MAJOR PARTNER Get to know the food traffic light system1 Before implementing the Healthy Club Canteen Program, the first thing that you need to be familiar with is the food ‘traffic light system’. This system categorizes foods and drinks into three colour groups to give consumers an idea of prioritizing food choices: ● 1st GREEN - Best choices ● 2nd AMBER - Choose carefully ● 3rd RED - Limit 1. The GREEN Category Foods and drinks in this category are the most preferable and nutritious choices. Characteristics common in GREEN items: - good sources of important nutrients - lower in saturated fat, added sugar and/or salt - lower in energy (kJ) - higher in fibre Club canteens should always promote GREEN items and maintain at least 50% of GREEN choices on the menu. 2. The AMBER Category Foods and drinks in this category should be chosen carefully and be eaten in moderate amount occasionally. Characteristics common in AMBER items: - May provide some nutrients - May provide too much energy (kJ) than required - Contain more saturated fat, added sugar and/or salt compared to GREEN items Club canteens may offer AMBER choices, while these choices should not be promoted over the GREEN choices. 3
MAJOR PARTNER 3. The RED Category Foods and drinks in this category should be avoided because they will lead to bad health consequences (e.g. overweight and heart diseases) when consumed in large portions and too frequently. Characteristics common in RED items: - Provide very little or even no important nutrients - High in energy - High in saturated fat, added sugar and/or salt Ideally, RED choices should be absent in club canteens. If it is inevitable to sell RED choices, they should be limited to no more than 20% on the menu. The following two figures show examples of common foods and drinks available in canteens, and their classifications. Classification of common drinks in the canteen2: GREEN AMBER RED Flavoured water, with Plain, unflavoured 100% Coconut added sugar water (tap, still, water, no added sparkling, soda) sugar, less than 300kJ Coconut water, with per serve added sugar, over 300kJ per bottle Flavoured water with Fruit and vegetable Fruit juices, with added natural essence, no juices, no added sugar, sugar, or not 100% fruit added sugar (e.g. serve sizes up to 250 juice, or serve sizes Mount Franklin ml over 250ml flavoured water) Reduced fat, plain milk Full-fat, plain milk Flavoured milk and flavoured milk Reduced fat, flavoured Reduced-fat, flavoured alternatives, more than milk and calcium milk and flavoured 1600 kJ per serve as fortified milk milk alternatives, 900– sold alternatives, less than 1,600 kJ per serve as 900 kJ per serve as sold sold 4
MAJOR PARTNER Classification of common drinks in the canteen2 (continued): GREEN AMBER RED Unflavoured, calcium- fortified milk alternatives (e.g. soy/rice/almond milk) Tea / coffee, reduced fat Sports and milk, no added sugar energy drinks Soft drinks Classification of common foods in the canteen2: GREEN AMBER RED Raisin bread Raisin Toast with butter Commercial banana bread Tomato and cheese Ham and cheese toasties Sausage in bread toasties Chicken and avocado savoury snack foods, Hot dogs toasties biscuits and crispbreads Salad and meat Wholemeal or plain Bacon and egg muffin sandwich / wrap* muffins, with added fruit and vegetables Vegetable quiche Pasties* Party pies* (without pastry) * Potato cakes* Large meat pies* Sushi* Savoury-topped breads Cheeseburger* and pizzas Hot chips Hash brown Chicken & Sweet Corn Steamed dim sims Fried dim sims Soup (Campbell's Country Ladle) Plain, uncoated, un-iced, Chocolate chips cookie sweet biscuits Full-fat ice cream 5
MAJOR PARTNER Healthy Snack Ideas3 GREEN options (best choices): No preparation needed Plain nuts and seeds Fresh fruit Reduced fat (no added sugar / low fat) yoghurt 6
MAJOR PARTNER GREEN options (best choices): Little preparation needed Air popped popcorn Boiled eggs Vegetable sticks with yoghurt-based / vegetable-based dip (e.g. hummus, tzatziki) Reduced-fat cheese with wholemeal crackers 7
MAJOR PARTNER GREEN options (best choices): A little more preparation needed Salad (with vinaigrette / without dressing) Sushi Rice paper roll Wholemeal / multigrain sandwich, roll or wrap with healthy fillings such as salad, lean meat, fish, eggs or lentils patties 8
MAJOR PARTNER Simple Strategies, Change Gradually This section outlines what simple changes you can make to promote healthier choices. You may decide which and how many strategies to be adopted in the canteen. We recommend starting slow, selecting 1- 3 strategies to begin with, and progress to more strategies as you go along. 1. Product Alternatives3 You may use the Victorian Governments Healthy Eating Advisory Service (HEAS) FoodChecker to find healthier product alternatives for your recipes or food items. Below are examples: Type Suggestions Brand Bread a) Use multigrain, wholemeal bread with less salt 9 Grain Tip Top Plus Wholemeal b) Substitute with bagels, baguette The One c) AVOID croissants and brioche Tip Top Sandwich Bread Wholemeal Sandwich a) Use reduced-fat cheese Bega So b) AVOID use of high-fat meat i.e. bacon and Light 50% salami Reduced Fat Cheese Slices 9
MAJOR PARTNER Type Suggestions Brand Scone a) Choose those made with wholemeal Glenroy flour & reduced fat milk Bakery Mini b) AVOID those with chocolate, Scone jam, confectionary (Plain/Fruit) c) Offer spread individually Spread a) Substitute butter with mono- or Flora Pro poly-unsaturated margarines Activ Spread Low Salt Flora Margarine Dairy Sunflower Savoury a) Oven-baked or steamed instead of deep fried: A&T pastries e.g. steamed dim sim vs fried dim sim Trading / Pies Vegetarian Dim Sims 10
MAJOR PARTNER Type Suggestions Brand Savoury b) Party pies instead of large pies pastries/ Pies c) Use filo pastry instead of puff pastry or Borg’s shortcrust pastry Frozen Filo Pastry Sheets Soup i) Use reduced-salt stock as base Coles Real ii) Add more vegetables Chicken Salt Reduced Liquid Stock Drinks a) Fruit Juice b) Energy Drinks Golden Circle Fruit Juice Tropical 6x200mL Devondale Semi Skim/ Skim Long Life Milk 11
MAJOR PARTNER Type Suggestion Brand Drinks c) Coffee i) Provide decaffeinated options ii) Use reduced fat/skim milk iii) Make artificial sweeteners available Big M coffee (300ml) Nescafe Blend 43 Decaf 12
MAJOR PARTNER 2. Promotion4, 5 a) Provide special offers or meal deals with GREEN items. Example: i) Plain scones/ bagels with coffee made with reduced-fat milk ii) Unsalted nuts with tea iii) Free fruit iv) Green Drinks Loyalty Program b) Actively promote GREEN items with posters c) Limit display and promotion of RED items on reception desk and cashier 13
MAJOR PARTNER 3. Product Placement6 a) Promote GREEN items i) Place at eye level / on the counter b) Discourage RED items i) Place RED items in non-prominent positions e.g. RED drinks at bottom shelf of fridge; RED snacks under the bench or in cupboard; Keep pie warmer/ cookie can out of sight ii) Conceal RED items with posters 4. Price Adjustment of RED items7 The key idea is to make RED items less appealing in terms of price and at the same time, to ensure GREEN items are attractively and competitively priced. To practice it, you should: ● Increase the price of RED items by 10-20%. Examples: $5 ➡$5.5 (+10%) $3➡$3.6 (+20%) $5➡$6 (+20%) ● Consider selling GREEN items for less when their sales are stable. 14
MAJOR PARTNER 5. Serving Size Adjustment8 a) Reduce size of RED items b) Offer more size options 6. Labelling on menu9 Showing colours of items according to traffic light system on menu, where i) items should be listed in the order of GREEN, AMBER, then RED ii) at least 50% of food items on the menu are GREEN, iii) no more than 20% of food items are RED. To give you an idea of what a healthy menu should look like, here is a sample: 15
MAJOR PARTNER Possible challenges and solutions10 1. Difficulty recruiting sufficient staff at the beginning ○ Start by choosing strategies that require the least human resources and training (e.g. price adjustment and product repositioning). 2. Restricted cost and supporting resources11 (e.g. Storage facilities, time for finding suitable food suppliers, human resources) ○ Do as much as you can. One small step, one giant leap. You can implement small changes at first and make bigger changes when more resources are available. ○ You may apply for funding from your municipal council (e.g., Community Grants) with the purpose statement of Healthy Club Canteen implementation. The League can also provide assistance during your application. 3. Finding it hard to follow the suggested recipes ○ The recipes are only for references, you DO NOT need to make dishes from scratch. You can check the healthiness of your own recipes using Foodchecker first before deciding to change the menu. ○ If decided to change the menu, you may refer to the Suggested Supplier list for food products in different colour groups for easy implementation. You may also find alternatives of different products using FoodChecker with the User guide of FoodChecker as provided in the later part of the booklet. 4. Lack of motivation / frustration in implementation ○ You do not need to achieve the goal (i.e. 50% GREEN items and less than 20% RED items on menu) right away, you can implement the program gradually at your own pace that suits the situation of your club. A tiny change is also seen as successful. ○ You can also seek assistance from the League dietitian and refer to the Assistance Contacts for channels of further assistance. 16
MAJOR PARTNER 5. Hard to sustain the program due to customer indifference ○ It is normal that customers show no interest in choosing GREEN items because of insufficient understanding at the beginning. Therefore, having trained staff to explain changes of the canteen and deliver health messages to customers is important. Implementation of the Greek Drinks Loyalty program will hopefully encourage customers to try and boost the sales of GREEN items12. ○ Let customers be more involved in deciding items to be sold in your canteen by actively collecting their feedback. Make use of strategies provided above on finding product alternatives to compromise customer preferences and item healthiness. ○ Remember that people are getting more conscious about healthy eating. Do not give up in sustaining the program due to temporary obstacles. 6. Too much unhealthy options in stock ○ Healthiness of food can be improved by cooking methods. Try to steam ingredients instead of deep-frying. Offering the dish in a smaller size is also useful. E.g. Steaming dim sims instead of frying dim sims; Offering more size options. 7. Having no direction on profit and customer acceptance evaluations ○ You may follow instructions in our supplementary evaluation framework to assess profit changes. Sample surveys will also be provided for you to compare pre- and post-implementation staff and customer responses. If you are not able to conduct all surveys, simply collecting feedback from customers during their purchase would give you some idea on their acceptance. 17
