8 GERRI’S RECIPES January - February 2019 RITZ Mock Apple Pie 2 cups water Cornaroni 2/3 cups sugar 2 tsp. cream of tartar 35 RITZ crackers 1 1/2 cups cooked macaroni 1 ready to use refrigerated pie crust 1 stick butter or margarine, sliced 1 1/2 Tbsp. lemon juice Topping: 1 cup Velveeta cheese, cubed 1 cup crushed RITZ crackers 1 can cream-style corn 2/3 cup brown sugar 1 can whole-kernel corn with liquid 1/2 tsp. ground cinnamon 1/3 cup unsalted butter, melted Mix all ingredients and place in a Preheat oven to 400 degrees. *casserole dish. Slow Cooker Three-Bean Lemon Herb Broccoli Casserole Turkey Chili 1 lb. ground turkey 1 small onion, chopped 1 can Condensed cream of chicken soup 1 can (28 oz.) diced tomatoes, undrained 1/2 cup milk 1 can (15 oz.) chick-peas (garbanzo 1 Tbsp lemon juice beans) rinsed and drained 1 bag (16 oz.) frozen broccoli cuts, thawed 1 can (8 oz.) tomato sauce 1 can (2.8 oz.) French fried onions 1 can (4 oz.) chopped mild green chilies 1 to 2 Tbsp. chili powder Stir the soup, milk, lemon juice, broccoli and 2/3 cup onions in a 1 1/2 qt. casserole and Cook turkey and onion in a medium cover. skillet over med-high heat, stirring to break up meat until turkey is no longer Bake at 350 degrees for 25 minutes or un- pink. It is considered even harder to do than a hole-in-one. Congratulations, Betty. All of Don’s coaching must be paying off. Ed Kearney tied the record low with a score of 18. He also had 2 Eagles this session. Not to be outdone by her husband, Ellie Kearney had 3 Eagles! Maria Silva and Don Ensero each had one Eagle apiece. Don states that there is a need for two additional players for the next session of golf which starts on Janua- ry 17, 2019. Play begins at 1:00pm. He does a tremendous job run- ning the league and keeping track of all the scores for us. Thank you Don for all the time and effort you put into the program.
