Having spent many years in corporate environments, where the only Indian food available was a carbohydrate heavy curry after work drinks, they simply had enough. They thought, “how do we make high-quality Indian food, represented by a high-quality brand, available in an approachable mass-market format on the high street, in the airport, or in the shopping mall?” – enter Zabardast. The name, literally meaning ‘awesome’ in Hindi or Urdu, reflected the fact that they had found something as eyebrow-raising as it was mouth-watering. The London market now enjoys grilled Indian fillings such as Chicken Tikka, Seekh Kebab or Paneer, wrapped in homemade Rotis and Parathas, garnished with chutneys and salads, and served with a smile within 3 minutes of an order being taken. In 2013, they successfully secured their first A1 unit in the Waterloo area of London. Working on a hub- and-spoke model that allowed for there to be a central kitchen, with fresh food delivered to the various retail units, they successfully rolled out their idea into the marketplace, whilst the philosophy behind their brand ensured that heads were turned at every new location. 14 15
