Designed to meet the needs of bakeries, confectioners, pizzerias and hot food vendors, the STRATOS modular electric oven does not need any special permits so it can be operated as soon as it has been installed. The compact size, level of insulation and technical details of this practical and versatile oven lead to significant financial savings and allow the operator to diversify production. The configuration of the oven can be expanded after purchase to include one to five completely independent, modular chambers. The chambers are available at a standard height of 18 cm or 30 cm for taller baked goods such as panettone and pandoro. The Stratos is available in the following versions: • CRYSTAL, with etched, tempered glass doors • CLASSIC, with stainless steel insulated doors • BLACK, with attractive black stainless steel insulated doors The oven can be customised to meet your needs with the many accessories available. THE OVEN What are the secrets to gentle, even baking? Electric ovens are usually equipped with a few heating elements spaced far from each other. In order to provide the necessary heat, they must reach very high temperatures that cause aggressive and uneven baking as well as the premature wear and tear of the elements. The STRATOS OVEN contains many elements armoured in special steel and spaced near each other. The intense power is thus evenly distributed to provide a gentle, diffuse heat that is always available when required. The elements are virtually indestructible due to the low specific power and lower operating temperatures. Heat dispersion from the oven opening causes uneven baking and is usually offset by simply reinforcing the front heating elements, but this cheap solution does not allow for temperature adjustments or to correct the uneven baking. DIGITAL KEYPAD Polin’s electronic system gives you all the versatility you need! The Stratos is equipped with an electronic system that contains 99 programme digital keypad several special control and energy savings programmes operated by means of a dedicated button: In addition to all the functions of the standard ENERGY BUTTON digital keypad, the 99 programme digital sets the energy level based on the type of product to be baked. keypad can save the following parameters for each of the 99 programmes: PREHEAT BUTTON - 2 temperature phases (for example, to preheats the oven without wasting energy. start baking at a high temperature and then automatically reduce the temperature PAUSE BUTTON after a preset time) pauses the oven between two baking cycles with the dual benefit of: - Total baking time - Reducing energy consumption by up to 18% - Quantity of steam in seconds of water - Preventing the bottom of the oven from overheating supplied automatically ( steamer) The Standard digital keypad allows the operator to: - Automatic opening/closing of the steam - Set the temperature of the chamber exhaust valve - Control the oven chamber and opening separately at both the top and - Level of energy supplied to the top and bottom bottom of the oven - Timer with audible alarm to indicate the end of the baking cycle - Automatic switching on and off of the - Partialise the amount of power at the top and bottom of the oven for a chamber multitude of different types of baking - Switch the steamer on and off with programmable steam temperature - Autodiagnostic programme that displays the alarms and saves the operational data in order to constantly control the performance of the oven The following options are available upon request: - Economiser to limit the power required for the installation of ovens with two to five chambers - Automatic switching on and off of the oven each day - Power boost for baking pizza and focaccia - Independent control of the temperature at the top and bottom of the oven by means of a dual sensor - Automatic control of the temperature at the opening by means of a sensor - 99 baking programme keypad (automatic shutter optional) Optional STRATOS OVEN
COMPONENTS The usual manner in which oven doors are tilted outwards when opened is often the cause of injury and takes up space. The innovative retractable door of the Stratos oven solves this problem, thus avoiding accidental contact when loading and unloading the oven and saves space below the oven. 4 The oven knobs do not overheat because they are located outside the opening of the chamber. The doors can be cleaned without having to remove the glass, thus preventing breakage and saving time. 4 The versatile Stratos oven is available with four different baking surfaces: - Embossed sheet metal (standard), ideal for baking delicate pastries on a pan - Fibre-cement, ideal for pastries and bread - Reinforced cement, thick surface suitable for heavy products such as bread, focaccia and pizza - Refractory material, an alternative to reinforced cement and perfect for the direct baking of pizza and focaccia The steamer is equipped with two powerful ceramic heating elements to 4 ensure that there is plenty of steam available during baking.
