No Bake Pumpkin Spice Cookies We do our best to ensure cooking is not required in our recipes, however, this recipe is a bit different. Although it does not require baking, it does require heating on the stove or in the microwave until a portion of the ingredients has come to a boil. Because of this, some assistance may be required. Ingredients- Serves 10-12 2 cups old Fashioned oats ½ cup all-natural peanut butter ½ cup of sugar free chocolate chips (sweetened w/Stevia) (This ingredient is optional) ¼ cup of canned pumpkin (not pie filling) 1/3 cup Truvia or Stevia (This substitutes for appx. 1 cup of regular sugar) ¼ cup organic milk 1 ½ TBSP grass fed butter ¼ tsp vanilla 1 teaspoon pumpkin pie spice ¼ tsp kosher salt
Instructions: 1. Line a cookie sheet with either wax or parchment paper, whichever you prefer. 2. Mix oats, all-natural peanut butter, canned pumpkin and chocolate chips and set aside. 3. Next, heat to a boil, the ‘Truvia’/’Stevia’, milk, and butter (Use a saucepan if heating on the stove. If microwaving to heat, use a microwave safe bowl.) 4. Using an oven mitt, remove the mixture and stir in vanilla, pumpkin spice and salt. 5. Pour immediately over oatmeal/peanut butter/pumpkin mixture. 6. Drop onto prepared cookie sheet,, in heaping tablespoon, allow to cool completely. ENJOY! RESEARCH & DISCUSSION SHEET How Practicing Sequence Can Help Seniors Maintain Independence We frequently engage in exercises designed to strengthen our ‘sequencing skills’. So, what exactly does ‘sequencing’ encompass? When we shake it all out, there’s a ‘sequence’ to almost everything we do. When we read, we are reading a sequence of letters, when we write or speak, we are using words in a specific sequence in order to communicate a message. We follow a sequence when we brush our teeth or wash our face. Let’s consider the importance of ‘following a sequence’ when making a sandwich. First, we open the fridge, then we pull out some nitrate free chicken, some lettuce, tomato, and mustard. After setting each item on the counter, we then grab a plate, and place it on the counter. Next, we reach for the bread, pull it out of the bag, and set it on the plate. Then we proceed to put the sandwich together, in a specific order, (or sequence), before putting the items back in the fridge, where they belong. Most of us never stop to think about the millions of neurons that are firing when we’re making a sandwich, or which area of the brain is required to do this. (Let’s not forget all the choices our brain is making during this process as well. What items do I want on my sandwich? Do I need a plate or a bowl? What should I use to apply mustard, etc.) It’s important to recognize the amount of work each task we do throughout every day, requires of our brain. Doing so will help us stay motivated to make choices that are beneficial to our brain. A quick recap of those choices: Keeping the brain stimulated and challenged every day Exercise Eat brain healthy food Get a good night’s sleep Keep a positive attitude Spend time each day in prayer/meditation Maintain healthy relationships It’s important to remember the following when practicing sequence: Be patient with yourself…take time to stop and think if you aren’t sure what comes next. Whether you are completing a sequencing exercise in your workbook or you’re at home making a sandwich, it’s always okay to stop, take a deep breath and allow your brain some time to retrieve the information. It’s also okay to ask for help, or maybe just a ‘hint’ (a visual or verbal cue). With the right trigger, your brain may retrieve the information on its own. (This is very similar to how a computer retrieves information.)
