THE LAB BRANDING the lab BRAND IDENTITY The Lab is a new photography studio located in Vaughan, Ontario. The brand identity is inspired by urban/streetwear brands. The idea of using a simple text, in order to make a sleek look. Minor adjustments, such as tilting the text on an angle, and adding rounded corners to the squares create this “cool but not trying to be cool” look, while being approachable at the same time. With carefully selecting only black/white for the colour palette, this combination of old and new is created; combining traditional, with a current urban feel. THE GOOD STUFF E D I TO R I A L Pakora Thai Coconut Soup Serves 12 | 30 mins Serves 3 | 30 mins Preheat oven to 425°F. 1 can (15oz) green peas Heat coconut oil on medium in a large pot. Add 1 can (398 ml) coconut milk minced garlic. Shred carrot, and add to pot. 1 carrot 2 cups vegetable broth Drain and rinse the green peas, place in a medium sized bowl. Peel and chop the potatoes into bite 2 white potatoes In a separate pot, add water to boil. Cook rice 200g rice noodles sized pieces, roughly chop the onion, peel and shred noodles fully through. Drain, and set aside. the carrot, and add all to the peas. 1 white onion 1 carrot, shredded 1/2 cup chickpea flour Add curry paste and lime juice to large pot. Pour in 2 cloves of garlic, minced In a separate bowl, whisk together tumeric, curry, the can of coconut milk, and vegetable broth. Stir cumin, garlic, onion powder, baking soda, and 2 tsp tumeric thoroughly. Add tumeric, ginger, onion powder, and 1 tbsp coconut oil chickpea flour. Add cilantro, and 1/4 cup of water, 2 tsp curry salt. Bring to a bowl, and simmer for 10 minutes. 1 tbsp lime juice whisk until a liquid paste is made. Remove from heat. 1 tsp cumin 1 1/2 tbsp curry paste Add the chickpea paste to the vegetables, and hand 1 tsp cilantro paste Place soup in a bowl, add cooked rice noodles. Top 1 tsp tumeric mix together until thoroughly combined. with Thai basil for garnish. Repeat again with the other 5 wraps. Serve chilled. Dip with Spicy Peanut Dip (page 74) or Sweet Chile Sauce (page 77) 1 cup | 5 mins Mains 45 2 cups fresh cilantro 1 cup vegan mayo 1 cup fresh mint 2 tbsp cumin In a food processor add all ingredients plus 1/4 cup Use a small bowl, and combine all ingredients. 2 garlic cloves water. Once combined, serve chilled. Refrigerate until use. 2 tsp garlic powder Serves 1 | 5 mins 2 tbsp lime juice Use for dipping Pakoras (page 21) Great on burgers, or to dip fries with 3 tbsp lime juice 2 tbsp tahini In a small bowl or cup, mix all ingredients together. 6 tbsp chia seeds 3/4 cup plant based milk Refrigerate for 4 hours minimum or overnight. Serve chilled. 1 tsp vanilla extract Creamy Herby Dressing The Gravy 1 tbsp sweetener 1/2 cup Frozen fruit 3 tbsp coconut shreds 1/4 cup seed or nut butter 1 cup | 5 mins 2 cups | 7 mins 2 cups vegetable broth 2 tbsp lemon juice 3 tbsp nutritional yeast In a food processor combine butter, lemon juice, In a medium saucepan combine all ingredients, and 1/4 cup dry white wine wine.
