The Brewer is designed to provide a simple way to consistently craft Specialty Cold Brew Coffee to precise cup standards. The ACE Brewer simplifies the brewing process, and utilizes Active Cold Extraction with Pulse Brewing, crafting 5 gallons of tantalizing delicious Cold Brew Coffee in 2 hours or less. We are excited to offer this technology to the passionate people who work so hard to craft excellence into their coffee and look forward to sharing the journey with you as partners. While gravity creates the movement for Active Cold Extraction, the Ace Brewer provides the control with precise systems and recallable brew profiles. The Ace Brewer is Web Connected for brewing control across multiple locations. Delivering standardized specialty brewing across multiple locations has always been troublesome, until now. Each ACE Brewer interfaces with a centralized platform for brew profile distribution and brew reporting. Initial Set Up Brewer Set Up Step 1… Unbox and assemble unit on countertop. - Open Box and remove all items o Inventory and place them separately - Remove Brewer frame and place on countertop - Place the Base Wear Plate (3) on the Brewer Base (Bottom) - Place Catch Tank (13) on Base Wear Plate and place Catch Tank Lid (14) on top - Place Mid Wear Plate (4) on Mid Platform - Cylinder Base Assembly o With the Cylinder Base (7) on a countertop, place the Perforated Grate (8) in the Cylinder Base o Place the Filter (9) on top of grate o Insert Cylinder Seal (10) facing up around the outside of the Cylinder Base. o Slowly insert the Glass Cylinder (11) into the Cylinder Base ensuring the seal is fully in place. ▪ NOTE – If seal is not in place this might cause the Cylinder Base to leak. o Place Cylinder Lid (12) on top Step 2… Provide power to unit and connect water source (Rear of Brewer) o Connect 1/4 PE Water Line (Not Supplied) to Water Source via 1/4 connection (50 PSI Constant Water Pressure Required – During the Brew Cycle) o Connect Power Supply (Supplied) to Electrical Source via standard 110/240V wall outlet. Step 3… Connect to WiFi Main Screen on Front Panel 1. Using the ENCODER Knob (2) on LEFT of the front panel turn until SETTINGS is highlighted in Red and Push In to select 2. Connect to WiFi: o Locate WiFi Network using ENCODER Knob and Push in to select. 3. Using the ENCODER Knob scroll through and enter your password. Use SHIFT for UPPER CASE and non shift for lower case letters. Building a Brew Profile - Web Portal Step 1… Log into Portal o https://portal.brewbomb.com/ Step 2… Brew Profile o Under - Coffee o Brew Profile o + Insert New Step 3… Name Brew Profile o Insert the name of the brew profile Basic Settings a. Coffee Origin Name: o Select the Coffee Origin using the (V) o Note – Origins are set up in advance (Coffee – Coffee Origin) b. Coffee Weight (Kg) o Input weight required for brew profile o We recommend 1.6 Kg for first brew c. Concentrate Yield (gal) o The Ace Brewer crafts concentrated cold brew which is then diluted to a ready to drink (RTD) product. o The Yield Ratio is the ratio of coffee to yield with both variables being measure by weight. For fine grounds, use a ratio of 3 and for courser ground sizes, use a ratio of 4. o Click on the calculator and select the yield ratio o The field will be automatically populated when you select the ratio from the calculator 11 | P a g e www.brewbomb.com
d. Pre Infusion: o Mixing in water with the grounds prior to brewing enhances the extraction process resulting in greater yield and adaptability to fine grind brewing. o For fine ground brewing, use 800ml/kg and for courser grounds use 1300 ml/kg. o For fine grind brewing the grounds should only be slightly moist on the outside, for courser grounds the mix can be much wetter but NEVER A SLURRY. o If the grounds have standing water wait a few minutes for the water to absorb into the grounds. o Improper pre infusion can result in the brew clogging. e. Use the table below as a general guide for pairing yield ratio, grind size, expected concentration and pre infusion quantities. **Coffee is a natural product that varies greatly thus use these criteria as basic guidelines only** Advanced Settings Brewing to Concentrate-Diluting to Ready to Drink With cup quality being a top priority, the Ace Brewer is designed to brew a concentrated product which is then diluted to a final Ready to Drink concentration. The Ace Brewer closely parallels the concepts of brewing on an espresso machine and diluting to an Americano. The following generally holds true. o Fine grind = more concentrated = less volume = shorter time o Courser grind = less concentrated = more volume = longer time 12 | P a g e www.brewbomb.com
Advanced Settings a. Concentrate Total Dissolved Solids: o This refers to the expected TDS of the brew yield, which is a result of the ground size and yield ratio. o The number in this field is only a target for the brew and not a recipe variable. o The value in this field is used for the TDS dilution calculations although it can be overwritten with an actual measurement. o Brew concentrations in the 3-12 TDS range are well within the potential of what the ACE brewer can achieve. o For fine grind brews, at a 1 to 3 ratio, the expected TDS is 7.0 o For courser grind brews, at a 1 to 4 ratio, the expected TDS is 4.0 b. Ready to Drink Total Dissolved Solids: o This field refers to the concentration of the Ready to Drink product that will be crafted from this brew and is only used in the TDS dilution process at the end of the brew cycle. o The value can be anything less than the concentration value. c. Coffee Grinder Name and Setting: o Select the Coffee Grinder using the (V) o Note – Origins are set up in advance (Coffee – Coffee Grinder) o Setting - Define the setting that will be used on the grinding machine 13 | P a g e www.brewbomb.com
Brew Intervals Brew intervals are periods when the brewer is either spraying water (brewing) or not spraying water (resting). The theory behind interval brewing is to separate extraction time from contact time. This separation allows for dissolving desirable compounds during rest periods and extracting during brew periods. By example, some acidity, fruits, florals and sweetness are only extractable with cold water over time. Continuous extraction however can “over-extract” some less desired compounds. Brew intervals can be utilized to keep the grounds saturated and separated by rest intervals to dissolve desired compounds. When the desired compounds are adequately dissolved, simply apply additional brew intervals to extract these desired compounds. The programming allows the user to totally customize the sequence and time for brewing and resting. The interval brewing system tracks and accumulates 3 different times: o Brew Time- The total of all of the brewing intervals o Rest Time- The total of all the resting intervals o Total Time- The total of brewing and resting intervals which equals the total time it will take to execute the brew profile. 14 | P a g e www.brewbomb.com
Saving and Uploading - Brew Profiles Once you have completed the Brew Profile and there are no error messages, than you will need to INSERT and UPLOAD to your Brewer. • First – Save Profile • Select Insert (To Save) • Assign Brew Profile to Location (Brewer) • Select the Brewer to receive the Brew Profile and SELECT DONE • The Brew Profile will be instantly recalled on the Brewer! 15 | P a g e www.brewbomb.com
Brewing with the ACE Brewer Select the Brew Profile using Wizard Using the ENCODER Knob (Left) on the front panel make sure BREW is highlighted in Red and push in ENCODER Knob to Enter The ACE Brewer comes configured with Two Standard Brew Profiles - Chocolate Bomb (Fine/Short) - Long and Sweet (Coarse/Long) To Create your own Brew Profiles, you will need to access the Web Portal which is accessed through your PC, Phone or Tablet. o Select appropriate Brew Profile and push ENCODER Knob to Enter 16 | P a g e www.brewbomb.com
Prepare Coffee Bean and Grind – Brew Profile The Brew Profile has been pre-defined and will populate the specific Coffee Bean and Weight required to support this Profile. In this step you will need the following: 1. Coffee Beans (Not provided) 2. Pre-Infusion Vessel (Not provided) 3. Coffee Grinder (Not provided) Source the required coffee bean and measure the weight to ensure it equals the required amount for this recipe. o Hit Continue Once you have the correct coffee bean and weight. Go to specified Coffee Grinder and complete the following: 1. Change the setting to match the # identified in the Brew Profile (ie 12). 2. Grind ALL the coffee into the Pre-infusion vessel (not provided) from the profile. 3. Once complete. Hit Continue 17 | P a g e www.brewbomb.com
Pre-Infusion A critical step in the brewing process is to pre-infuse the coffee to activate the extraction process. Please note this is not required in all Brew Profiles so if Pre- Infusion does not appear in the wizard please skip this step. Step 1… Pre-Infuse Coffee Grinds and Water 1. Place the Pre-Infusion vessel with the ground coffee under the pre-infusion dosing nozzle. 2. Hit DOSE and water will begin to flow out of the nozzle and will dispense the proper amount per the brew profile. Pre-Infusion dosing nozzle Pre-Infusion vessel (Not Provided) Once the proper amount of water has been dispensed into the pre-infusion vessel REMOVE from the Mid Platform of the brewer and follow these steps. 18 | P a g e www.brewbomb.com
Step 2… Mix Coffee Grounds and Water 1. Mix coffee and water using a large spoon or object to ensure coffee is saturated thoroughly. This is a critical step, so it is important the coffee is moist and not dry in any area of the pre-infusion vessel. 2. Once complete, transfer the coffee into the Glass Cylinder. Step 3… Shape the Coffee Grinds in Brewing Glass Cylinder 1. Shape top of ground bed into a bowl, with the center of the bed 2.5 cm below the edges. 2.5 cm Bowl Depression in top of ground bed Important tips: o Do not press or compact the coffee grinds. o Ensure the height of coffee bed is consistent all around the vessel. o Ensure there is a funnel in the middle of the vessel to ensure consistent water flow 2. Start Brew Cycle Now that the pre-infusion is complete, you are ready to BREW! Flow Nozzle 1. Place lid on Glass Cylinder and place into position on the Mid Platform. 2. Place the Brew Tank into position on the Brewer Base (Lower) section of the brewer. 3. Untighten Nozzle Adjustment Screw (5) and lower flow nozzle into the brewing cylinder. 4. Flow Nozzle Set Up Once the Brew has started it is very important to ensure the CURRENT Flow Rate Matches the TARGET Flow Rate in order to ensure the Brew Profile is completed correctly. 1. Using the FLOW CONTROL KNOB on the Right of the Panel. o Clockwise = Decreases Flow Rate o Counterclockwise = Increases Flow Rate o Twist and wait, allow 5 seconds to adjust 2. Slowly turn (wait 5 sec) match and repeat until: TARGET = CURRENT flow rate PLEASE NOTE – Target vs Current need to closely match for brew to be successful. 3. Once the flow rate match, adjust nozzle height to ensure water is spraying on the coffee bed and NOT on inside interior wall. The spray needs to hit the coffee not the interior glass wall. 4. Brewing Now that the flow rate is set correctly the Brewing will begin and the Brew Profile will take over! You can watch the progress of the brew cycle using the on-screen wizard. Brew Complete Once the brew is complete you will hear beeping sound indicating the profile is complete. When the brew profile is complete you will see the following screen: o Yield = Total Concentrate Yield in Gallons or Liters. This is from the Brew Profile and represents your total yield in concentrate. o Concentrate = TDS Concentrate in OZ and this determines the strength of the coffee at concentrate Verify Concentrate TDS The next step is to confirm the Concentrate TDS Results. 1. Remove the lower basin from brewer and stir the concentrate. 2. Once thoroughly stirred. Test the Concentrate with a Refractometer (not provided). 3. If TDS matches target, hit Continue. 4. If TDS needs to adjust update the Value in the Concentration Field and then hit enter. 22 | P a g e www.brewbomb.com
Convert to Ready to Drink (RTD) Like all Cold Brew the Brew Bomb ACE brews to “concentrate” and in most brew cycles needs to be converted to a Ready to Drink (RTD) formula. This formula is based on your Brew Profile and is calculated by Total Dissolved Solids or TDS. The Specialty Coffee Association (SCA) suggests that most TDS RTD targets should be in the range of 1.3 to 2.0 for taste, strength, and caffeine concentration. Step 1… Dispense required water dilute to RTD. Based on your Brew Profile – Your Target RTD TDS will appear. In order to dilute the concentrate to the Target TDS number you will need to Dilute and convert to an RTD formula. o Remove the brewing glass cylinder from position o Place an empty vessel under the pre-infusion nozzle and hit continue. Monitor the dispensing of water until the TARGET = CURRENT Remove vessel hit CONTINUE Step 2… Mix concentrate with dispensed dilution amount o In a separate vessel combine the concentrate with water o Thoroughly mix o Once thoroughly stirred. Test the RTD with a Refractometer (not provided) o Note the TDS value Step 3… Transfer RTD to dispensing solution (i.e. Keg, etc.) for serving. Reporting – Web Portal Real Time Reporting - Dashboard Real time reporting is available via the Web Portal which can be accessed through a PC, Phone or Tablet. https://portal.brewbomb.com/ Dashboard View If an active brew is in progress at any location in your organization than it will be noted as follows: Brews in Progress A detailed view of the brew in progress is available and reflects the real time information currently displayed on the brew wizard. Performance Stats - Dashboard Performance data by location and by brew profile are available in the Dashboard. These reports provide a snapshot of your location/profile performance over a 24 hour to 7 day period. By Location: This report provides yield information by location for a 24 hour and 7-day period. Brew History - Reports Provides historical information by Brewer and Brew Profile Name to determine which profiles are being utilized as well provide information on plan vs. actual results to determine the effectiveness of brew profile. This is a good report for Brew Masters looking to understand if the brew profiles are optimized. Information can be sorted by any column. Sorting field Subscription Services The Brew Bomb System comes with an Operating System and subscription service to support the on-demand features offered in the Brew Bomb ACE. Calibrating Flow Meter Your machines is precisely calibrated during the manufacturing process and this step/procedure should not be required at any time. In the rare occasions the brewers flow meter needs to be adjusted you may consider calibration of the machine From the main menu select SETTINGS – Calibrate Flow Meter 1. Place a measuring vessel (Not Provided) under pre-infusion nozzle (Mid Platform of brewer) 2. Press DOSE to start Pre-Infusion nozzle 1. Once started you need to keep an eye on your measuring vessel to watch how much water is dispensing. 2. Once the water reaches 1 liter in your measuring vessel hit STOP. This should be around 3,750 – 3,780 ticks. 3. Your Brewer is now Calibrated! 27 | P a g e www.brewbomb.com
Frequently Asked Questions (FAQ) How do I reset my password? o Contact your company administrator or sign in with that login o Organization – Users – User (to reset) – Edit – Change Password - Save How do I get help or assistance on the Web Portal? o There is a icon on the top left of each section to help assist in navigating the system Do I need to pay for a subscription service? o No. The brewer comes with a Basic Service with the purchase of your Brew Bomb ACE. o If you are interested in advanced features and services from Brew Bomb however you will need to purchase the Artisan Tier. What is Flow Rate and why is this important? o The flow rate is critical to the brewing process because it dictates the how the coffee is extracted per the brew profile. Ensuring the flow match the TARGET is critical to ensure the yields and taste objectives are achieved. What is Pre-Infusion and why is this important? o Pre-infusion is the process to activate the coffee with water in advance of brewing. This is a critical step in the brew cycle as it prepares the coffee for extraction and ensures even distribution of the water to maximize yield and flavor. Glossary Term Description Total Dissolved Solids (TDS) Determine how much of the coffee has been extracted and ultimately the strength of the coffee including caffeine. Ready-to-Drink (RTD) Beverages that many be consumed as-is without further dilution or preparation. Pre-Infusion Process to activate the coffee with water in advance of brewing Refractometer This device measures the degree to which light is refracted by the liquid. The app then takes this information and compares it to an established index, which gives a percentage extraction. This tool measure the TDS extraction for any liquid including concentrate and RTD. Brew Profile A specific recipe for Cold Brew. The brewer comes with three predefined brew profiles however it is encouraged that you create your own. Warranty GUNGA LLC warrants the Brew Bomb Brewer to be free of defects in materials and workmanship for a period of 12 months from date of purchase. If the unit malfunctions, contact support services and any electronics must be returned for evaluation. Upon examination by GUNGA LLC, if the part is found to be defective, it will be repaired or replaced at no charge. GUNGA LLC’s WARRANTY does not apply to defects resulting from any action of the purchaser, including but not limited to mishandling, improper interfacing, operation outside of design limits, improper repair, or unauthorized modification. This WARRANTY is VOID if the unit shows evidence of having been tampered with or shows evidence of having been damaged as a result of excessive corrosion; or current, heat, moisture or vibration; improper specification; misapplication; misuse or other operating conditions outside of GUNGA LLC’s control. GUNGA LLC is pleased to offer suggestions on the use of its various products. However, GUNGA LLC neither assumes responsibility for any omissions or errors nor assumes liability for any damages that result from the use of its products in accordance with information provided by GUNGA LLC, either verbal or written. LIMITATION OF LIABILITY: The remedies of purchaser set forth herein are exclusive, and the total liability of GUNGA LLC with respect to this order, whether based on contract, warranty, negligence, indemnification, strict liability or otherwise, shall not exceed the purchase price of the component upon which liability is based. In no event shall GUNGA LLC be liable for consequential, incidental or special damages. CONDITIONS: Equipment sold by GUNGA LLC is not intended to be used, nor shall it be used: (1) as a “Basic Component” under 10 CFR 21 (NRC), used in or with any nuclear installation or activity; or (2) in medical applications or used on humans.
