Dave Maguire, our Café Manager, has been out and about visiting the greatest local suppliers in the area for the best turkeys for your traditional Christmas dinner in Grosvenor’s Café. our secret Classic Christmas Gravy “what a taste!” (makes 1-2 pints) You will need: Method: recipes For the turkey stock 1. Rinse the giblets in cold water, place in a large pan with 1.5litres Giblets from the turkey of cold water. Slowly bring to the boil skimming off any froth with a slotted spoon. 1 onion, quartered 2. Add the onion, carrot, celery, herbs and peppercorns, cover and 1 carrot, diced simmer for 30 minutes. Remove the lid and simmer for another 1 stick celery, chopped 30 minutes or until reduced by half. 3. Remove the stock from the heat and strain through a sieve. 3 bay leaves 4. When the turkey is cooked take it out of the roasting tray, 3 sprigs of thyme cover with foil and rest. 4 fresh parsley stalks 5. Spoon off the fat from the roasting tin leaving the juices behind. 6 black peppercorns 6. Place the turkey roasting tin on the hob and bring it to a simmer. Add the flour stirring continuously with a wooden spoon to avoid getting any lumps for 2-3 minutes. For the gravy 7. Remove from the heat and stir in 2 ladlefuls of stock. Return to 2 tbsp plain flour the hob on a low heat for 2 minutes. Gradually add the remaining stock and wine, stirring continuously and bringing it to the boil, 750ml turkey giblet stock until thickened. or fresh chicken stock 8. Simmer gently for 5 minutes. Season to taste and strain into 100ml dry white wine warmed gravy boat and serve. This recipe works for any meat and poultry, just replace the turkey stock with chicken, beef, pork or lamb stock. Cranberry Sauce “delicious ruby red”(serves 6) You will need: Method: 1lb cranberries 1. Place cranberries, together with all the remaining ingredients in 4oz granulated sugar a large pan. 2. Bring to a simmer, stir well and simmer uncovered for approx 15 fl oz red wine 1 hour, stirring from time to time. 2 tablespoons red 3.
