Clair (1889-1971), originator of the famous Domaine Clair-Daü which was founded in Marsannay in 1919. Following Joseph's death, family disagreements led to the dismantling of the Domain Clair-Daü in 1985. In 1986, Bruno was entrusted with the vineyards of his parents, brothers and sisters which included those of Clos de Bèze, Cazetiers, Clos St-Jacques, Vosne-Romanée, Clos du Fonteny and Chambolle-Musigny. More vineyards were purchased by the estate in 1993, including Corton-Charlemagne, Pernand-Vergelesses and Aloxe-Corton, and in 1996 Gevrey-Chambertin Petite Chapelle was added to bring the size of the domaine to more than 23 hectares (56.8326 acres). Bruno Clair cultivates, harvests and bottles his wines with the assistance of André Geoffroy and Philippe Brun. Domaine Bruno Clair is a member of the Association des Domaines Familiaux de Tradition. Bruno Clair maintains a rigorous selection of the best vines of pinot noir and chardonnay, identifying those that produce small grapes with perfect ripeness. This selection also concentrates on finding vines that have a good resistance to diseases and are free from viruses. This work requires much patience and is absolutely essential to obtain a healthy vineyard of great qualit. With regard to viticulture, Domaine Bruno Clair believes in the total absence of chemical fertilizers, the exclusive use of compost, and in ploughings and harrowing the soil throughout the year. The grapes are hand-harvested, and the selection of the best grapes is carried out primarily in the vineyards.
