Welcome to the 35th Annual Summer Survival Guide From Your Pullman Radio Stations For 35 years, Pullman Radio has produced the Summer Survival Guide. Over the years it as become a valuable summertime companion for longtime residents as well as newcomers and visitors to our area. This year again, with things being uncertain, we are continuing to provide the Guide to you online only. We have included as much information as we can, but also know that again this year everything is very fluid. We hope that many acitvities in our Guide are able to still take place, and that many other activities will be able to happen. We ask you to visit the websites and social media of the businesses and events throughout our book for more up to date information. We hope that you find this Guide valuable in finding things to do, places to go, recipes for food and fun, along with the area’s most comprehensive calendar of regional events. INGREDIENTS • 2 cups frozen corn • 2 tablespoons butter or 2 tablespoons • 1 garlic clove, minced margarine, cubed • 4 ounces cream cheese, cubed DIRECTIONS • Preheat oven to 350 degrees. • Mix all ingredients together in small mixing bowl. • Pour into a greased 3 cup baking dish • Bake uncovered for 20-25 minutes until bubbling around edges. • Serve hot! I’ve always been told this is very similar to the signature salad at Clinkerdagger’s in Spokane! You can easily double or triple or even quadruple the recipe. This quick and easy salad has been a staple of our summer gatherings and is always a hit at potluck dinners. 1 (approx. 15 ounce) frozen bag of small early 2-3 tablespoons mayonnaise garden peas salt, to taste 1⁄4 cup onion (I use Walla Walla sweets) pepper, to taste 2 eggs, boiled pimiento, chopped (optional) Directions: • Boil the eggs and chop • Chop the onion very fine, almost minced • Combine all the ingredients in a bowl • Season with salt and pepper to taste • Add pimento if desired. 5

Spicy Carrot Dip Tequila Fruit Salad Rachelle Marshall from the Pullman Radio Sales Susan Weed, co-owner of Pullman Radio team, and co-owner of Cougar Graphics in shared this delicious salad recipe. She says Colfax shared one of her delicious recipes with us. some of her favorite desserts have a little bit of alcohol in them. This Tequila Fruit Salad is 1 1/2 lbs carrots, peeled and each cut into 4 the perfect dessert for summer, when the fruit 2 cloves garlic, peeled is naturally sweet and you want something 1/4 cup extra virgin olive oil chilled and light after a delicious meal. 3 Tbsp red wine vinegar 1 tsp hot Hungarian paprika INGREDIENTS 1/4 tsp chili powder 2 cups strawberries (halved, hulled) 1/4 tsp ground cumin 2 cups mango (diced) 1 tsp ground coriander 1 tablespoon coconut sugar 2 habinaro peppers 2 tablespoons lime juice 2 tablespoons tequila Cilantro (coriander) & mint springs for serving 1 tablespoon triple sec Flat bread, for serving 1 tablespoon mint (chopped) Place carrots and garlic in a saucepan and cover with salted water. Bring to a boil and INSTRUCTIONS cook for 10 minutes, until tender. In large bowl, combine strawberries, mango, Drain well. sugar, lime juice, tequila, triple sec, and mint. Mash carrot and garlic roughly and stir in Toss gently to combine. Cover bowl with remaining ingredients.
