WINTER VOLUME XLI I FEBRUARY 18TH, 2021 TRAILL TALES CATHARINE PARR TRAILL COLLEGE TRENT UNIVERSITY Dear Traillites, Today, I would like to express my profound gratitude to Jessica Becking who leaves her position of Traill College Assistant this week. For the past 18 months Jessica has worked tirelessly at the role, keeping both the College – and its principal – on track. In addition to her daily duties (which are numerous), she has also stewarded several key projects such as the introduction of a new e-commerce and registration system for Continuing Education, the sorting and cataloguing of books for the College Library as well as the development of two popular publications: Traill College’s Traill Tales and Collegiate Way International’s newsletter. It has been a delight to work with Jessica again over the past year and a half and her daily presence in the College Office will be missed. Jessica is currently working with Samantha Perritt, who is returning from her maternity leave, to ensure a smooth transition in College operations. Next week, Jessica will return to two full-time pursuits: her PhD studies and caring for her sons Leo and, the newly-arrived, Ronan. On behalf of the entire College community, I would like to thank Jessica for her profound dedication to the College and wish her only the best for the future. BACKWOODS BAKING Perfect Potato Wedges INSTRUCTIONS Looking for a new way to cook a pantry Start by preheating your oven to 400°F and staple? This method gives you fluffy thoroughly washing your potatoes. If you don't like skin on your wedges, peel them and then place into potato wedges with less oil than your some cold water to stop any browning. local chip shop! Fill a large pot with water and bring to a boil. While INGREDIENTS you wait, dice your potatoes into wedges. Keep in mind, the thinner your slices, the quicker they'll cook! Once boiling, place your potatoes in the pot of water Potatoes (the type or number and allow to cook until tender, about 6-10 minutes. depends on your preferences and Strain your potatoes, and place in your fridge or portion size!) freezer to cool. This is a good time tp work on Olive Oil or any other neutral oil whatever you're eating your wedges with! Garlic powedr Once cooled completely, Gently toss your potatoes Onion powder with oil and spices, then spread onto a baking sheet. Smoked paprika Place on center rack of oven for 20-25 minutes, and Salt and pepper (to taste) voila! Perfect wedges anytime! Did You Know - The Origins of Black History Month Black History Month had a modest beginning back in 1926. That is when Dr. Carter G. Woodson created “Black History Week” to bring attention to the overlooked history of Blacks in America. Dr. Woodson also was the founder of the influential Journal of Negro History. Woodson’s parents were emancipated slaves and through determination and genius went to Harvard where he earned his PhD. Dr. Carter G. Woodson (1875-1950) The idea of a Black History Month was first proposed at Kent State University in 1969 and the idea became to spread across America informally. In 1976, during America’s Bicentennial the month was officially recognized by the President and approved unanimously. Students at Kent in the 1960's In the United Kingdom, Black History Month is celebrated in October. It was first organized in 1987 by Akyaaba Addai-Sebo an activist from Ghana who worked with the London Council. He picked that date as it was closer to the beginning of the school year and that in several African countries October was the time for Chiefs to traditionally settle differences and build understanding. Akyaaba Addai-Sebo In Canada, Black History Month has been marked for decades. It was first officially observed in Nova Scotia in 1988. In 1995, Dr. Jean Augustine lead the charge to have it officially recognized nationally and the House of Commons voted unanimously for the proposal. In 2008, a similar proposal was made in the Senate, by Donald Oliver (the first Black Canadian appointed to that body) and it too was approved unanimously.
