I N T RO D U C T I O N The wine list at Core by Clare Smyth embraces everything Clare and the team love about wine from old, fine and rare to young, new and exciting. Our cellar is home to wines that are already firm favourites, vintages to return to time and time again as well as a host of fresh discoveries waiting to be tried; an authentic reflection on the wine world today. Our team are entirely dedicated to exceptional wine and hope to offer a list that excites every palette. We are proud of the depth that has been meticulously built into the collection, matching Core’s food and service with our shared dedication to excellence. We appreciate the uniqueness of every bottle and wish to commend the hard work of their production. We strive to do justice to all those involved from the growers, to the winemakers and the barrel crafters. Many dedicated hands were responsible in bringing these wines to our door, and to your table. To see the vineyards, feel the soil, taste the grapes, and talk to the producers – this is something you can’t find in wine books. We travel regularly to wine regions and as sommeliers, we are the connection between the winemaker and the consumer. Each opportunity for our guests to experience the provenance of individual wines fuels our enthusiasm and gives us the chance to share our passion for wine. We love an inspiring quote, and sometimes a drawing can speak volumes where words can confuse. We have quite a comprehensive list, but we hope that you find it pretty easy to navigate and hard to put down. We aim to provide the highest level of service but without the pretence. We want you to have fun, and we want to make it personal, tailored to you and your time with us. It doesn’t matter if you don’t know your Cabernet from your Carignan. CO R E W I N E PA I R I N G Working closely with the kitchen team, our sommeliers have carefully selected the following wines to be paired. C O R E C L A S S I C S 2018 Assyrtiko Cuvee Monsignori, Estate Argyros, Santorini Greece Estate Argyros has been established in 1903, but the Argyros family has been involved in wine production for decades before that. It is the largest private owner of vineyards in Santorini. 2018 Chardonnay Ava Marie, Restless River, South Africa Restless River’s Chardonnay vineyards are some of the oldest in the cool-climate Hemel-en-Aarde valley. Tiny yields and long, slow maturation produces some extraordinarily concentrated fruit. 2019 Savennières L’Alliance, Domaine Laureau, Loire Valley France Planted in the 12th century by the Cistercian monks, the domaine experienced successive owners and much renown until it was bought by the Joly family in 1962. Nicolas Joly only took over the estate in 1977. 2012 Monthélie Rouge, Domaine Fanny Sabre, Burgundy France Fanny Sabre makes wines in a very natural manner, which is not surprising when you consider that she learned her trade from Philippe Pacalet. 2005 Château Grand-Puy Ducasse, Pauillac 5ème Grand Cru Classé Bordeaux The 40 hectare Medoc vineyard of Grand Puy Ducasse is planted to 63% Cabernet Sauvignon and 37% Merlot, which shows an increase in the amount of Cabernet Sauvignon in the vineyard, giving the wines more structure, tannin, and complexity. 2017 Jurançon Moelleux, Domaine de Souch, South West France When she lost her husband at 60 years old, Yvonne decided to fulfil their life dream of planting a vineyard around their house. £115 Per Person CORE wine list 2021 4

C O R E S E A S O N S 2019 Riesling Trocken, Weingut Georg Mosbacher, Pfalz Germany Weingut Georg Mosbacher is a family-owned estate with nearly 45 acres of vineyards in the picturesque wine village of Forst situated on the German Wine Route. 2018 Grenache Blanc, Donovan Rall, Swartland South Africa One of the original “garagista” producers in the Swartland, Donovan can now proudly say that he makes some of the most highly sought-after wines in the country. 2018 Bouzeron Aligoté, Domaine A & P de Villaine, Burgundy France The 26ha of Domaine de Villaine are centred in Bouzeron an area first planted to the vine by the monks of Cluny in the middle ages, situated just south of the Cote d’Or and north of Rully. Here the poor soils and limestone-rich slopes are reserved for Bouzeron’s speciality, Aligote 2017 Pinot Noir Woori Yallock, Mac Forbes, Yarra Valley Australia Woori Yallock is home to Ferguson Vineyard Pinot Noir and Chardonnay. The vineyard is 100-145 masl and is characterised by grey loamy clay soils with overlying siltstone. C H A M PA G N E We love our Champagne at Core. Quite simply, because Champagne continues to be the envy of the world’s sparkling wine producers. Ok, so Champagne sales have taken a hit from Prosecco recently, while English sparkling wine producers are rightly shouting about their usefully high acidity levels as the Champagne region warms up. But Champagne still rules, especially when it comes to ageing. That said, the big Champagne houses are being challenged by a new wave of producers who prefer to wear a pair of jeans than a sharp suit; who might farm organically, and focus on single vineyard and single grape variety wines. Cue the Champagne grower. The rise of the grower-producers has revolutionised this generation in the region. Top Champagne is no longer the exclusive realm of the big players. While single vineyard is the new vanguard, with deliciously complex cuvées from trailblazing terroiriste growers taking the wine world by storm. “I only drink Champagne when I’m happy, and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it if I am not hungry and drink it when I am. There are general appellations, such as Bourgogne Rouge, and regional appellations, such as Chablis. Village wines come next, naming the best villages, such as Meursault. Next up is premier cru, the second-best vineyard within each village – the village comes first on the label, like Meursault-Charmes. Finally, grands crus, the top wines in Burgundy, from the top vineyards. “I feel sorry for people who don’t drink. B U RG U N D Y Talk to any Burgundy buff and it won’t be long before the word ‘terroir’ crops up. The term, bandied around the wine world, carries so much meaning and weight, and refers to all the natural elements – the geography, the geology and the climate, which together with the winemakers’ skills creates a unique vintage. But just when you’ve got your head around that, up pops the word ‘climat’, which is unique to the wines of Burgundy. Climat is a precisely delineated vine plot, with its own microclimate, and specific geological condition, shaped by human cultivation over centuries. The Gallo-Romans grew vines here. In the Middle Ages, monks carved up their vineyards into tiny patches, marking their boundaries with dry-stone walls. B O R D E A U X Ringing the changes in Bordeaux So you thought things hadn’t changed much in France’s most famous and largest wine region? Think again. There have been fundamental stylistic shifts in the region’s wines over the last few decades. Thanks go in part to the simultaneous rise of the consultant and the wine critic (we’re thinking of you, Michel Rolland and Robert Parker Jr). Their influence was – still is – massive, prompting an opulence in the wines not seen before. Who cares how these new super- ripe wines age? Not the public, certainly, who don’t want to wait three decades to drink it. Yes, the region still lives and dies by the 1855 classification that ranks its top properties, but nearly everyone not at the top thinks this is now past its expiration date. And there’s a growing number of earnest producers making laudable wines at artisan level, who are now farming with an eye on organics, and who revere the freshness and integrity that once made ‘claret’, as us Brits like to call it, so beloved. “I can certainly see that you know your wine. N O RT H E R N R H Ô N E Did you know that there are vineyards along virtually the entire length of the Rhône River, from its source in the Swiss Alps to its mouth near Marseilles? The variety of wines is staggering, unsurprisingly. In wine terms, the valley is split into the northern and southern Rhône. The vineyards in the north, some of the oldest in France, are etched into the mountainside on narrow terraces at dizzying gradients, with the great majority of wine being made from the Syrah grape. The region’s most famous wines are the deep-flavoured, long-lived reds of Hermitage and the generally more fragrant and delicate Côte-Rôtie. The southern Rhône, meanwhile, is more user-friendly (more boozy, too – we’re looking at you, Châteauneuf-du-Pape). You can thank the openly fruity character of the Grenache grape, which rules here. And the change in scenery – it’s the gateway to Provence, think olive trees, lavender and cicadas. CORE wine list 2021 45
