The rush back to “normal” will require some re- imagination, resilience and new ways of doing things. Wearing A Mask Individually and as a nation, we have all bared witness or been personally affected by the terrible loss of life. Wearing a mask may become ingrained in a generation of people scarred by this pandemic. The usefulness of masks for preventing the spread of other illnesses as well, will be under- stood. New Normal: A cultural shift increases the normalcy of face coverings. Watching Your Distance. We all want to hug and celebrate this momentous discovery, however we will still need to maintain physical distance. That means we all must maintain 6 feet distance when out in pub- lic. Please take note: getting the vaccine does not prevent the spread of COVID- 19. Keep Calm and Carry On. It’s going to take time for social customs and practices to regain some ver- sion of pre-pandemic, days of yore. Officials predict Autumn as a goal (a flexible date) which requires 75%-80% of the population being vaccinated. As the saying goes, “Time, takes time.” New Normal: Redefining traditions and helping each other as a commu- nity to adjust to life as it moves towards a new future.

March is Nutri- Soup, glorious soup. tion Month, and a warm bowl full of soup is both nutritious and healthy, This easy recipe, simple ingredients and basic technique, could not be easier to customize This recipe will make 4 scrumptious servings full of essential vita- mins. This soup freezes beautifully or will be good in the fridge up to 4 days. Enjoy. Base Flavors; 2 Cups 1. This is a hearty soup and takes up to 2 cups of base veggies, so add what you Sautee like! In a soup pot, heat oil and cook on medium heat: onion, celery, carrots; these are the building blocks of flavor. Add veggies: up to 2 cups of sweet po- tato, green beans, cauliflower, butternut squash. Go crazy. Toss to coat with oil and cook 5 mins. Aromatics & Spices; 4 Teaspoons 2. Add Up to 6 cloves garlic, salt, pepper and spices up to 4 tsp. total. Spice it up with: turmeric; cumin; thyme; bay leaf, sage; cayenne, cinnamon, curry powder, red pepper flake. Allow spices to bloom; 5 mins. Liquid; 4 Cups 3. Simmer Add one, 28 0zs. can of tomatoes and liquid plus 4 cups stock. Bring up to a simmer and cook for 25 minutes. Greens and Plant Proteins; 4 Cups 4. Mix Add up to 4 cups of kale, spinach, collard greens, chard and wilt for 5 In minutes. Add up to 1 cup of cooked grain (buckwheat, pearled barley, qui- noa). Add 1 cup beans: garbanzo, navy, kidney. Simmer gently 5 more minutes. Adjust spice to taste and serve. Soup Notes: 1.
