Oh my it’s May Village grapevine This year seems to be flying by but it’s great to hear that so many villagers have had their COVID jabs and that lockdown is now easing. A variety of dips Ewan Lawson (age 12), a former Leighton School, and current Welshpool High School pupil has shared these wonderful artworks with us, including this fantastic picture of The Poultry House. What a talent! This recipe would be nice for a social occasion with family and friends outside, following the Government guidelines of course! I would suggest you divide the dips into small individual ramekin dishes for each guest once they are made up (no double dipping!). I like to serve the dips with Tortilla chips (I can recommend Aldis), small bread sticks, pitta bread, raw carrots, celery and raw peppers all cut into sticks. This recipe is so quick and easy to put together and serves 4–6. The dips do taste nicer made a few hours before serving to let the flavours marinate. You can make these three lovely dips in less than 10 min, once you have the base for the dips you can experiment with various flavours but below are three that I do that go down well. For the base to the dips ● 340g of thick set natural Greek Yogurt (I always use 2 pots of FAGE Total from Tesco) ● 300g of mayonnaise (I prefer Hellman’s) ● Mix together and then divide into 3 separate bowls ready to make up your 3 separate dips. An exhibition of lockdown memories We don’t know when and we don’t know where yet but as soon as we are able to safely do so, we will! Lockdown meant many different things to each of us. Some of us got fit — some of us ate too much. Some of us were busy — some of us relaxed. Some of us read — some of us wrote. Whatever it meant to you, we want you to show us in the exhibition which might be in the Village Hall, the Church or both. It could be a photo, a picture, a cake, a poem, an item of clothing, a plant, a chair, a football — anything that sums up this time to you. This is a photo of Icarus landing in the pond at Leighton Hall taken in the early 1900s when the Naylor family (who built Rachel Tibbott and Catherine Williams the hall in the 1850s along with much of the village), lived there.
