FRATELLI ROSSI The Fratelli Rossi family produces and markets Parmigiano Reggiano and Grana Padano cheeses carrying on the tradition of three generations of master cheese- makers since 1907. Parmigiano Reggiano Parmigiano Reggiano cheese has a very long tradition. Historical documents show that 800 years ago Parmigiano was already very similar to that produced today. For one kilogram of cheese, about 16 litres of raw cow’s milk is required. After 12 months of ripening, each and every cheese is inspected by the Consorzio Parmigiano-Reggiano and must meet high quality standards. It is unanimously considered to be The King of Cheese. AURICCHIO In the year 1977, at San Giuseppe Vesuviano (Naples), the Auricchio company was born. Its founder was Gennaro Auricchio, the creator of the special rennet which endows Auricchio provolone with that flavour which is unique in the whole world, Mr Gennaro Auricchio’s firm rapidly made a name for itself: already at the end of ‘800 it crossed the Ocean and landed in the USA, in Italian shops. MAURI The authenticity of the Mauri cheese is guaranteed not only by the quality of milk in Lombardy, but also by the special ripening that benefits from another gift of the territory: the Lanche, the natural caves of Valsassina. In 1920, Emilio Mauri sensed that it could establish a modern company following the long tradition of cheese, which was ripened cheeses in Lanche where products got a unique and inimitable taste. Buffalo mozzarella is made from the milk of Italian Mediterranean buffalo. It is a dairy product traditionally manufactured in Campania, especially in the provinces of Caserta and Salerno. The term mozzarella derives from the procedure called “mozzare” which means “cutting by hand”, separating from the curd, and serving in individual pieces that is the process of separation of the curd into small balls.
