ISSUE 8: AUGUST 2021 VOLUME 2 Pillars Press August: In This Issue Message From Activities Team Pillars Peace Project - India Dear Pillars Community, August Birthdays If you are new to our community, welcome to your new home. We are glad you are here and Welcome Sam excited to get to know you! Starting this month, coffee will be available daily Prospect Park Neighborhood in the 1st floor Cafe starting at 9am. Treats will be provided at Tuesday and Saturday coffee socials. Rain Gardens at The Pillars At 2pm every day, the coffee will be refreshed and water and snacks will be provided until 4pm. Metro Transit We will be offering a monthly Resident Council Nutrient Needs in Older Adults for those who are interested. If you'd like to be a part of our first meeting and planning future Gardens at The Pillars sessions, please join us on Monday, August 23rd at 4pm. Southeast Seniors We want to thank Talia for all her hard work in OLLI at The UMN the activities department this summer! She is off to Arizona to start her first year of college. Pillars Peace Project - india Please join us for a special meal to celebrate Alka and her home country of India. A little bit about Alka, who works as a Resident Assistant in the Nursing Department at The Pillars - I was born in a state called Bihar in India. I moved to the USA in 2015 after marriage. I already have a Bachelor of Arts degree from India. I am graduating with my second undergraduate degree with a Biology major this month from the University of Minnesota. I want to be a doctor (a cardiologist). The ultimate goal of my life is to help people and bring happiness into their life. I do have a couple of skills and hobbies which I enjoy during my days off - traveling, dancing, singing, Henna and cooking. I also know how to do eyebrows and give facials which I do for all of my family and friends! I enjoy spending time with my husband, friends and my puppy Bala. This is the national flag of India. The Flag is called “Tiranga”. Tiranga means three colors. The flag has three bands, the saffron color is the symbol of the strength and courage of the country, the white band is peace and truth and the green band indicates the fertility, growth and auspiciousness of the land. 02 PILLARS PRESS | ISSUE 8

Sarah Horsfield 8/14 Maria Michuta 8/15 Welcome Sam On August 2nd, I, Samantha (Sam) Paider, joined Ebenezer at The Pillars of Prospect Park as the Executive Director. My passion for serving older adults began as I saw my grandmother move through her dementia journey. I went on to obtain a bachelor’s degree in Health Care Administration from the University of Wisconsin-Eau Claire and currently hold several state licenses in Assisted Living and Nursing Home Administration. During the last five years, I have worked in leadership roles through a long-term care management company. Most recently, I served as an Administrator at a skilled nursing facility within a retirement community located in Chapel Hill, North Carolina. I had the opportunity to serve in the Executive Director capacity on an interim basis overseeing the independent living and the skilled nursing facility. In my free time, I enjoy hiking, playing volleyball, climbing, and spending time with friends and family. I was born and raised in the Midwest and am excited to be back. My family and friends are happy to have me closer to home! I am excited to bring this experience, passion, motivation, and dedication to The Pillars of Prospect Park. Meet Our Neighborhood The PoPP library has obtained multiple copies of two neighborhood history books that are going out of stock. Learn fascinating facts about our neighborhood through these two titles: Under the Witch's Hat: A Prospect Park East River Road Neighborhood History Tower Hill Park: A History Prospect Park Walking Maps - This historic neighborhood is served by charming but twisting streets. Maps to aid your walks are available at the front desk. Rain Gardens in Prospect Park You may have heard that a community rain garden will be installed at The Pillars. To learn more, please join Lydia from the Prospect Park Environment Committee for a brief overview of rain gardens, the process, and the back story. She will be here on Tuesday, 08/17 at 4pm to give us an overview and answer questions. This information session will take place outside, at The Pillars Rain Garden. The neighborhood group will prep the garden from Tue, 08/16 - Wed, 08/17. Our community is scheduled to plant the garden on Thursday starting around 10:30am. We need a couple more volunteers for the planting on Thursday so if you'd like to help us plant, please email Erin, thanks! Ride Metro Transit the easy way The front desk has a supply of application forms for Metro Transit Go-To cards, by far the easiest way to ride the light rail and buses. You can order a reduced fare card by including a photocopy of an ID, and can also add value to the card. Your fare will automatically be deducted from your account when you tap the card on the station platform reader. You can add value any time from your home computer. 04 PILLARS PRESS | ISSUE 8
Nutrient Needs in Older Adults As we age, likely you will notice certain subtle changes in your body including aches, pains, decreased sense of smell and perhaps even vision changes. Eating a healthy, rounded diet full of nutritious fruits and veggies can help protect us from some of these ailments. Carrots, peas and leafy greens are great foods to incorporate into the diet to improve immune function, skin elasticity, protein intake and maintain healthy eyesight. Did you know that carrots are chock full of an antioxidant known as beta-carotene that not only helps protect the body from certain diseases, but can also contribute to maintaining healthy skin and digestion? Of note, carrots also contain phytonutrients that can help reduce the risk of colon cancer! Eating peas can provide not only protein, but fiber to aid in motility of the GI tract. As we age, motility decreases which leads to decreased absorption of nutrients. Try split peas for the most “bang for your buck”—bringing you 16.3g fiber per cup! Eyesight generally diminishes as we age and unfortunately, some seniors can develop complications with their eyes that include macular degeneration and cataracts. Try including leafy green lettuce and spinach that contain lutein, an antioxidant that can lower the risk of eye disease. Meet your neighbor: Janet jacobs 1) Where are you from? I was born in Baltimore, MD but grew up in Binghamton, New York. Binghamton is located in upstate New York, near the Finger Lakes and home of the Spiedie sandwich. I moved to The Pillars from Roseville, Minnesota, where we lived for the last 42 years! 2) What do you consider one of your greatest accomplishments? I would have to say that my greatest accomplishment in life would be my 2 wonderful children Jeff and Julie and our 5 grandchildren. I'm also proud of my work as a speech pathologist for 44 years. My focus was mostly medical; I taught and gave presentations around the United States. I also co-founded/owned a private practice at a time when there were very few. I learned a lot of non- speech therapy skills and the practice is still going strong! 3) What are your favorite hobbies? I’m obsessed with crossword puzzles and need to finish them, so I do look up certain words! I enjoy watching sports - my favorites include our grandchildren's games and the MN Gophers. I'm a swimmer and do Pilates reformer at the Shoreview YMCA regularly. I love traveling and enjoy planning our many annual trips. 4) If you could travel anywhere in the world where would it be? There are 2 places that I'd love to travel to. The first would be to go back to Australia but include New Zealand this time. The other would be to go on a safari. 5) What is your favorite place you've traveled? One of my favorite places to travel has been Germany; I've been a few times and enjoy the food, people, history and scenery. I also enjoy Cabo and Arizona, such great places, especially during our winter! 6) If you could have dinner with 1 person who would it be?
