The People Have Posted.
If you want to see yourself as you really are, they say, let a
stranger show you. We did. And here it is.
For the past few years, we’ve been trying to convey the
pull of this no-longer-hidden treasure called Headwaters, a
billowing horse blanket of hills, lakes, rambling farms and
storybook villages, to people hungry for the undiscovered
and unspoiled. And boy, have you responded. Not just with
your feet, but with your tweets, likes, loves, snaps, grams,
tags, and words. Posting poets, you are.
We’re so impressed that this year, you’re the Guide. And
we’ve mapped out the itinerary the same way you seem to
love doing it: town by town, region by region, hill by hill.
Because Headwaters is the perfect size for a day-or-two-trip,
where you can collect as many Welcome To signs as you’ve
got room for in your head and your hard drive. Although the
drive up here is anything but hard.
So here we go. Let’s share the driving. Let’s go where we both
want. Let’s collect towns and tastes, fill the trunk and empty
our cares, and trade notes at the end of where we end up. We
think it might be someplace called real.

CALEDON
of Brampton sits a town so spoiled by nature it doesn’t

Caledon is a greatest hits of natural must-dos: inhale the widescreen views
of Glen Haffy, hike the hardy Niagara Escarpment in Terra Cotta, escape
to the soothing gurgle of the Credit River at Forks of the Credit — not
to mention the Bruce Trail, Canada’s longest footpath, strollable villages,

Despite the craft beer craze, hops aren’t
new to Ontario?
Hops were a very prolific crop here. If you drive through
old tobacco country you’ll still see some remnants of old
oast* houses. But between prohibition and disease the
industry got driven out west, where it’s more arid.
Why did you choose hops?
We didn’t want to do the big three, canola, corn, soy.
My partner Phil and I are both avid craft beer drinkers.
So we planted our first stock in the spring of 2011. It
takes three years to get your full yield.

They grow on very high trellises, made with aircraft
cable. You get these long, lush alleyways with big

foliage, and once they start growing they don’t stop.
If you mark a pole where the tip is, then walk back a
couple of hours later, you can physically see how fast

It’s a long road from France to Shelburne.
There’s a woman involved, of course. I started my
apprenticehip at 15, at a renowned restaurant in France.
Then France, England, France, then opening the Ritz
Carlton in the Cayman Islands in 2005, where I met
my wife. Three years in Florida, two more at another
Ritz Carlton in Virginia, then my wife’s mother passed
and she wanted to come back home, so we settled in
Orangeville, where she’s from.

Ha! When I went to Scotland (to study) there was an
old blast furnace and casting setup that had been
mothballed for years, and I was able to get it going
and it caught on like wildfire. And four years ago when
I went down to Jamaica to do music shows — I build
reggae sound systems as well…

The idea for STREAMS began how?
I used to host a monthly talent show at a local church,
and a lot of young people who came to that show went
off to do some very cool things. I felt I might have a
knack for bringing the best out of young people, and I
had a vision for creating a place and a space for young
people to create.
When we moved to Shelburne, I deliberately looked
through the eyes of a young person seeking something
to do — multimedia, graphic arts, dramatic arts — those
outlets. And I quickly realized that there wasn’t.

What’s the STREAMS vision?
A creative arts hub, an incubator for young talent, a
REAL MUSIC,
place to help youth develop or even birth creativity, for
free or at a really nominal cost.
Creativity shouldn’t be only for people who can afford it,
