Ingredients CHICKEN NOODLES SOUP
n Olive oil: 60 ml n Cloves garlic, chopped: Three
n Large onion, chopped: one n Chicken broth (2 L): Eight cups
n Carrots, sliced: Three n Egg noodles (225 g): 8 oz
n Stalks celery, chopped n Shredded chicken breast (500 g): 4 cups
n Kosher salt, to taste n Fresh parsley (10 g), chopped: ½ cup
n Black pepper, to taste n Parmesan cheese(shredded) to taste
Procedure
H
eat the olive oil over medium heat in a large soup pot until
shimmering. Add the onion, carrots, celery, and one teaspoon
each salt and pepper. Cook, stir frequently, until the vegetables
are very soft. Add the garlic and cook until fragrant comes out. Add
the stock and bring to a boil. Do not add the noodles or parsley. Cool
and refrigerate the soup in an airtight container for four days, or in
the freezer for up to two months. Reheat on the stove and add the
noodles and parsley just before serving. Add the noodles and cook
for six minutes, then add the chicken and cook for about two minutes
more, until the noodles are cooked through and the chicken is
warmed through. Season to taste with salt and pepper, then stir in
the parsley. Serve topped with Parmesan.
CHICKEN RICE SOUP
Ingredients
n Chicken broth: 10 cups n Dried thyme leaves: ½ tsp
n Onion, chopped: One n Bay leaf: One
n Sliced celery: One cup n Chicken, cut into cubes: ¾ pound
n Sliced carrots: One cup n Cooked rice: Two cups
n Snipped parsley: ¼ cup n Lime juice: Two tsp
n Cracked black pepper: ½ tsp n Lime for garnishing
Procedure

ombine chicken broth, onion, celery, carrots, parsley, pepper,
thyme, and bay leaf in a Dutch oven; bring to a boil. Reduce
heat to low; simmer until the onion and celery begin to soften,
10 to 15 minutes. Stir chicken into the simmering broth; cook until
the chicken is no longer pink in the middle, 5 to 10 minutes. Remove
and discard bay leaf. Stir rice and lime juice into the broth; cook and
stir just until rice is hot and grains separate, about one minute.
Garnish with lime slices.
