2021 RQFWS BRANDED BEEF & LAMB COMPETITION The Royal Queensland Food & Wine Show (RQFWS) Branded Beef and Lamb competition unearth the nation’s finest beef and lamb in the retail market. For a country that adores its red meat and produces some of the finest beef and lamb in the world, this competition is a true showcase of the best of the best. Chief Judge Elaine Millar will once again lead a team of expert judges, including top chefs from award-winning restaurants, butchers, food consultants and food journalists. MESSAGE FROM THE CHIEF JUDGE Since 2009, the prestigious Royal Queensland Food & Wine Show (RQFWS) Branded Beef and Branded Lamb Competition continues its dedication to unearth, recognize, reward, support, showcase and celebrate the very best of Australia’s finest beef and lamb. Because our Branded Beef and Branded Lamb competition is regarded as one of the most coveted and comprehensive of its kind in the nation, it provides the opportunity for exhibitors to measure their success against their peers, and the class winners are given the invaluable opportunity to proudly showcase their gold, silver, bronze or trophy medals on their product packaging, ensuring retail, food service and consumers are informed of the recognition the winning entrants so richly deserve, prior to purchasing these outstanding quality proteins. Once again, it is a great privilege for our esteemed judges and I to be given this opportunity to assess the best-of-the-best Branded Beef and Branded Lamb from regions across our vast country. Because Australia produces the best beef globally and the most stunning lamb, our experienced judging panels will knowledgeably and enthusiastically embrace all entries to evaluable the tenderness, juiciness, visual and most importantly, the balance of flavours. Our highly respected judging panel are food professionals – award winning chefs, premium butchers, industry experts, and leading food and agri-business journalists. Behind the scenes, the engine room will once again be skilfully managed by highly qualified stewards with decades of butchery and industry experience, and the precise technical cooking regime will be mastered by a team of proficient science experts from the Queensland Government Department of Agriculture and Fisheries. Because this competition is so valued across Australia, we thank our partners and sponsors - Meat & Livestock Australia, Kings Street and the Queensland Government - for their ongoing support and encouragement. I am constantly overwhelmed by the resilience demonstrated by our agricultural community and the perseverance of its people with the ongoing plethora of challenges – crippling drought, extreme floods, devastating fire, a turbulent export market, chaotic world politics, Covid and so much more… Considering this difficult landscape, even more extraordinary is how our beef and lamb exhibitors deliver unprecedented growth in quality, year on year. No early or late deliveries will be accepted. Beef entries must be accompanied with a signed Statutory Declaration per brand. ENTRY ELIGIBILITY LABELLING After entries have closed, exhibitors will receive an E-label issued by COMMERCIAL AVAILABILITY the RNA via email. These labels must be adhered to each entry prior to delivery. Please adhere to cryovac packaging and carton. All products entered in the competition must be commercially available in the Australian domestic market at the time of judging i.e. retail/wholesale, outlets, food service and/or restaurants. DELIVERY For Branded Beef, each exhibitor is to supply 1x whole striploin of NUMBER OF ENTRIES PER CLASS H.A.M. 2140 or 2141 or 2142 or 2143 together with a copy of the carton end panel from which the entered product originated. Only one entry per individual brand is allowed unless identifiable differences can be defined during the entry process. For example, one brand could submit Wagyu entries in both class 3 and 4 due to different marble scores submitted on the entry form. Multiple entries per class are permitted, however the exhibitor must clearly identify a difference between each entry during the entry process. For example, different product names. AUSTRALIAN PRODUCT All exhibits entered in the competition must be 100% beef or 100% lamb. STRIPLOIN 2140 MINIMUM VOLUME OUTPUT Striploin is prepared from a hindquarter by a cut at the lumbosacral junction to the ventral portion of the flank. Entries can be completed online at www.rqfws.com.au. RACK COP ON-FRENCHED 4756 This is prepared from a rack (item 4932) with the cap muscle to be retained in situ. The feather bones and chine are removed. The cap APPLICATIONS TO ENTER muscle overlay on the ribs is removed at a specified distance from the eye muscle and parallel to the backbone. All entries are to be vacuum packed and supplied fresh not frozen Exhibitors must declare the MSA eating quality scores for each entry with into Classes 1 and 2. n End panel Any entry containing Wagyu regardless of MSA Grading MUST enter either Class 3 or 4. n Kill date All MSA entries must meet minimum MSA ageing requirements and n Grading data be aged no longer than 60 days at a time of judging. No dry ageing products are to be entered. n MSA Producer feedback Non MSA exhibits must be aged for 5 days and no longer than 60 n E-label as provided by the RNA days at time of judging. No dry ageing products are to be entered. BRANDED LAMB COMPETITION All entries must be aged for a minimum of 5 days and no longer than BRANDED BEEF COMPETITION 60 days at time of judging. All entries in Class 1 and 2 must be MSA graded product. Class weights identified in Classes 6, 7 and 8 refer to the dressed carcass weights. Class 1 Grain Fed Cattle slaughtered and processed as Grain Fed must be sourced from a feedlot accredited with the National Feedlot Accreditation Scheme (NFAS). A signed statutory declaration must accompany the end panel stating the product offered for judging is represented with the end panel supplied. ALLOCATION OF POINTS Statutory declaration is mandatory for all entries in Class 1 stating the All entries will be judged on the below criteria following. EXHIBITOR PROMOTION OPPORTUNITIES All medal winning exhibitors may have the opportunity to promote their award winning product through the following channels: 1. Supply of award-winning product to the Royal International Convention Centre (Royal ICC) for inclusion on their menu compendium, which is offered to international, national and local events and featured on the printed menus. 2. The supply of award-winning product at: n Grape Grazing by Night – a celebration of all RQFWS award winners; and n RNA managed outlets at the Royal Queensland Show (Ekka) Additional opportunities may be available at the RNA’s discretion including the Ekka Media Launch, cooking stage and the Royal Queensland Tastes area. Following the announcement of the awards, exhibitors interested in participating in any or all of the promotional opportunities should contact the RNA Competitions & Events Coordinator. 9 COMPETITION SCHEDULE

Excludes Wagyu entries. Wagyu entries must be entered into Class 3 or 4 Champion MSA Graded Branded Beef of Show Selected from first place winning entries in classes 1 and 2. Exhibitors must state on the “Application to Enter” form or submit online the classes to be competed for. The stewards and/or judges may move an entry to another class if it is deemed that the entry is out of class. 2. Judging will be conducted by the judges appointed by the RNA. 3. The exhibitor consents to the RNA publishing or reproducing in any manner whatsoever any particulars or information in relation to their exhibits; the publication or reproduction may be in a printed form or visual image through electronic means and/or on the internet. 4. Samples to be delivered to RQFWS Branded Beef and Lamb competition, as outlined in the schedule. 5. Exhibitors agree to the publication of all competition results. 6. First, second and third place getters are to be awarded in each class with the corresponding gold, silver and bronze medals in accordance with the RQFWS medal artwork. 7. Champion and Grand Champion in Branded Beef and Champion in Branded Lamb place getters are to be awarded with the corresponding trophy medals in accordance with the RQFWS medal artwork. 8. All products must be commercially available in the Australian domestic market at the time of judging i.e. retail/wholesale, outlets, food service and/or restaurants. 9. Only one entry per individual brand allowed unless identifiable differences can be submitted during the entry process e.g. one brand could submit Wagyu entries in both class 3 and 4 due to the different marble scores submitted on the entry form. Multiple entries per class are permitted however the exhibitor must clearly identify a difference between each entry during the entry process e.g. different product names. 10. All exhibits become the property of the RNA upon delivery. 11. If COVID-19 recommendations and mandates advised by the Federal and State Governments mean the competition class you entered cannot proceed in 2021, the RNA will issue a full refund of your entry fee. 11 COMPETITION SCHEDULE
