is something Oralia Perez has become familiar with hearing over the
years – even more so after bringing her delicate creations to Bouchée
Patisserie, located inside The Post Oak Hotel at Uptown Houston. It can
take anywhere from 4 to 6 hours to mix, rest, shape and bake her flaky
masterpieces, a process her team begins promptly at 3:30 a.m. daily.
“Another must-try, and one of my ultimate favorites,
is our almond croissant,” says Perez.
It’s soaked with rum syrup, filled with almond cream, and then topped
with even more almond cream and slivered almonds for texture.
While the whimsical Bouchée is something of a playground for Perez,
whose offerings also include fruit tarts, chocolates, gelato, macarons,
grab-and-go sandwiches and specialty coffee, her talents don’t stop at
the Parisian inspired sweet shop. As Executive Pastry Chef of The Post
Oak Hotel, she is responsible for overseeing all pastry production of the
hotel, including the sweet indulgences found at the Four-Diamond Bloom
& Bee, Craft F&B, H Bar and banquet events. She also oversees cake
production for sister properties Mastro’s Steakhouse and
Willie G’s.
“I absolutely love what I do,” says Perez. “I do it to make
people happy.”
Perez started her career in a small pastry shop in Southern California
where she grew up before venturing out across the U.S. to Las Vegas, the

French pastries and always try to use them as guidelines to create
something new or with a twist.
What was the hardest (or most time consuming) thing you’ve
had to make?
The most time consuming thing my team and I had to make thus
far would have to be a 7 tier cake. This cake had to be covered
completely with rolled fondant and each tier had very intricate filigree
on it that had to be done freehand then painted with gold dust.
Bouchée is all about indulgence.
What is your favorite food guilty pleasure?
Believe it or not, I am not a big dessert eater. I love food, in fact all
food. However, my favorite and guilty pleasure would have to be
bread and cheese. I can have these two anytime of the day without a
doubt.
What’s one baked good everyone should master?
An amazing chocolate chip cookie.

THE ORIGIN OF THE BLOODY MARY
While its origins is often disputed, popular theory credits Harry’s New York Bar
in Paris, France as the creator of the classic cocktail. Story goes that in 1920
Harry’s bartender, Fernand “Pete” Petiot, began experimenting with vodka after
an influx of Russian immigrants escaping the revolution introduced the spirit to
the City of Lights. At this same time, American “canned tomato juice cocktail”
was appearing in French grocery markets. After mixing some extra spices and
seasonings, the first Bloody Mary was born. Petiot’s creation became popular
with American expats who frequented Harry’s, including Ernest Hemingway.
Petiot eventually took his winner of a cocktail transatlantic to King Cole Bar at the
St. Régis Hotel in New York City, where it was called the “Red Snapper.” As for
where the Bloody Mary moniker came from? Many believe it was later re-named
after Queen Mary Tudor and her bloody reign over 16th century England; others
claim the drink was named after a waitress, Mary, from Chicago’s famous
Bucket of Blood Saloon.
