Welcome Note Welcome to International Chefs Day, 20 October 2020. International Chefs Day offers you a unique opportunity to make a difference in your local community by making healthy eating fun and exciting for kids. The World Association of Chefs Societies has committed to using International Chefs Day to educate kids around the world about the importance of healthy eating. In doing so, they hope to expose kids to the culinary profession and teach them good eating habits that they can carry with them for life. Nestlé Professional is proud to offer the expertise of the Nestlé for Healthier Kids programme and partner with chefs’ associations around the world to make this possible.
Getting Started As always, we are encouraging sustainability and safety both in and out of the kitchen. With this in mind, we created a toolkit that’s practical in 2020. We hope that you can use this PowerPoint as you see fit, to have fun with your groups of budding young chefs and grow their passion for food. You may be running your workshops virtually or in small groups at a venue; the choice is yours. The idea is to excite our next generation of young home cooks with some engaging games, facts and trivia about this year’s awesome star vegetables. Work through the quizzes and activities, learn about the vegetables and their nutritional facts in small groups, or try setting up a video call for the aspiring chefs. Why not make a WhatsApp group keep in touch! We have recipe ideas that feature our star veggies, the usual downloadable assets and tips on taking photographs. There are printable placemats and certificates for all those that take part. Enjoy planning your event and don’t hesitate to ask us any questions you may have on the Nestlé Professional LinkedIn and Facebook pages. And most importantly, have a blast cooking delicious meals!
International Chefs Day 2020 As the saying goes: “You are what you eat”, but what we eat not only affects us, it also has massive consequences for our planet. In order to ensure a healthy planet for future generations, it is vital that we start learning about the impact the production, and consumption, of food actually has on the environment. It is for this reason that International Chefs Day this year is focused around sustainability and the environment. We want to use this opportunity to teach kids about healthy eating and about food and the environment.
The Problem Our planet’s climate is changing which has an affect on all aspects of our lives. Climate change has resulted in warmer temperatures which has a huge impact on our environment. This affects us, our food sources and the wild life. It also affects our health as well as the health of the planet.
The Solution But it isn’t all doom and gloom. By eating more sustainable foods we can help the planet recover. Sustainable foods are often times more economically or energy efficient. By eating more delicious food that is healthy for us and our planet, we can do our part to save our future, as individuals and as communities.
Healthy Food List The following foods have been identified by the Nestle for Healthier kids program as important for both healthy eating for kids as well as for the planet. FUN FACTS Carrots There are over 100 species of edible carrots today. Carrots are an excellent source of vitamin A because they are loaded with beta-carotene, a natural chemical that the body changes into vitamin A. 2000 carrot seeds can fit in one teaspoon . Eating massive amounts of carrots can sometimes cause a person's skin to turn yellowish orange. FUN FACTS Flax seed Flax seed and oil extracts are used in treatment of respiratory disorders such as flu, common cold, fever and rheumatism. Flax has strong taproot that can grow to the depth of 3 to 4 feet. Omega-3 fatty acids are essential. They have benefits for various aspects of heart health such as blood pressure. Flax seeds have become popular due to their high content of omega-3 fatty acids, fiber, and other plant compounds, which are responsible for many of the seeds’ benefits. Click to play

FUN FACTS Kale One cup of chopped raw kale provides more than 100% of the recommended daily amount of vitamins A and K. Vitamin K is a key vitamin involved in healthy blood clotting and bone health while vitamin A is essential for the health of our vision, bones, skin and teeth Kale has more Vitamin C per gram than oranges. FUN FACTS Mushrooms There are over 30 species of mushrooms that are bioluminescent. That means that they give off their own light and glow in the dark! This bioluminescent light is also known as foxfire. Mushrooms are rich in fiber, protein, antioxidants and vitamin B and D. Vitamin D is very important to keep your bones healthy and strong. Mushrooms lose water to the atmosphere very easily as they have no skin! That’s why they grow in humid conditions with lots of water vapor in the air. FUN FACTS Quinoa Quinoa is the seed of a plant known scientifically as Chenopodium quinoa. Quinoa is a good source of antioxidants and minerals, providing more magnesium, iron, fiber, and zinc than many common grains. It contains a lot of vitamins and minerals, important for the overall function of the body. Bitter quinoa varieties are richer in antioxidants than sweeter types, but both are good sources of antioxidants and minerals. Quinoa has four times the amount of iron per serving than brown rice. Quinoa can grow in very high-altitude areas like Bolivia or at sea level like in Chile. FUN FACTS Seaweed Edible seaweed is classified by color. The most commonly eaten types are red, green, blue-green and brown. Seaweed contains essential fatty acids like Omega-3 . It contains a good amount of fiber and health-promoting plant compounds. Seaweed contains a wide range of antioxidants, such as vitamins A, C and E, carotenoids and flavonoids. These antioxidants protect your body from cell damage. Sprinkling some dried seaweed on your food not only adds taste, texture and flavour to your meal, but it’s an easy way to boost your intake of vitamins and minerals. FUN FACTS Soybeans Soy contains a high amount of Protein, which the body uses to build and maintain bones, muscles and skin. Soy is a rich source of various vitamins, minerals, and beneficial plant compounds, such as isoflavones. Soybeans have been called "meat without bones" because, it they are packed with protein, very similar to the protein in meat, dairy products and eggs. The soybean plant is one of the few plants that provides nearly all the essential amino acids, that make up proteins. Soybeans create a healthy environment for good bacteria to flourish in the digestive tract. FUN FACTS Spinach Spinach is a leafy green vegetable that originated in Persia and is related to beets and quinoa. Spinach has been shown to benefit health in several ways. It is an important source of vitamin A, C and K. Spinach may decrease oxidative stress, improve eye health, and help prevent heart disease and cancer. There is more potassium in spinach than there is in bananas. Potassium helps with digestion and muscular functions. In the medieval days, artists used to extract green pigment from spinach to use as ink or paint. Spinach is a quick-maturing plant that can be cultivated all year round.
