The Nambucca River District Agricultural Association Limited is governed by a board of 12 directors. Membership of the company which requires a nomination signed by two ordinary shareholders entitles a member to full voting rights, the right to stand for directorship as well as free entry to the ground on each day of the annual show. IMPORTANT NOTICE TO ALL EXHIBITORS Any exhibitor intending to bring electrical equipment to the Showground will be required to ensure that such equipment is fitted with earth leakage circuit breakers and that all electrical leads, tools and appliances have been inspected and tagged by a licensed electrical contractor. This is essential for the safety of yourself, your fellow exhibitor and the general public and is a requirement of WH&S Act. Any exhibitors who DO NOT comply will not be allowed to exhibit at the Showground.

THE AGRICULTURAL SOCIETIES COUNCIL OF NSW RICH FRUIT CAKE COMPETITION The following recipe is compulsory for all entrants. “Rich Fruit Cake” Here’s What You Need: Here’s What To Do: 250g (8oz) sultanas • Mix together all the fruits and nuts and 250g (8oz) chopped raisins sprinkle with the sherry or brandy. 250g (8oz) currants Cover and leave for at least 1 hour, but 125g (4oz) chopped mixed peel preferably overnight. 90g (3oz) chopped red glace cherries • Sift together the flours and spices. 90g (3oz) chopped blanched almonds Cream together the butter and sugar 1/3 cup sherry or brandy with the essences. 250g (8oz) plain flour • Add the eggs one at a time, beating 60g (2oz) self-raising flour well after each addition, then ¼ teaspoon grated nutmeg alternately add the fruit and flour ½ teaspoon ground ginger mixtures. Mix thoroughly. The mixture ½ teaspoon ground cloves should be stiff enough to support a 250g (8oz) butter wooden spoon. 250g (8oz) soft brown sugar • Place the mixture into a prepared tin no ½ teaspoon lemon essence OR larger than 20cm (8”) and bake in a Finely grated lemon rind slow oven for approximately 3 ½ - 4 ½ teaspoon almond essence hours. All ow the cake to cool in the tin. ½ teaspoon vanilla essence • NOTE: To ensure uniformity and 4 large eggs depending upon the size it is suggested the raisins be snipped into 2 or 3 pieces, cherries into 4-6 pieces and almonds crosswise into 3-4 pieces. Winners at country show will each receive a cash prize of $20 and will be required to bake a second “Rich Fruit Cake” in order to compete in a Group Final to be conducted by each of the fourteen Groups of the Agricultural Societies Council of NSW. The fourteen winners at Group level will each receive a cash prize of $30, and are required to bake a third “Rich Fruit Cake” for the Final judging at the Royal Easter Show, where the winner will receive a cash prize of $100. Feature Cake 2020 - ANZAC DAY CAKE (recipe supplied must be used) st Sponsored by The Ettelson Family 1 Prize: $50 ANZAC DAY CAKE Recipe from ABC Radio 125g butter HONEY ICING 2/3 cup golden syrup 1 ½ cups icing sugar mixture 6 eggs 60g butter, melted 1 cup self raising flour 1 teaspoon honey 1 1/3 cups rolled oats 1 teaspoon vanilla essence 1 2/3 cups coconut 1 tablespoon hot water (approx) 60g brown sugar TO MAKE THE CAKE Melt butter and golden syrup. Remove from the heat and set aside to cool. Grease a round cake tin and line base with paper. In a large bowl mix together the self raising flour, rolled oats, coconut and brown sugar. Beat the eggs into the cooled butter/golden syrup mixture then add this to the dry ingredients and mix together well. Pour into the cake tin and bake in an oven at 170 degrees Celsius for 25 minutes or until cooked. Ice with Honey Icing. TO MAKE THE HONEY ICING In a small bowl, combine icing sugar mixture, butter, honey, vanilla essence, and enough hot water to make thick, spreadable icing. Spread icing over cooled cake. Page 13
