INDOVEDIC FOOD DAPUR USADA concept of IndoVedic, fuses ancient principles of Ayurveda with modern, local, plant based cuisine. By examining the environmental impact of our dietary choices we are taking the concept of ‘garden to table’ to a holistic level. We coined it “Soil to Soul”. INDO We use the word ‘Indo’ in a playful way to refer to the fascination and curiosity of foreign visitors to this diverse and complex group of islands consisting of at least 300 distinct native ethnic groups and 742 different languages we now call ‘Indonesia’. We believe that healthy cultural curiosity is not a threat but rather a vital key to the survival and thriving of indigenous cultural heritage. VEDIC Veda means knowledge in Sanskrit. We use the word Vedic to imply application of ancient knowledge as a way to ground our wild and unrestrained love for culture with integrity and wisdom. Our food is crafted with 100 per cent Indonesian ingredients, many of them indigenous to this land, embracing traditional techniques that include soaking, fermenting, steaming and pounding to optimize flavour and nutritional value. HEALTH Disease (Dis-ease) is a symptom of a lack of health. When health is restored disease disappears. True health begins in the soil, a complex web of life that serves as the immune system of planet Earth. Our food is a reflection of our soil. The way we treat our soil is a reflection of our humanity. As humans we are united by our shared need for clean, healthy and nutritious food.

ABOUT US ABOUT OUR CULINARY TEAM We are in love with our Balinese kitchen team and we hope you can taste their love and passion in our food. They are trained by chef Simon of New Earth Cooking who is the culinary director for Usada. Simon fell in love with Indonesia at the age of 8, when he ate his first Nasi Goreng with his adopted Indonesian auntie in his native The Hague, home to a large Indonesian population. Simon permanently moved to Bali in 2012 where he established himself as Earth Custodian Chef and Food Forester at The Bali Silent Retreat.
