Need and background of OatHow The importance of oats is increasing globally due to climate change and public health concerns Finland and Finnish oats have a great potential to be in a leading position globally, contributing to sustainable food production Finnish oat and food industry has strongly raised the acute need to increase understanding of oat cultivars and oat crop batches regarding processability and end product quality • Especially when aiming at export of food ingredients and products, uniform quality is highly important As a result of intensive promotion of need for oat research, OatHow as an individual project was funded by Business Finland in November 2018 12/12/2018 VTT – beyond the obvious 2
OatHow in brief Project type: A public 2-year co-innovation project funded by Business Finland (BF), research partners (and to small extent participating industry) Duration: From Jan 2019 to Dec 2020 Partners 1. Research: VTT (coordinator, Emilia Nordlund et al.), Luke (Veli Hietaniemi et al.), HY (Tuula Sontag-Strohm et al.), UTU (Kaisa Linderborg et al.) 2. Industry (in total 12 companies): Avena, Boreal, Fazer, Helsingin Mylly, Kinnusen Mylly, Lantmännen Agro, Myllyn Paras, Polar Glucan, Raisio, Vaasan, Valio, Viking Malt Budget: Total budget 2.0 M€ (of which 60% i.e. 1.2M€ from BF) Four parallel company projects starting simultaneously with OatHow (Boreal, Fazer, Helsingin Mylly, Valio) 12/12/2018 VTT – beyond the obvious 3
Aims of OatHow project The main aim of OatHow is To develop quality indicators for oats to facilitate • purchasing of oat batches and • selection of oats for various food processes In addition, OatHow aims to result in • New insights on oats applicability • Knowledge for breeding of new oat cultivars The vision of OatHow is that in the future Finland is globally acknowledged for deep understanding on oat characteristics and their applicability in food 12/12/2018 VTT – beyond the obvious 4

Expected impact Increased export of Finnish oat products and oat-related technologies Innovations on new sophisticated and/or practical high-throughput technologies related to indicator and data analysis methods support Finland as a high-tech exporter of oat products Finnish oats’ image will benefit from the valuable understanding of the characteristics of oat cultivars and their link to the end-product quality Increased degree of oats in the daily diet would have positive impact on public health Possibility to respond to the changing needs of current and future consumers by well-known raw materials and ingredients as well as by optimally adjusted processes for ingredient production Both economic and environmental sustainability by reduced waste production 12/12/2018 VTT – beyond the obvious 8
OatHow-projekti viljelijän näkökulmasta Miten OatHow-projekti tukee vilja-alan arvoketjun rakentumista? • OatHow-projekti hyödyttää koko kaurasta elintarvikkeeksi –ketjua, vaikka painotus onkin kauramateriaalin teknologisissa ominaisuuksissa. • Kun kauran laadulle saadaan määritettyä sopivat mittarit, mahdollistuu esim. laatupohjaisten viljelysopimusten tekeminen sekä eri käyttötarkoituksiin soveltuvien kauraerien tunnistaminen jo esim. kokonaisista jyvistä ennen prosessointia. Mikä on viljelijöiden rooli OatHow-projektissa? • Viljelijöillä ei ole aktiivista roolia OatHow:ssa, mutta viljelijöille tullaan tiedottamaan projektin edistymisestä ja tuloksista. Mitä tuleva jalostustoiminta odottaa viljelijöiltä, lajikekehitykseltä ja tuotantotavoilta? • OatHow ei sisällä varsinaista jalostustoimintaa, vaan ennemminkin tuottaa tietoa, jota voidaan hyödyntää kauranjalostuksessa. OatHow-projektin tuottama tieto kauramateriaalin laatutarpeista luo hyvän pohjan esim. kauran viljelyn suuntaamiselle siten, että tuotettaisiin sopivanlaatuista kauraa erilaisiin elintarvikeprosesseihin. 12/12/2018 VTT – beyond the obvious 9
