WHAT’S NEW IN SOUTH AMERICA Machu Picchu Trains Schedules Update Please note that during the rainy season (January to March), the trains to/from Machu Picchu will be modifying their schedules and will only be operating the Sacred Valley route. They will neither depart nor arrive at the Poroy station in Cusco. Additionally, Peru Rail has announced that the Hiram Bingham luxury train service will not be operating during the first quarter of 2021. OUR TEAM IN SOUTH AMERICA Are you planning your visit to Ecuador already? As you know, it has been a few months since Ecuador reopened for travel, and since then we have been happy to welcome guests for the holidays, family trips and more. We especially wanted to mention a guest who visited us in early January, Mrs. Freda Anderson, from Travel Experts. She is also one of the first certified South America Experts from our A&K University webinars, and now had the opportunity to enjoy some time exploring the worlds of Ecuador. We were very happy to welcome and meet her, as it was a great opportunity to more closely interact with our partners, and tell them first hand and with detail about what we do, and how we do it. It was an opportunity for our team members to see each other after a few months working from their homes. As part of the program, they enjoyed traditional Ecuadorian food for lunch, and planned a schedule to gradually come back and start working again from the office. Jeep Tour to the water falls in the Atlantic Forest and Cachaça Tasting. 4.Cooking demonstration with a local chef. 5.Kayaking at Paraty Bay. What is Your Favorite Restaurant in Town: Fazenda Bananal: located a few kilometers from the city, at an organic farm. For lovers of good food, the Farm’s restaurant offers quality cuisine made with produce grown at their agroecological production systems. The charming ambience enables the connection with both nature and the local culture. What to Bring on Your Trip: For the day, light and comfortable clothing, light T-shirts, bathing suits, sandals, hat, sunscreen and insect repellent. When visiting within June-August bring a fleece or light coat as it might get a bit chilly. My Local Advice: My advice is for the ladies: avoid high heels, as all the streets are cobblestoned. I always recommend comfortable footwear such as sandals or sneakers.
FLAVORS OF SOUTH AMERICA Choripán Quick, casual and delicious, a choripán is always an excellent way to enjoy a bit (and a bite) of Argentina, whether you are here or in your kitchen. For this, we thought we would share with you this simple recipe that will make you look like a BBQ master, while your friends and family enjoy tasty food and a pleasant talk, the Argentine way! What you will need for the choripán • Fresh chorizo sausages, Argentine, if possible • 6-inch hero rolls, split lengthwise, connected on one side like a hinge Directions 1. Preheat a grill pan over medium-high heat or a grill to medium heat. Add the chorizo and let cook, turning occasionally with tongs as needed, until the sides are deeply seared and the center is fully cooked through, 30–35 minutes. 2. Warm the insides of the rolls over the grill as desired. You can also split the sausages lengthwise, if desired. 3. Place one cooked sausage into each roll. Slather one side of the roll and some of the sausage generously with chimichurri, and serve immediately. 4. You may also add ketchup, mayonnaise or mustard to your choripán. Making the chimichurri What you will need Directions • ¼ cup finely chopped fresh Italian parsley leaves In a medium jar or bowl, add the parsley, onion, and • ¼ cup minced white onion garlic and stir briefly to combine. Add the olive oil, • 1 small garlic clove, grated on a microplane vinegar, salt, and pepper, and stir well. Let rest at least • ¼ cup plus 3 Tbsp. extra-virgin olive oil 15 minutes. • 3 Tbsp. red wine vinegar • ½ tsp. salt • ¼ tsp. freshly ground black pepper A couple of weeks ago we were happy to organize a private jet experience in Brazil. Part of it was a stay at a private island, which we decorated and fully personalized as for our guests’ wishes, likes and interests.
