Benvenuti The Pilu at Freshwater wine list has been created to take you on an ‘adventure in wine’ and is designed to compliment our chef/owner Giovanni Pilu’s Sardinian cuisine. We specialise in Italian wines with the extensive Sardinian selection being the highlight. We have a diverse range of local wine too, largely from our own state of New South Wales, as we love to showcase local produce. In 2019, we continue to offer a selection of rare wine from the cellar of a private collector - these wines have been aged in a natural underground cellar and are in the very best condition possible. For a quicker selection, you can turn to the Sardinian wine section, complete with maps and information on the history and varietals. In the main list, Italian and Australian wines are listed together, by varietal, to assist in navigating through the list more easily. Regioni d’Italia Organic, Biodynamic and Natural Wines As increasingly popular as they are controversial, organic, biodynamic and natural wines are now an important part of our wine culture - here we offer a little information for those who may be curious about, or new to them. Although it may all seem a little new-age to some, it is worth noting that many of the best wines in the world from some of the most prestigious estates are made using these methods. Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides. Biodynamic methods were developed by Austrian philosopher Rudolf Steiner and wines are made using a wholistic and sustainable approach. Grapes are grown using the same core principle as organics, with the addition of special preparations added to the soil, which improves soil structure, nutrient and mineral levels, as well as plant growth and development. Recycling of farm and wine residues back into the vineyards improves overall sustainability of the land. Natural wines are more difficult to define, as there is no governing body set up to control production methods, resulting in various interpretations. They are generally made with ‘minimal intervention’, using natural yeasts, and minimal or no sulphur is added. Wine is often left on skins (both white and red) and there is no filtration, fining or adjusting. Natural wines look and taste a little different to ‘conventional’ wines, they will be darker in colour and cloudy, and will evolve dramatically in your glass. They are food friendly, vibrant and interesting though, so whilst not for everyone, they are most certainly worth trying. 3
Acqua e bibite San Pellegrino mineral water has been produced for over 600 years in San Pellegrino Terme in the Province of Bergamo, Lombardy-Italy. Leonardo da Vinci is said to have visited the town in 1509 to sample and examine the town’s “miraculous” water, later writing a treatise on the subject. Recent analysis shows that the water is strikingly similar to the samples taken in 1782, the first year such analysis took place. The water may originate from a layer of rock 400 metres (1,300 ft) below the surface, where it is mineralized from contact with limestone and volcanic rocks. Acqua S. Birre e Cidro Beer is one of the world’s oldest prepared beverages, dating back appriximatelly 9500 BC when ceral was first farmed and is recorded in the written history of ancient Iran and Egypt. Franciacorta The Franciacorta D.O.C.G. region that is home to Bellavista, is an area located in the hills of Lake Iseo in the province of Brescia in the eastern part of Italy’s Lombardy region – a very restricted area of 2,800 hectares that produces some of Europe’s best sparkling wines made in the same way as the great wines of Champagne in France where the second fermentation takes place in the bottle. Bellavista has played an important role in the transformation of the Franciacorta region into one of Italy’s most famous D.O.C.G. areas. Producing his first wine as a hobby, Bellavista Chairman Vittorio Moretti has guided the winery over almost 35 years of advancement. During that time Bellavista has grown to encompass 190 hectares sown with Chardonnay, Pinot Noir and Pinot Blanc vines, divided into 127 plots located in 10 different Franciacorta municipalities According to Vittorio, the essence of Bellavista is “living and working around beauty and transforming this beauty into a product that is a blend of science and art and is a drink (but most importantly a pleasure) that you can share with friends. Sardegna Sardinia is the second largest island in the Mediterranean and is 200 kilometres off Italy’s west coast. It is a unique region that has spent much of its history under Spanish rule - the Spanish influence remains in Sardinia’s food, culture and wine. The Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling th th the island from the 14 to 18 centuries, who contributed the most to Sardinia’s wine production. The climate is Mediterranean, with short, mild, wet winters and long, hot, dry summers. With rugged mountains and dry plains, soil types vary from sandy clays in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west. Today Sardinia is home to a unique range of grape varieties, predominantly of Spanish origin. Spumanti Sardi Sparkling wines are produced from a variety of local and international grapes in Sardinia (if only in fairly small quantities) and can be dry or sweet. Bianchi Sardi Vermentino Indigenous to the Mediterranean area, this semi-aromatic grape shows its best expression in Sardinia. Since the '60s the production of Vermentino has extended to almost all the wine-growing areas of the island, especially in Sassari (also thanks to the recognition of the DOCG Gallura). The plant is vigorous, suitable for various breeding systems, ensures a constant and generous production, as well as of great concentration in late harvest that express the essence of the Mediterranean. The harvest is between August September. It prefers to live in environments with the presence of water (moist soil or irrigation always available) to promote wines of richer opulance. Bianchi Sardi Torbato Torbato is most likely a member of the Malvasia family and of Spanish origin; it is known as Tourbat in Southern France. Traditionally grown only around Alghero, in chalk rich white soil, today it is only produced by the Sella e Mosca estate, who make both sparkling and still versions. It makes a viscous and exotic wine, with creamy texture, pistachio and spicy fruit characters. Vernaccia di Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s - it may be indigenous, or was introduced by the Phoenecians. Vernaccia di Oristano is a historical wine, usually dry, made from over-ripe grapes in a similar style to Spanish Sherry. Wines are aged in a system similar to Sherry’s ‘solera’ where the wines will develop ‘flor’, but Vernaccia di Oristano is rarely fortified. These are complex wines, with deep colour and flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea and winter honey. Granazza is the local name for the same grape around the area of Nuoro in the centre of the island. Rossi Sardi Cannonau Known as Grenache in France and Garnacha in Spain, Sardinia’s most planted red varietal was considered to have been th introduced by the Spaniards in the 15 century but according to most recent study supported by scientific analysis it was present in Sardinia since the Middle Bronze Age. Cannonau is grown all over the island, with the best examples coming from the area around Nuoro in central Sardinia. Medium to full-bodied in weight, wines have juicy, sweet raspberry and blackberry fruit, with hints of chocolate, warm spice and earth characters. With soft, fine tannins and low acidity, they can reach quite high levels of alcohol. Vini Rossi Wine and food can be considered the most complete form of art as they stimulate more than just one of our senses. Nebbiolo / Chiavennasca In the heart of the rolling hills of Langhe in the northern Italian region of Piedmont the ancient Nebbiolo grapes give birth to one of the greatest Italian red wines: BAROLO, the king of wine and the wine of kings. Barolo was one of the first three Italian wines to be awarded DOCG status when the classification was introduced in July 1980. The Barolo area is restricted to a handful of ‘communes’ which produce slightly different styles according to soils and mesoclimates. Wines from the villages of La Morra and Barolo are generally aromatic and fruity with La Morra producing the most perfumed and graceful wines, while the one from Barolo tend to be more complex and textural. Castiglione- Falleto, Serralunga d'Alba and Monforte produce more structured wines that require longer aging with Serralunga d’Alba barolos being the most tannic of the five. Castiglione-Falleto produce full-bodied wines of good balance and aromas and the Monforte D'Alba wines are rich, concentrated and intense. Barolo wines must undergo at least 38 months' aging prior to commercial release of which 18 must be spent in barrel. For the riserva, the total aging time increases to 62 months. Traditionally Classic Barolos are subjected to long fermentation and aged in large wooden casks requiring at least ten years cellaring to tame their tannins. Vini Rossi Swiss Henri Marc is the inventor of modern wine labelling. In 1837 he started selling his wines with an oval shaped illustrated label which also included technical information about the wine. Supertuscan Antinori ‘Tignanello’ Produced by the Antinori family in the Chianti Classico zone and only made in the best vintages from the vineyard of the same name. Tignanello is the original ‘Super Tuscan’ wine, first produced in 1970 as a Chianti Classico Riserva (including white grapes and Canaiolo in the blend) and aged in French barrique. In 1971 it became a VDT when Cabernet was added and the white grapes were removed. Vini Rossi Sangiovese + Blends Sangiovese is the most cultivated red grape varietal of Italy. It seems that Sangiovese was already known to the Etruscans and that the name derives from Sanguis Jovis, Blood of Jupiter. It can produce wine with perfect balance, with very fine perfumes, floral, but fragile. Possibly the most popular and important wine derived from Sangiovese is Brunello di Montalcino. Produced in the medieval village of Montalcino in the province of Siena, in 1980 Brunello di Montalcino was awarded the first Denominazione di Origine Controllata e Garantita (DOCG) designation and today is one of Italy's best- known and most revered wines. Vineyards in Montalcino are planted in varied soils, including limestone, clay, schist, volcanic soil and a crumbly marl known as ‘galestro’ at altitudes ranging from 149 m to 500 m. This diversity in terroir contributes to the vast range in quality and potential complexity of Brunello di Montalcino. Brunello di Montalcino is made 100% from Sangiovese. Traditionally, the wine goes through an extended maceration period where colour and flavour are extracted from the skins. Following fermentation the wine is then aged in oak. Traditionally, the wines are aged 3 years or more "in botte"—large Slavonian oak casks that impart little oak flavor and generally produce more austere wines. Some winemakers will use French barrique which imparts a more pronounced vanilla oak flavor. There is a middle ground where the wine is aged in small barrique for a short time and then spends a longer sojourn in the traditional botte.
