JUBILEE SCONES
Makes 12                                           Recipe
INGREDIENTS                 METHOD
450g self-raising flour     1.   Preheat the oven to 220C/200C Fan/
                                 Gas 7. Lightly grease two baking trays.
2 level tsp baking
powder                      2.   Put the flour, baking powder & sugar
                                 in a large bowl. Add the butter & rub in
50g/1¾oz caster sugar            with your fingertips until the mixture

100g/3½oz butter,

                            6.   Bake for 12–15 minutes, or until the
                                 scones are well risen and a pale,
                                 golden-brown colour. Lift onto a wire
                                 rack to cool.
                            7.   To serve, split the scones and serve
                                 with clotted cream, fresh strawberries
                                 & jam or roasted rhubarb.

RUBY & KENZIE’S QUEEN VICTORIA SPONGE CAKE
    QUEEN VICTORIA SPONGE CAKE
    Makes 10 portions                                       Recipe
WHAT BETTER WAY         INGREDIENTS                METHOD
TO CELEBRATE THE                                   1.   Cream 200g butter & caster sugar

                                                   6.   Finish with a dusting of icing sugar &
