March 2021 York County Senior Center Virtual Programs – vol.3 Check Out the MARCH VIRTUAL PROGRAMS Being Offered by York County Senior Centers…So More People Can Stay Connected!!! Lisa Krout, from White Rose Senior Center, and Jenna Ericson from Windy Hill on the Campus are coordinating the links for this Pilot Project from the York County Senior Centers who would like to participate. Many Centers in York County are doing Zoom, Facebook Live, and other platforms and we have decided to collaborate together to offer more programs and possibilities for our Older Adults in York County who maybe homebound or possibly isolated. Each Center who wants to participate email Lisa with their programs for the upcoming month. She compiles a brochure of activities and then sends it out to each Center to distribute to their members. Jenna uploads all of the activities from each Center to a landing page on Windy Hill’s website. You can also find the information on the York County Area Agency on Aging’s website and Facebook page as well as many York County Senior Center’s sites. We have noticed more attendees to the activities and like all good things, it takes time to grow! Please share this with any older adult you may know. We envision this project continuing even after the pandemic ends. We desire to connect to every 60-year-old in York County! What do You Need to Participate in the Virtual Programs? 1. Either a computer, a tablet or a smart phone. 2. Internet connection. If you do not have a device (computer or a tablet), TECH OWL offers FREE devices for loan. www.WowFoodTips.com Green Goddess Buddha Bowl broccoli florets 3 tablespoons olive oil S&P Hard boiled eggs sugar snap peas cooked grain, such as farro, quinoa, and/or brown rice seedless cucumbers, halved, sliced baby greens ripe avocados - sliced 1/4 cup toasted pumpkin seeds (pepitas) DRESSING – Blend in food processor. 1 cup whole-milk yogurt 2 garlic cloves, finely chopped 1 Tbs. fresh lemon juice 1 cup mixed chopped fresh herbs: chives, cilantro, dill, tarragon S&P 1. Preheat oven to 375°F. Toss broccoli with oil, salt, and pepper and roast until browned and tender, 20 minutes. 2. In skillet, briefly saute and cook until bright green and just slightly tender, 1–2 minutes. 3. Toss grain with dressing. Plate in serving bowls. 4. Then toss broccoli, snap peas, cucumbers, baby greens with oil, salt and pepper. Divide among serving bowls. 5. Top with avocado slices, pumpkin seeds, and remaining 2 Tbsp. herbs. 6. Slice eggs in half and add to bowls. Serve more dressing for drizzling. Ruchama (Israeli) AKA Shakshuka (North African) olive oil 1 large yellow onion, finely chopped jalapeno, Thai or other spicy pepper -finely chopped garlic cloves - chopped coriander & ground cinnamon S&P baby spinach fresh lemon juice eggs Feta cheese and roughly chopped fresh cilantro Optional – Diced tomatoes 1.Heat the olive oil in skillet. Add the onion and jalapeño and cook, stirring occasionally, until softened. Add the garlic, coriander, cinnamon, and salt, and cook another couple minutes. 2. Add the spinach and lemon juice to the pan, turn the heat to low, cover, and cook, tossing occasionally with tongs, until the spinach is wilted. Uncover and evenly spread the mixture across the bottom of the pan. Use spoon to make shallow indentations in the greens mixture to hold the eggs while they cook. 3. Break the eggs into the indentations. (Add tomatoes if desired.) Cover the pan, and cook until the whites are set but the yolks are still a bit runny, 4 to 5 minutes. 4.
